3/4 cup pecans, coarsely chopped
3 tablespoons unsalted butter
2 tablespoons maple syrup
2 shallots, minced
2/3 teaspoon orange zest
1 pinch cayenne pepper
2 teaspoons all-purpose flour
1 1/2 lbs green beans
2/3 cup chicken broth
1/3 cup orange juice
1 teaspoon fresh sage, minced
salt & pepper

Steps:

  • Toast pecans in 12" non-stick skillet over medium-high heat, stirring occasionally, about 3 minutes or until fragrant. Stir in maple syrup, 1 tbsp butter, and 1/8 tsp salt. Stir constantly until nuts are dry and glossy, then transfer to plate and set aside.
  • Wipe out skillet. Melt remaining 2 tbsp butter in skillet over medium heat. Add shallots, orange zest, and pinch of cayenne pepper. Cook, stirring occasionally, 2 minutes or until shallots are softened. Stir in flour until combined, then add green beans. Add chicken broth, orange juice, and sage. Increase heat to medium-high, cover, and cook until beans are crisp-tender (about 4 minutes).
  • Uncover and cook about 4 minutes, until beans are tender and sauce has slightly thickened. Remove from heat. Season with salt and pepper to taste. Transfer to serving dish, sprinkle with pecans, and serve.

2 tablespoons orange juice
1 tablespoon Dijon mustard
1 teaspoon brown sugar
2 tablespoons butter
1 small red onion, sliced thin
1/2 cup chopped pecans
salt, pepper
1/2 teaspoon fresh thyme, chopped

Steps:

  • bring a medium pot of water to boil . add salt, add green beans, cook 5-6 minutes, drain rinse in cold water to stop cooking, drain on paper towels. in a small bowl whisk together orange juice, mustard and sugar, set aside. in a large skillet melt butter over medium heat add onion and pecans, saute stirring often, until onions are browned and pecans are toasted, 10 minutes.
  • add green beans, season with salt, pepper, thyme, stir. add mustard mixture, lower heat and stir to combine sauce and beans, 1-2 minutes.

1/4 cup finely chopped shallots

1-1/2 pounds fresh green beans, trimmed

1 cup chopped pecans
¼ cup brown sugar
2 Tablespoons butter
salt and pepper (to taste)

Steps:

  • Place green beans in a large pan of boiling water.
  • Place a colander in a large bowl of ice water; set aside.
  • Cook beans for 5 minutes and transfer to colander in ice water to stop cooking then drain well.
  • Place pecans and brown sugar in a frying pan over medium-high heat.
  • Stir continually until the sugar is completely melted and pecans are evenly coated in melted sugar.
  • Spread in an even layer on waxed paper until cool. Break apart into smaller pieces if necessary.
  • Melt butter in a large pan over medium heat, add beans and saute until heated through.
  • Season with salt and pepper.
  • Place beans in a serving dish and top with candied pecans.
  • Serve immediately.

1 cup white sugar
¾ cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1 cup sour cream
2 tablespoons orange zest
1 ⅞ cups all-purpose flour
¾ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
¾ cup chopped pecans
¼ cup orange juice
2 tablespoons brandy-based orange liqueur (such as Grand Marnier®)

Steps:

  • Stir together the flour, baking powder, baking soda, and salt.
  • In a large bowl, cream the butter or margarine, 3/4 cup granulated sugar, and brown sugar. Beat in eggs, then add vanilla, sour cream, and orange rind. Beat the flour mixture into the creamed mixture. Stir in the pecans. Pour the batter into a greased and floured tube pan.
  • In a small bowl, mix together the remaining 1/4 cup sugar, the orange juice, and the liqueur.
  • Bake at 350 degrees F (175 degrees C) for 1 hour, or until it tests done with a toothpick. Pour the orange juice mixture over the hot cake. Transfer to a rack to cool.

  • Fill a large bowl with ice and water and set it aside. Bring a large saucepan of water to a boil. Add the green beans, and boil just until they’re a brighter green and tender, about 4 minutes. Drain, and immediately plunge them into the ice water. Once they’re cool, drain again, dry them with a kitchen towel, and spread them out on a sheet pan. Drizzle them with the olive oil and then toss with your hands to ensure they’re all well coated. Sprinkle with salt and pepper and spread them out evenly, in a single layer.
  • Place the sheet pan in the 500°F oven and roast until they begin to blister and become a little bit golden, 8 to 10 minutes. (Move them around and flip them about half way through the roasting time.) Use a spatula to help you add the roasted beans to a large mixing bowl. Set aside.
  • While the beans are roasting, add the butter, orange zest and orange juice to a small sauce pan. Sprinkle a little salt and pepper on top and place it over low heat. Once the butter is melted, remove the pan from the heat and drizzle the sauce over the roasted beans.
