BREADSTICKS RECIPE (OLIVE GARDEN COPYCAT)
Perfectly soft, fluffy and chewy and finished with a buttery garlic topping. No one can resist these! And since they're made fresh from scratch they're even better than Olive Gardens!

- In the bowl of an electric stand mixer whisk together warm water, yeast and 1/2 tsp granulated sugar until yeast has dissolved. Allow to rest 10 minutes.
- Add in remaining 1 Tbsp + 2 1/2 tsp granulated sugar, 1 1/2 cups flour, 1 3/4 tsp salt and vegetable oil, then fit mixer with paddle attachment and blend mixture until well combine.
- Switch mixer to dough hook attachment, add in remaining 1 1/2 cups flour and knead mixture on low speed, adding up to 1/4 cup additional flour as needed, and knead until dough is smooth and elastic*.
- Transfer dough to a large buttered mixing bowl, cover with plastic wrap and allow to rest in a warm place free from draft until double, about 1 1/2 hours.
- Punch risen dough down, divide into 12 equal portions (2 ounces each by weight), keep them covered with plastic wrap as you work. Roll each piece into a 9 inch rope on a lightly floured surface, then transfer to two parchment paper lined baking sheets.
- Cover and let rise 1 hour. Preheat oven to 425 during the last 10 minutes of rising.
- Bake in preheated oven 11 - 13 minutes until golden**. Meanwhile, in a small bowl whisk together 1/4 tsp salt and garlic powder.
- Remove breadsticks from oven and run a stick of butter over hot breadsticks (using 2 Tbsp, or brush with melted butter) and immediately sprinkle with garlic salt mixture.
- Serve warm. Let any left over cool and store in an airtight container.

Since Olive Garden won't give out the recipe, here's the closest one to the real thing! This recipe calls for a Kitchen-Aid mixer with the paddle attachment, but I'm sure you could use something similar. From Food Network magazine.

- Make the dough: Place 1/4 cup warm water in the bowl of a mixer; sprinkle in the yeast and set aside until foamy, about 5 minutes. Add the flour, butter, sugar, fine salt and 1 1/4 cups plus 2 tablespoons warm water; mix with the paddle attachment until a slightly sticky dough forms, 5 minutes.
- Knead the dough by hand on a floured surface until very smooth and soft, 3 minutes. Roll into a 2-foot-long log; cut into 16 1 1/2-inch pieces. Knead each piece slightly and shape into a 7-inch long breadstick; arrange 2 inches apart on a parchment-lined baking sheet. Cover with a cloth; let rise in a warm spot until almost doubled, about 45 minutes.
- Preheat the oven to 400 degrees F.
- Make the topping: Brush the breadsticks with 1 1/2 tablespoons of the butter and sprinkle with 1/4 teaspoon kosher salt.
- Bake until slightly golden, about 15 minutes.
- Meanwhile, combine the remaining 1/4 teaspoon salt with the garlic powder and oregano.
- Brush the warm breadsticks with the remaining 1 1/2 tablespoons melted butter and sprinkle with the flavored salt.
- Serve warm with salad.

- In a large bowl or the bowl of a stand mixer, dissolve the yeast and sugar in the warm water. Let sit for 5-10 minutes, or until foamy.
- Add the salt, oil, and two cups of flour, and mix until combined. Add additional flour, ¼ cup at a time, until the dough pulls away from the sides of the bowl and is soft and only slightly sticky to the touch.
- Knead the dough until smooth, sprinkling with flour as needed to make the dough manageable. Place the dough in a lightly greased bowl and let rise for one hour, or until doubled.
- After the dough has risen, punch it down gently and divide it into 12 equal sized balls. Roll each ball out into a nine inch rope, and place on a baking sheet lined with parchment or a silicone liner.
- Repeat with remaining dough, using two baking sheets. Cover and let rise for one hour.
- During the last ten minutes of the rise time, preheat the oven to 425°F. Bake 12-14 minutes, or until golden brown.
- Remove from oven and brush with melted butter, then sprinkle with garlic salt. Serve warm.

HOMEMADE GARLIC BREADSTICKS (+VIDEO)

- In a large bowl, dissolve sugar and yeast in warm water and allow to sit for 10 minutes, covered. Mixture should be frothy.
- In the bowl of your stand mixer or medium-sized bowl, combine flour and salt.
- Add yeast mixture and melted butter to flour mixture.
- Mix with dough hook attachment on stand mixer or stir until fully combined.
- Knead dough for a few minutes (about 7-8 minutes) just until dough is smooth and elastic.
- Spray baking sheet with nonstick spray.
- Pull off pieces of dough and roll out into strips. Remember these are going to double in size!
- Cover the dough with plastic wrap sprayed with nonstick spray (so dough doesn't stick to it from the inside) or cover with a clean kitchen towel and put in a warm place to rise.
- Once they have doubled in size (about an hour), preheat oven up to 400F degrees.
- Once oven has reached temperature, take plastic wrap (or dish towel) off of breadsticks and put in the oven to bake.
- While they are baking, make butter topping. Microwave butter until melted and add garlic powder and salt, stir until combined.
- After 6 or 7 minutes of baking, brush the bread sticks with half the butter mixture.
- Then continue to bake for another 6-7 minutes.
- Immediately upon removal from the oven, brush the other half of the butter on the sticks.

- 1. Prepare two baking sheets by lining them with parchment.
- 2. Place 1/4 cup warm water in the bowl of an electric mixer. Mix in yeast and sugar and allow to stand for 5 minutes until foamy.
- 3. Stir in the flour, 2 tablespoons room temp. butter, 1 1/2 teaspoons salt, and 1 cup warm water. With the paddle attachment, mix on medium until the dough comes together, adding additional water 1-2 tablespoons at a time.
- 4. Switch from the paddle attachment to the dough hook and mix for 4 minutes until dough is smooth.
- 5. Place the dough on a lightly floured surface and cut into 16 pieces. I found it easiest to do this by separating the dough in half, halving it again, and again, etc. until I had 16 pieces. They were more even that way.
- 6. Roll them into logs about 7 inches long. Place them on the prepared baking sheets about 2 inches apart and cover with a towel.
- 7. Allow them to rise for 45-60 minutes.
- 8. In a small bowl, whisk together the fine sea salt, garlic powder, and oregano.
- 9. Preheat oven to 400 degrees F.
- 10. Brush each breadstick with half of the melted butter and sprinkle half of the seasoning mixture on the breadsticks.
- 11. Bake for 15 minutes.
- 12. Brush each breadstick again with melted butter and sprinkle with remaining seasoning. Serve warm.
