On The Spot Ice Cream Sodas Recipes

ICE CREAM SODAS

Steps:

• Pour 3 tablespoons of Raspberry or Chocolate Syrup or 1 teaspoon vanilla plus 3 tablespoons heavy cream in a tall ice cream soda glass. Whisk with a fork, then slowly, while still whisking, add the club soda until the glass is three-quarters full. Add 2 scoops of ice cream, add soda to the top of the glass, and serve with a spoon and a straw.
• Combine the cocoa, salt, sugar and 1 cup of water in a medium saucepan and bring to a boil. Add the coffee granules, and simmer for 5 minutes. Pour the syrup into a bowl and add the vanilla. Cover and refrigerate until ready to use.
• Combine the raspberries, sugar, and lemon in a container. Cover and refrigerate for at least 2 hours, or overnight. Strain the syrup into a pitcher, pushing down on the berries to extract all the liquid.

OLD-FASHIONED ICE CREAM SODAS

Steps:

• Place 3 tablespoons chocolate syrup in each of four 16-oz. glasses. Add 1/4 cup milk and 1 cup carbonated water to each; stir until foamy. Add two scoops of ice cream to each glass. Top with whipped cream if desired.

ICE CREAM SODAS - BAREFOOT CONTESSA / INA GARTEN

Steps:

• Place 1 to 2 tablespoons fruit or a peach half in a large soda glass. Add 2 scoops ice cream and 3 to 4 tablespoons cream. Shake seltzer bottle and squirt into glass. Top soda with cherries or strawberries.

STRAWBERRY ICE CREAM SODAS

Steps:

• In each glass combine 1/4 cup each of the milk and strawberry syrup.
• Put 2 or 3 scoops of the ice cream into each glass and fill the glasses with the club soda or seltzer.
• Divide the remaining syrup among the sodas and garnish each soda with a strawberry.
• In the food processor or in a blender in batches puree the strawberries, transfer the puree to a stainless steel or enameled saucepan, and stir in the sugar and water.
• Bring the mixture to a boil over moderate heat, stirring, and simmer it for 1 minute.
• Force the mixture through a fine sieve set over a bowl and chill the syrup, covered, for at least 3 hours.

OLD-FASHIONED ICE CREAM SODA

Steps:

• Pour 1/2 cup club soda into each of four tall glasses. Add 1/2 cup ice cream to each glass. Fill glasses with soda. Serve immediately.
