Provided by Samantha Skaggs

Categories     Main Course

Time 30m

Number Of Ingredients 15

1 pound lean ground beef
3 cloves garlic (minced)
Salt & freshly ground black pepper (to taste)
3 cups marinara sauce (homemade OR 1 (24-ounce) store-bought jar)
1 tablespoon tomato paste
1/2 teaspoon balsamic vinegar
1 teaspoon dried basil
3/4 teaspoon dried oregano
1/4 teaspoon dried thyme
1-2 teaspoons sugar (optional)
3 cups beef broth
8 ounces spaghetti noodles (broken in half)
Freshly grated Parmesan cheese (optional) (for serving)
Fresh minced parsley (optional) (for serving)
Crushed red pepper flakes (optional) (for serving)

Steps:

  • Set a large pot or Dutch oven over medium-high heat. Add the ground beef and cook until no longer pink, breaking apart and stirring as the meat cooks. Stir in the minced garlic and cook for another minute or two until fragrant.
  • Drain the grease from the pot and season the beef with salt and pepper, to taste. Add the marinara sauce, tomato paste, balsamic vinegar, dried basil, dried oregano, dried thyme, sugar (if using), and beef broth. Stir well to combine, bring to a boil, and then reduce heat to a low simmer (about medium-low).
  • Lay the broken spaghetti noodles on top of the sauce, criss-crossing them and pressing them down until submerged by liquid. Do not stir at this point.
  • Cover and cook, stirring every 5 minutes, until the excess liquid is absorbed and the pasta is al dente, about 15 to 20 minutes total (see NOTES below).
  • Stir well and serve immediately, topped with plenty of Parmesan cheese.

ONE-PAN PASTA

One-Pan Pasta image

It's one of our most popular recipes and for good reason. This is our original one-pot pasta recipe, inspired by a dish one of our food editors ate in Puglia, Italy. All the ingredients cook together in a straight-sided skillet, you don't even need to boil water first-and it's on the table in just 20 minutes.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Pasta and Grains

Time 20m

Number Of Ingredients 10

12 ounces linguine
12 ounces cherry or grape tomatoes, halved or quartered if large
1 onion, thinly sliced (about 2 cups)
4 cloves garlic, thinly sliced
1/2 teaspoon red-pepper flakes
2 sprigs basil, plus torn leaves for garnish
2 tablespoons extra-virgin olive oil, plus more for serving
Coarse salt and freshly ground pepper
4 1/2 cups water
Freshly grated Parmesan cheese, for serving

Steps:

  • Combine pasta, tomatoes, onion, garlic, red-pepper flakes, basil, oil, 2 teaspoons salt, 1/4 teaspoon pepper, and water in a large straight-sided skillet. Bring to a boil over high heat. Boil mixture, stirring and turning pasta frequently with tongs, until pasta is al dente and water has nearly evaporated, about 9 minutes.
  • Season to taste with salt and pepper, divide among 4 bowls, and garnish with basil. Serve with oil and Parmesan.

  • In a large pot, brown the ground beef and onions over medium heat until almost all the pink is gone and the onions are translucent. If there is an excess amount of oil in the bottom of the pan, you can tilt the pan and spoon out the oil to discard. If there is only a little bit of oil, don't worry about it. The amount of fat at the bottom of the pan will depend entirely on the ground beef that you choose to use and its fat content. Stir in the minced garlic and cook for 1 minute.
  • Stir in the diced tomatoes and marinara sauce. Cook, stirring on occasion, until boiling. Add the sugar, onion powder, Italian seasoning, thyme, salt and pepper; stir to combine.
  • Break the spaghetti in half (or leave it whole, if desired) and add it to the pot along with the broth. Push the noodles down to submerge them in the sauce. Bring to a boil, then cover and reduce the heat to simmer, stirring every 5 minutes, for 15 minutes or until the pasta is done and the sauce is thicker.

  • Add the uncooked pasta to a large pot (or pan with deep sides). Add the remaining ingredients – except for the spinach – and mix well. Bring the pot to a boil over high heat.
  • Once boiling, reduce the heat to medium low and cook the pasta for 10-14 minutes, until al-dente. Stir the mixture every 2 minutes to prevent anything from sticking to the bottom of the pan. (Note: cooking times will vary based on the type of pasta used. I suggest you start to check for doneness based on the minimum cook time on the package instructions)
  • Turn the heat off and fold the spinach into the pasta. Once the spinach has wilted, divide the pasta into serving bowls and top as desired. This recipe is best enjoyed fresh, but leftovers will keep in the fridge for up to 5 days.
