- Combine the coleslaw and onion in a large bowl.
- In a separate bowl, combine the sugar, salt, pepper, milk, mayonnaise, buttermilk, vinegar and lemon juice; mix until smooth. Pour mixture over the coleslaw and onion; stir well and chill for 1 hour.

- In a large salad bowl, place the cabbage, onion, green bell pepper, red bell pepper and carrot. Combine the vinegar, sugar, salt, pepper and vegetable oil in the bowl with the vegetables. Toss the mixture until the vegetables are fully coated with the marinade.

- Puree the ricotta in a food processor or blender until very smooth.
- Add the yogurt and vinegar, and process thoroughly. Remove from processor, and add celery seed, celery salt and mustard.
- Combine the onion, garlic, sugar, cabbage and parsley, and fold in the dressing. Serve over beef.

SHRIMP TACOS WITH SPICY ONION SLAW
I made up this quick and easy recipe the other night and my husband went crazy for them! They are very filling and great for hot summer nights! I used the frozen popcorn shrimp, but they would be delicious with grilled shrimp and a little cilantro as well! Also, you can buy spicy ranch already pre made, or make it yourself! There is a strong onion taste, so if your not an onion lover I wouldn't recommend this recipe! Hope you enjoy this recipe as much as we do!

- First mix ranch and hot sauce, use more or less of each until you reach your desired heat level. Then mix all ingridients (excluding:tortillas, shrimp, avocados and cheese) in a bowl, should be a slightly runny slaw mix, add more lettuce and/or sour cream if too watery, or more spicy ranch if too dry. Put shrimp in tortilla, top with a sprinkle of cheese, a heaping spoonful of onion slaw mix, then top with a few slices of avocados. And Enjoy! Also great with homemade sangria or margaritas!

- Combine the cornmeal, flour, breadcrumbs, salt, cayenne and paprika in a pie plate. In another pie plate, whisk together the egg and buttermilk. Add the oysters to the egg-buttermilk mixture and turn gently with a large spoon to coat. Remove the oysters, one by one from the egg mixture with a pair of tongs and place in the crumbs. Turn several times to coat evenly with the crumb mixture, then transfer to a plate and let stand for 10 minutes.
- While the oysters "rest," make the garlic-onion slaw. Place the cabbage and sliced onion in a large bowl and season with salt and pepper. In a separate bowl, whisk together the buttermilk, mayonnaise, garlic, sugar and hot sauce. Add to the cabbage-onion mixture and toss to combine. Taste and adjust the seasoning as needed. Set aside until ready to assemble the sandwiches.
- Heat 1/4-inch of oil in a large skillet to 350°F (medium-high). Best if using enough oil in the pan to be equal to about 1/2 the thickness of the oysters. Test the temperature of the oil by adding a pinch of the dry crumb mixture - if it sizzles immediately, the oil is ready. Add 1/2 the oysters and fry until golden brown and crispy, turning once, about 2-1/2 minutes per side. Transfer to a paper towel-lined plate and blot very gently. Repeat with the remaining oysters.

Although I usually think of coleslaw as a summertime side dish, it seems to go really well with my Super Bowl spread. I serve pulled pork with baked beans and some of this lovely, creamy coleslaw, then sit back and collect the compliments! Again, this makes a LOT, so adjust accordingly. This recipe is easily increased or decreased. Use a 16-ounce package of coleslaw mix for every six guests.
