A fresh, cheery loaf full of vanilla and orange flavour.

3 large eggs
¾ cup granulated sugar
⅓ cup vegetable oil
2 tsp vanilla
1½ cups all purpose flour
1 Tbsp grated orange zest
2 tsp baking powder
½ tsp baking soda
¼ tsp salt
⅔ cup light (5%) sour cream (NOT fat free)
¼ cup fresh orange juice
GLAZE:
1 cup icing sugar
3-4 tsp orange juice
½ tsp orange zest

Steps:

  • Preheat oven to 350 degrees. Thoroughly grease a 9x5" baking pan and set aside.
  • In large bowl, whisk together eggs and sugar until combined. Whisk in oil and vanilla.
  • In a separate bowl, mix together flour, baking powder, baking soda, and salt. Stir in egg mixture, alternating with sour cream, making two additions of each and stirring after each addition. Stir in orange juice thoroughly.
  • Spread in prepared pan and bake for 42-47 minutes, until a tester comes out clean from the center.
  • Let cool in pan on rack for 10 minutes, then loosen edges with a knife, remove, and let cool completely on wire rack.
  • When cool, combine glaze ingredients until desired drizzling consistency and pour over the loaf, spreading to cover the top and letting it run down the sides.
  • Garnish with additional orange zest, if desired.

½ cup margarine
1 cup white sugar
2 eggs
1 tablespoon grated orange zest
½ cup fresh orange juice
2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
½ cup chopped walnuts
½ cup orange juice
¼ cup white sugar

Steps:

  • Stir together flour, baking powder, salt, and nuts.
  • In a large bowl, beat together butter or margarine and 1 cup sugar. Beat in eggs one at a time. Stir in rind and 1/2 cup juice. Pour in flour mixture, and stir until moistened. Turn into a greased 9 x 5 x 3 inch loaf pan.
  • Bake at 350 degrees F (175 degrees C) for 1 hour, or until done. Remove loaf from oven, but not from pan.
  • Combine 1/2 cup orange juice with 1/4 cup sugar in a small saucepan. Heat and stir to dissolve sugar. Spoon glaze over hot loaf. Let stand in pan for 10 minutes before removing loaf to rack to cool.

This is a delicious and easy to make cake, a favorite of my husband's throughout his childhood. It comes from his grandmother's kitchen and hopefully will continue being passed from generation to generation. It is a bright and cheerful taste for a cold winter's day.

Number Of Ingredients 6

2 eggs
4 ounces sugar
4 ounces self rising flour
1 pinch salt
1 orange, juice and rind of
4 ounces butter

Steps:

  • Grease and lightly flour cake tin.
  • Beat butter and sugar for about 5 minutes.
  • Add eggs to mixture and stir.
  • Add grated orange peel, sifted flour and salt.
  • Stir lightly to mix.
  • Pour into prepared cake tin.
  • Bake in moderate oven 350 degrees F (150C) for around 40 minutes.
  • (Use the juice from the orange to make the icing by mixing it with powdered sugar and butter.).
