Carne Asada with Oaxaca Cheese image

Impress your guests with this luxurious yet simple-to-make filet mignon recipe topped with authentic ingredients: Oaxaca Cheese, HERDEZ Guacamole Salsa and HERDEZ Salsa Verde - the perfect marinade!

Number Of Ingredients 7

4 (4-6 ounces each) filet mignon
2 slices Oaxaca cheese
Sea salt
Black pepper
Grape seed oil
8 ounces HERDEZ® Salsa Verde
8 ounces HERDEZ® Guacamole Salsa

Steps:

  • Preheat grill.
  • Lightly coat filets with grape seed oil and season with salt and pepper on each side.
  • Grill steaks about 8 minutes per side (5 minutes per side for rare), basting with HERDEZ Salsa Verde.
  • Once seared, transfer to saute pan with HERDEZ Salsa Verde. Top with Oaxaca cheese and place in oven until cheese melts.
  • Remove steaks from oven and transfer to plate. Spoon HERDEZ Guacamole Salsa

Puff Pastry-Wrapped Jalapeños Stuffed with Oaxaca Cheese image

These guys are spicy! If you're afraid of the heat, you can use güero chiles, but jalapeños are exactly the right size for an appetizer. Oaxaca cheese, like mozzarella, is a mild-flavored white cheese that is excellent for melting. It's popular for quesadillas in Mexico.

Yield serves 8

Number Of Ingredients 8

Nonstick cooking spray
2 1/2 cups shredded Oaxaca cheese or mozzarella cheese
1 1/2 tablespoons crumbled dried oregano, preferably Mexican
Salt and freshly ground black pepper
18 jalapeño chiles, charred (see page 35), peeled, stemmed, seeded, and left whole
One 17.3-ounce package frozen puff pastry, thawed
All-purpose flour, for rolling
1 egg, lightly beaten with 1 tablespoon water

Steps:

  • Preheat the oven to 350°F. Spray a large baking sheet with nonstick cooking spray.
  • Mix the cheese and the oregano in a medium bowl to blend. Season to taste with salt and pepper. Carefully fill each jalapeño with 1 tablespoon of the cheese mixture. (The jalapeños can be prepared 1 day ahead. Transfer the filled jalapeños carefully to a baking sheet, cover, and refrigerate.)
  • Working with 1 sheet at a time, roll the puff pastry on a lightly floured surface to 1/4-inch thickness. Cut it into nine 3 x 4-inch rectangles. Place the rectangles on a work surface, and brush each one lightly with the egg wash. Place 1 jalapeño in the center of each rectangle, on the diagonal. Tightly fold the puff pastry, like an envelope, over the jalapeño to enclose it completely. Brush the pastry lightly with the egg wash. Press the tines of a fork lightly on the seams to seal the pastry. Invert the packets onto the prepared baking sheet so they are seam side down. Brush them lightly with egg wash. Repeat with the remaining puff pastry and jalapeños.
  • Bake until puffed and golden, about 20 minutes. Let cool for 5 minutes, and then transfer the pastry-wrapped jalapeños to a platter and serve.

Roasted Cabbage with Oregano and Oaxaca Cheese image

Melted and slightly browned Oaxaca cheese mellows out bitter cabbage for this wonderful side dish. My son loves this with a little bit of lime juice sprinkled over it, and I like the edges, where the cheese is crisp and almost charred. When cutting the cabbage, cut on an angle so that there is a piece of the core on each wedge; it will hold the individual leaves together. For an impressive presentation, create a lattice with the strings of cheese.

Yield serves 4 to 6

Number Of Ingredients 7

1 large cabbage, cut into 12 wedges
1/3 cup olive oil
2 tablespoons crumbled dried oregano
2 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
6 ounces Oaxaca cheese or mozzarella cheese, separated into long 1/2-inch-thick strings

Steps:

  • Preheat the oven to 400°F.
  • Arrange the cabbage wedges, slightly overlapping, in a 9 x 13-inch glass baking dish. Mix the olive oil, oregano, garlic, salt, and pepper in a small bowl. Using a pastry brush, brush the olive oil mixture evenly over the cabbage wedges. Roast for 30 minutes, or until the cabbage begins to brown.
  • Remove the dish from the oven and reduce the oven temperature to 350°F.
  • Arrange the strings of cheese over the cabbage, forming a lattice if desired. Roast for 15 minutes, or until the cheese begins to brown. Serve hot.
