One Pot Cacio e Pepe Isreali Couscous image

Number Of Ingredients 6

1.5 cups Israeli couscous, uncooked
3 cups water
1 tsp kosher salt
1 tsp freshly cracked black pepper (plus more for serving )
1/3 cup freshly grated pecorino, plus more for serving (parmesiano reggiano is fine )
1 tsp parsley, finely chopped

Steps:

  • In a medium pot over high heat, add the Israeli couscous and water. Bring to boil. Once boiling, reduce heat to a light simmer. Let cook, uncovered and stirring occasionally, until liquid has absorbed and couscous is tender, about 10 minutes.
  • Once the liquid is absorbed and couscous is tender, remove from heat. Season with salt and black pepper. Stir in the pecorino and mix until combined.
  • Top with 3 turns of freshly cracked black pepper, a sprinkle of freshly grated pecorino and parsley.
  • Serve and enjoy!

12 ounces bucatini or linguine
1 tablespoon whole black peppercorns
1/4 cup extra-virgin olive oil
4 ounces pecorino romano cheese, finely grated

Steps:

  • Bring 2 1/2 quarts water (about 10 cups) to a boil in a large deep skillet. Add 1 tablespoon salt and the pasta and cook until just al dente (1 to 2 minutes less than the label directs).
  • Meanwhile, put the peppercorns in a small resealable plastic bag and coarsely crush with the flat side of a meat mallet or the bottom of a skillet. Place the crushed peppercorns in a fine-mesh sieve and discard any dust that falls through. Heat the olive oil in a small skillet over medium heat. Add the crushed peppercorns and cook until sizzling, 1 to 2 minutes. Let cool slightly, then transfer to a large bowl.
  • Using tongs, remove the pasta from the boiling water and transfer to the bowl with the peppercorn oil along with 2 tablespoons of the cooking water. (Reserve the remaining cooking water in the skillet.) Toss the pasta until coated. Let cool slightly, 1 to 2 minutes. (If the pasta is too hot, the cheese will clump and not melt.)
  • Add the cheese to the bowl with the pasta in three batches, tossing well and adding a few tablespoons of the reserved cooking water with each addition; make sure most of the cheese is melted before adding more. Continue adding the cooking water, a few tablespoons at a time, until the pasta is coated in a thick creamy sauce.

12 ounces thin spaghetti, broken in half (see Cook's Note)
2 tablespoons extra-virgin olive oil
Kosher salt
2 teaspoons lemon juice
1/2 cup grated Pecorino-Romano, plus more for serving
1 tablespoon unsalted butter
1/2 cup grated Parmesan
2 teaspoons coarsely ground black pepper, plus more for serving

Steps:

  • Put the spaghetti, olive oil, 1 teaspoon salt and 5 1/2 cups of water together in a high-sided medium skillet. Bring to a boil over medium-high heat. Continue to cook, stirring the spaghetti frequently to keep it from clumping, until it is al dente, about 8 minutes. Remove from the heat and stir in the lemon juice. Gradually sprinkle in the Pecorino and stir until completely melted, then add the butter. Sprinkle in the Parmesan, pepper and 1/2 teaspoon salt and stir until melted and smooth-the cheese will clump at first but will melt into the sauce and thicken it up after about 4 minutes. Divide the spaghetti among 4 bowls and garnish with additional Pecorino and pepper.
