- You can adjust this recipe depending on how many mocktails you'd like to make. If just making for a few people you can use half the can of lychees and juice, or if you're making for more then use the full can, but reserve some lychees for decoration. Add them and the remaining ingredients to a blender except for the lemon lime and bitters drink.
- Use the pulse button on your blender to make it into a nice crushed ice consistency. If you like it a bit runnier that's fine too - adjust the amount of ice to your taste. You can't really go wrong. It's going to taste amazing anyway!
- Pour the mixture into cocktail glasses - about 3/4 full. Then top up with the lemon lime and bitters drink. Decorate with reserved lychees and mint. Enjoy!

- Wash the lemon, strawberries, blueberries and mint.
- Slice the lemon into rounds and cut the strawberries in half.
- Combine all of these into a large jug.
- Pour the elderflower cordial into the fruit mixture and stir. (try to squash some of the fruit to release its juices). Then pour half of the apple juice into the mix and then some sparkling water.
- Add ice, stir and enjoy!
ELDERFLOWER ROSé SPRITZER
Steps:
- In a measuring glass, mix together rosé wine, elderflower liquer and fresh lemon juice. Stir to combine.
- Fill 2 glasses with ice and pour rosé mixture into each glass. Top with seltzer water to taste.
- Garnish each glass with fresh lemon slices and flowers.

Found on thekitchn.com. To make an easy elderflower syrup: Place 2 cups water and 1 cup sugar in a sauce pan. Boil for 1 minute, stirring constantly to dissolve the sugars. Remove from heat, add one sprig of elderflowers and let sit ten minutes to infuse. Strain, discard solids, and allow syrup to cool completely. This will be more than is needed for this beverage. Use the remaining syrup in other recipes.

- Stir orange juice, mineral water, elderflower syrup and juice of one half lime slice together.
- Pour over ice into a glass.
- Taste and adjust for correct flavor.
- Garnish with the other lime slice, (fresh elderflower blossoms, mint or lemon verbena if desired) and enjoy!
- Note: I used juice of one medium orange, about 3-4 ounces of mineral water and about scant 1/4 cup of elderflower syrup. Find a balance of flavor you prefer. This wasn't an exact science. Lastly, I think it would be interesting to play around with other citrus-grapefruit comes first to mind -- .
