SESAME JELLYFISH SALAD



Sesame Jellyfish Salad image

I learned to love sesame-flavoured jellyfish from having it at Chinese banquets growing up. Now I make this variation of jellyfish salad with chopped or grated veggies and a spicy sesame sauce. This makes a refreshing and delicious side dish or Chinese-style shared dish. Jellyfish is flavourless, but it is delightfully crunchy and lends itself to various flavour combinations. Serve chilled or at room temperature.

9 ounces ready-to-eat shredded jellyfish
3 tablespoons sesame oil
2 teaspoons low-sodium soy sauce
2 teaspoons rice vinegar
1 teaspoon white sugar, or to taste
¼ teaspoon chili oil, or to taste
1 teaspoon grated fresh ginger root, or to taste
2 tablespoons white sesame seeds
2 tablespoons chopped fresh cilantro
2 tablespoons thinly sliced green onion

Steps:

  • Rinse and drain jellyfish; place into a bowl.
  • Whisk sesame oil, soy sauce, vinegar, sugar, chili oil, and ginger together in a small bowl; stir into jellyfish and marinate 15 minutes.
  • Place sesame seeds in a dry skillet over medium-low heat; toast until golden, about 1 minute. Set aside to cool, about 5 minutes.
  • Stir cilantro and green onions into jellyfish mixture; sprinkle with sesame seeds and serve immediately.

2 skinless salmon fillets (6 to 8 ounces each)
Coarse salt and ground pepper
1/4 cup rice vinegar
3 tablespoons toasted sesame oil
2 tablespoons honey
1/2 small head napa cabbage, shredded (about 4 cups)
1 small head red cabbage, shredded (about 4 cups)
2 large carrots, shredded
1/4 cup finely chopped sweet onion, such as Vidalia
1/2 cup sliced or chopped toasted almonds
1/2 cup coarsely chopped dried apricots

Steps:

  • Heat broiler. Place salmon fillets on a rimmed baking sheet; season generously with salt and pepper. Broil until fish is just cooked through, 8 to 10 minutes. When cool enough to handle, cut into large chunks.
  • In a large bowl, whisk together vinegar, oil, and honey; season with salt and pepper. Set aside 2 tablespoons dressing.
  • To remaining dressing, add napa and red cabbage, carrots, onion, almonds, and apricots; toss.
  • Divide salad among 4 plates; top with salmon. Drizzle reserved dressing over salmon.

½ cup sweetened dried cranberries (such as Craisins®)
½ cup finely chopped carrot
¼ cup chopped green onions
¼ cup finely chopped cilantro
1 tablespoon sesame seeds
1 ½ teaspoons ground ginger
1 ½ teaspoons ground red chile pepper
¾ teaspoon kosher salt
½ cup light mayonnaise
¼ cup Asian chile paste (such as sambal oelek)
2 tablespoons sesame oil
1 tablespoon light soy sauce
1 tablespoon honey

Steps:

  • Mix tuna, cranberries, carrot, green onions, cilantro, sesame seeds, ginger, ground chile pepper, and kosher salt together in a large bowl.
  • Whisk mayonnaise, chile paste, sesame oil, soy sauce, and honey together in a separate bowl; add to tuna mixture and stir to coat.

1 1/2 lbs firm fish fillets (I used Kingclip a local meaty white fish, so use any meaty fish of your choice)
1 large cucumber, cut lengthways into 1 inch sticks
4 stalks celery, sliced
8 spring onions, sliced
1 red pepper, seeded and cubed
1 yellow pepper, seeded and cubed
1 large mangoes, peeled and sliced or 1 (425 g) can mangoes, drained
2 -4 red chilies or 2 -4 green chilies, sliced
3 tablespoons lemon juice
2 tablespoons light olive oil
2 tablespoons caster sugar (superfine)
4 tablespoons soy sauce

Steps:

  • Place the fish on to a greased baking tray and grill for 5 minutes on each side or until cooked through.
  • Set aside to cool, then slice into thick strips.
  • Cut the cucumber Use a vegetable peeler to carefully peel thin slices from the cucumber sticks.
  • Toss the cucumber slices, celery, spring onions, peppers and mango slices together in a large salad bowl.
  • Add the cooled fish strips.
  • Mix the chillies, lemon juice, oil, sugar and fish or soy sauce together until well combined.
  • Pour over the salad ingredients and toss lightly to combine.
