ALMOST-FAMOUS BREADSTICKS (OLIVE GARDEN COPYCAT)

Almost-Famous Breadsticks (Olive Garden Copycat) image

Since Olive Garden won't give out the recipe, here's the closest one to the real thing! This recipe calls for a Kitchen-Aid mixer with the paddle attachment, but I'm sure you could use something similar. From Food Network magazine.

Time 31m

Yield 16 breadsticks, 16 serving(s)

3 tablespoons unsalted butter, melted
1/2 teaspoon kosher salt

  • Knead the dough by hand on a floured surface until very smooth and soft, 3 minutes. Roll into a 2-foot-long log; cut into 16 1 1/2-inch pieces. 1 1/4 tsp active dry yeast
2 tbsp sugar

3 tbsp vegetable oil
3-3 1/4 cups all-purpose flour
2 tbsp butter (melted)

Steps:

  • In a large bowl or the bowl of a stand mixer, dissolve the yeast and sugar in the warm water. Let sit for 5-10 minutes, or until foamy.

HOMEMADE GARLIC BREADSTICKS (+VIDEO)

Homemade Garlic Breadsticks (+Video) image

These homemade garlic breadsticks taste so fresh and absolutely delicious. A tender breadstick with an amazing garlic butter topping!

Provided by Brandie @ The Country Cook

Categories     Breads     Side Dish

Time 50m

Number Of Ingredients 9

1 1/2 cups very warm water
1 packet active dry yeast ((2 1/4 teaspoons))
4 1/4 cups all-purpose flour ((I like White Lily flour))
2 tablespoons unsalted butter (melted)
2 tablespoons sugar
1 tablespoon salt
1/4 cup unsalted butter ((1/2 stick))
1 teaspoon garlic powder
1 teaspoon table salt

Steps:

  • In a large bowl, dissolve sugar and yeast in warm water and allow to sit for 10 minutes, covered. Mixture should be frothy.
  • In the bowl of your stand mixer or medium-sized bowl, combine flour and salt.
  • Add yeast mixture and melted butter to flour mixture.
  • Mix with dough hook attachment on stand mixer or stir until fully combined.
  • Knead dough for a few minutes (about 7-8 minutes) just until dough is smooth and elastic.
  • Spray baking sheet with nonstick spray.
  • Pull off pieces of dough and roll out into strips. Remember these are going to double in size!
  • Cover the dough with plastic wrap sprayed with nonstick spray (so dough doesn't stick to it from the inside) or cover with a clean kitchen towel and put in a warm place to rise.
  • Once they have doubled in size (about an hour), preheat oven up to 400F degrees.
  • Once oven has reached temperature, take plastic wrap (or dish towel) off of breadsticks and put in the oven to bake.
  • While they are baking, make butter topping. Microwave butter until melted and add garlic powder and salt, stir until combined.
  • After 6 or 7 minutes of baking, brush the bread sticks with half the butter mixture.
  • Then continue to bake for another 6-7 minutes.
  • Immediately upon removal from the oven, brush the other half of the butter on the sticks.

OLIVE GARDEN BREADSTICKS

Olive Garden Breadsticks image

Another copy cat recipe that I can't tell it is not the real thing.

Provided by alberta smith

Categories     Other Appetizers

Number Of Ingredients 10

1 3/4 c warm water (100 degrees f.)
1 Tbsp active dry yeast (it was less than 2 packets)
4 1/4 c all-purpose flour
2 Tbsp unsalted butter, room temperature
2 Tbsp sugar
1 1/2 tsp salt
3 Tbsp unsalted butter, melted
1/4 tsp fine sea salt
1/4 tsp garlic powder
1/4 tsp dried oregano, crushed in between fingers

Steps:

  • 1. Prepare two baking sheets by lining them with parchment.
  • 2. Place 1/4 cup warm water in the bowl of an electric mixer. Mix in yeast and sugar and allow to stand for 5 minutes until foamy.
  • 3. Stir in the flour, 2 tablespoons room temp. butter, 1 1/2 teaspoons salt, and 1 cup warm water. With the paddle attachment, mix on medium until the dough comes together, adding additional water 1-2 tablespoons at a time.
  • 4. Switch from the paddle attachment to the dough hook and mix for 4 minutes until dough is smooth.
  • 5. Place the dough on a lightly floured surface and cut into 16 pieces. I found it easiest to do this by separating the dough in half, halving it again, and again, etc. until I had 16 pieces. They were more even that way.
  • 6. Roll them into logs about 7 inches long. Place them on the prepared baking sheets about 2 inches apart and cover with a towel.
  • 7. Allow them to rise for 45-60 minutes.
  • 8. In a small bowl, whisk together the fine sea salt, garlic powder, and oregano.
  • 9. Preheat oven to 400 degrees F.
  • 10. Brush each breadstick with half of the melted butter and sprinkle half of the seasoning mixture on the breadsticks.
  • 11. Bake for 15 minutes.
  • 12. Brush each breadstick again with melted butter and sprinkle with remaining seasoning. Serve warm.

  • Once the yeast has started to get bubbly, add half of the flour, the salt, and the vegetable oil to the mixing bowl. Mix on low using the dough hook until all ingredients are well combined. Add the other half of the flour in 1/2 cup at a time until it has all mixed in. The dough should look smooth and pull away from the sides of the mixing bowl, but still be slightly sticky. • My kitchen is far too cold, so I warm my oven (just until it reaches 170°F) and turn it off. Then, I set a dish of hot water on the lower rack, and the bowl with the dough on the top rack. This keeps everything nice, warm, and moist. (It's important to remember to turn the oven off!)

  • Preheat and prepare. Preheat oven to 400°F and line a 9×13-inch baking sheet with parchment paper. Set aside.
  • Melt butter and warm milk. In a small saucepan, melt the butter over medium heat. Then, stir in the milk and warm to 105-112°F. Alternatively, you may also melt and warm the milk in the microwave for 30-60 seconds at 50% power.
  • Combine with yeast and sugar. Next, add the yeast and sugar to the bowl of a stand mixer fitted with a dough hook. Slowly add the warmed milk to the yeast and sugar and gently stir to combine.
  • Add egg and dry ingredients. Next, with your stand mixer on its lowest speed, stir in the egg and salt before adding in 2-1/2 cups (300g) of flour.
  • Knead. Increase your mixer to its second speed and knead the dough for 3-4 minutes. Alternately, you may knead by hand for 6-8 minutes on a lightly oiled surface.
  • Shape. With lightly floured hands, divide the dough into 12 equal pieces, approximately 65 grams each. Then shape dough into 12 breadsticks, and place them 1 inch apart on the prepared baking sheet(s).
  • Proof. Cover loosely with a tea towel or plastic wrap, and let the dough proof for 10-15 minutes in a warm place. The breadsticks should rise and puff slightly during this period.
  • Bake. Uncover the breadsticks and transfer to the preheated oven. Bake for about 10-12 minutes, or until golden brown.
  • Make the garlic butter. While the breadsticks are baking, prepare the garlic butter by melting the butter on your stovetop or in the microwave. Remove from heat and then stir in the salt and garlic powder.
  • Baste. Remove the breadsticks from the oven when golden, and immediately baste with the melted garlic butter. Serve warm. Inspired by: Chicken & Gnocchi Soup.
