Steps:
- Pat cookie dough into an ungreased 14-in. pizza pan. Bake at 350° for 15-18 minutes or until deep golden brown; cool. , In a bowl, beat the cream cheese and confectioners' sugar until smooth. Fold in whipped topping. Spread over crust. Arrange fruit on top. , In a saucepan, bring the sugar, orange juice, water, lemon juice, cornstarch and salt to a boil, stirring constantly for 2 minutes or until thickened. Cool; brush over fruit. Chill. Store in refrigerator.

Steps:
- Roll out cookie dough flat onto a prepared greased cookie sheet.
- I used my 12 inch pizza stone.
- Bake by instructions.
- This is very good with a chewy texture.
- Be sure not to over bake.
- Mix in a mixer cream cheese and powdered sugar until fluffy.
- Slice the assorted fruit while cookie is baking.
- Allow cookie to cool then spread cream cheese over dough.
- Arrange fruit over cream cheese.
- Glaze:
- Combine orange juice, lemon juice, sugar and corn starch in a sauce pan.
- Cook on low until thickened.
- Once sauce is thickened allow to cool completely before pouring over fruit pizza.
- Serve right away if you have 8 hungry teenagers standing around.
- Or refrigerate several hours before serving.

- Grease a round pizza pan well.
- Slice cookie dough 1/4" and cover the pan with dough overlapping.
- Bake as directed.
- Slice the assorted fruit while cookie is baking.
- Allow cookie to cool then spread cream cheese over dough.
- Arrange fruit over cream cheese.
- Glaze: combine orange juice, lemon juice, sugar and corn starch in a sauce pan.
- Cook on low until thickened.
- Once sauce is thickened allow to cool completely before pouring over fruit pizza.

INDIVIDUAL FRUIT PIZZAS

- For the cookie crust: Preheat the oven to 350 degrees F. In a large bowl, cream the butter, sugar, orange zest and vanilla thoroughly. Add in the eggs and beat until light and fluffy. Add in the milk and mix.
- In a medium bowl, sift together the dry ingredients (flour, baking powder and salt). Then blend this into the cream mixture. Wrap in plastic wrap and flatten into a disc, and then refrigerate for 1 hour (or freeze for 20 minutes).
- Roll out the dough into one large rectangle. Then, using a 4 1/2-inch cutter, cut out circles of dough.
- Bake until the cookie dough is cooked and golden brown, but not overly crisp, 8 to 10 minutes. Remove from the oven and allow to cool completely.
- For the topping: Using a mixer with a whisk attachment, whip together the marshmallow creme and cream cheese until light.
- Serve the cooled crusts with the cream mixture and a platter of fruit. Let everyone build their own pizza by spreading the cream mixture on the crust and then decorating with as much fruit as desired!
CHOCOLATE AND FRUIT PIZZA WITH BITTERSWEET CHOCOLATE SAUCE
Steps:
- Place a baking stone on the lower rack of the oven and preheat the oven to 475 degrees F.
- Remove the dough from the bowl and punch down on a lightly floured surface. Let rest for 10 minutes.
- In a small bowl, beat together the mascarpone, honey, and orange flavored liqueur. Set aside.
- In a small saucepan, scald the cream. Place the chocolate in a large bowl and add the hot cream. Let sit for 2 minutes. Add the oil and whisk until smooth. Let cool until almost room temperature and a pouring consistency.
- Shape the dough into a 14-inch round. Lightly dust a baker's peel with flour. Place the dough on the peel. Slide from the peel onto the hot baking stone and cook until the crust is set, 8 to 10 minutes. (Alternatively, place the dough on a lightly oiled large baking sheet and bake.)
- Place the baked crust on a large cutting board or work surface. Spread with the mascarpone mixture over the crust, and arrange the kiwi and strawberry slices in a decorative pattern over the mascarpone. Drizzle the warm chocolate sauce over the fruit and dust with the confectioners' sugar. Slice, garnish with the mint and serve immediately.
- In a large bowl, combine the water, yeast, sugar and 1 tablespoon oil and stir to combine. Let sit until the mixture is foamy, about 5 minutes.
- Add 1 1/2 cups of the flour, mixing by hand until it is all incorporated and the mixture is smooth. Add the cocoa and continue adding the flour, 1/4 cup at a time, working the dough after each addition, until all the flour is incorporated but the dough is still slightly sticky. Turn the dough out onto a lightly floured surface and knead until smooth but still slightly tacky, 3 to 5 minutes.
- Oil a large mixing bowl with the remaining 1 1/2 teaspoons olive oil. Place the dough in the bowl and turn to oil all sides. Cover the bowl with plastic wrap and set in a warm, draft-free place until nearly doubled in size, 1 to 1 1/2 hours. Use as directed.

- Preheat oven to 350 degrees F (175 degrees C). Slice cookie dough and arrange on greased pizza pan, overlapping edges. Press dough flat into pan. Bake for 10 to 12 minutes. Allow to cool.
- In a large bowl, soften cream cheese, then fold in the whipped topping. Spread over cooled crust. You can chill for a while at this point, or continue by arranging the fruit.
- Begin with strawberries, sliced in half. Arrange in a circle around the outside edge. Continue with fruit of your choice, working towards the middle. If bananas are used, dip them in lemon juice so they don't darken. Then make a sauce to spoon over fruit.
- In a saucepan, combine sugar, salt, corn starch, orange juice, lemon juice and water. Cook and stir over medium heat. Bring to a boil, and cook for 1 or 2 minutes, until thickened. Remove from heat, and add grated orange rind. Allow to cool, but not set up. Spoon over fruit. Chill for two hours, then cut into wedges and serve.

- Let dough stand at room temperature for 5-10 minutes to soften. Press onto an ungreased 14-in. pizza pan. Bake at 350° for 15-18 minutes or until deep golden brown.
