ORECCHIETTE WITH FRESH AND DRIED BEANS AND TOMATOES



Orecchiette With Fresh and Dried Beans and Tomatoes image

Once the beans are done, this pasta dish takes only 15 minutes. Orecchiette is a great pasta to use with beans, which lodge in the hollows of the little ears. I used lush Good Mother Stallard beans, an heirloom bean that I ordered from Rancho Gordo for this dish, but you can substitute supermarket pinto or borlottis. Cook them simply and use some of the broth for the sauce. If you have marinara sauce on hand you can use that; otherwise take advantage of the tomatoes arriving in farmers' markets and your garden, and chop up a few of them. No need to cook them if you don't want to.

1/2 pound (about 1 1/2 cups) Good Mother Stallard Beans, pintos, or borlottis, rinsed and soaked for 4 hours or overnight in 1 quart water
1/2 large onion, or 1 small onion, cut in half or quartered
2 to 3 large garlic cloves, minced
Salt to taste
1 cup marinara sauce (using fresh or canned tomatoes), or 1 cup finely chopped fresh tomatoes
1/2 pound orecchiette
1/2 pound green beans, broken into 2- or 3-inch lengths
Slivered fresh basil leaves (about 2 tablespoons)
Freshly grated Parmesan for serving

Steps:

  • To cook dried beans, transfer with their soaking water to a heavy pot. Add more water as necessary to cover the beans with 1 1/2 to 2 inches of water. Over medium-high heat, bring to a gentle boil and skim away foam. Add onion and garlic, cover, reduce heat to low and simmer 30 minutes. Add salt to taste (I use at least a rounded teaspoon), cover and continue to simmer very gently for 1 to 1 1/2 hours, until the beans are tender all the way through and their texture is plush and velvety. Taste the bean broth and add more salt as necessary. Remove from heat. Let beans cool in the broth if not using right away.
  • Place a strainer over a bowl and drain beans. Measure out 1 cup of the broth and combine with the tomato sauce or tomatoes in a wide pan or a pasta bowl.
  • Bring a large pot of water to a boil, salt generously and add orecchiette. Boil 5 minutes and add green beans. Boil another 5 minutes, until pasta is cooked al dente. Drain and toss green beans and pasta with the cooked beans and tomato sauce or tomatoes. Add half the basil and toss again.
  • Serve in wide bowls, garnishing each serving with fresh basil and Parmesan.

3 cups orecchiette
6 medium size fresh sage leaves or 1 teaspoon dried
2 cloves garlic
1/2 cup (packed) fresh parsley leaves
2 cups cooked white beans or 19 ounce can drained white beans
1/3 cup olive oil
1/4 cup dry white wine
1/2 cup small dice of mixed yellow, green and red bell pepper, for garnish
Grated Asiago cheese

Steps:

  • Bring large pot of salted water to a boil. Add pasta and cook until it is tender.
  • Cut fresh sage leaves into fine shreds; peel and mince garlic, chop parsley. Rinse and drain canned beans.
  • Heat olive oil in a medium size saucepan. Add garlic and sage and cook for 10 seconds. Add wine and cook until evaporated, about a minute. Add beans, cover and simmer until heated through: 2 minutes. Remove from heat and stir in parsley, season to taste with salt and pepper. Keep warm, covered, off heat, until pasta is done.
  • Drain pasta and return it to the pot, off heat. Stir in bean mixture, toss well and serve immediately garnished with raw peppers. Pass cheese separately.

These are cut into pieces, formed into rounds and given the classic cup shape between the index finger and thumb, then flipped inside-out to expose the slightly more textured surface that will "grab" the sauce.

¼ cup extra-virgin olive oil
3 cloves garlic, smashed
1¼ pounds large cherry tomatoes, halved
12 ounces dry orecchiette
2 cups, packed, arugula
Ground black pepper
½ cup freshly grated pecorino

Steps:

  • Start bringing a large pot of salted water to a boil. Meanwhile, heat 3 tablespoons oil on medium-low in a large sauté pan. Add garlic and allow to cook 10 minutes, until oil is fragrant but garlic has not browned. Remove garlic (save for another use). When water boils, stir in pasta.
  • Add tomatoes to oil in sauté pan, increase heat to medium-high and, when tomatoes start to shrivel and collapse, reduce heat to low and cook until softened but not shapeless, about 5 minutes. Stir a couple of times. Reserve ½ cup of pasta water.
  • Drain pasta and add to tomatoes, folding both together. Add some pasta water if needed for moistening. Fold in arugula and remaining oil. When arugula has just wilted, season dish with salt and pepper. Serve with a dusting of cheese.

1/4 cup chopped fresh cilantro plus sprigs for garnish

Steps:

  • Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain.
  • Meanwhile, combine tomatoes, 6 tablespoons olive oil, chopped mint, green onions, chopped cilantro, and garlic in large bowl. Season to taste with salt.
  • Heat remaining 1 tablespoon olive oil in medium skillet over medium-high heat. Add garbanzo beans and sauté until lightly browned, about 5 minutes. 2 pints grape tomatoes, halved lengthwise
1 tablespoon olive oil
1/4 teaspoon salt
1 (8 ounce) jar pc black label sun-dried tomato pesto
1/3 cup black label hard ripened sovrano cheese, shredded
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 (500 g) package presdient's choice black label orecchiette
1/2 cup thinly sliced fresh basil

Steps:

  • Preheat oven to 400°F (200°C). Line rimmed baking sheet with parchment paper.
  • Toss together tomatoes, oil and 1/4 tsp (1 mL) salt in bowl; spread onto prepared baking sheet. Roast in centre of oven for 25 minutes or until shriveled.
  • Meanwhile, combine pesto, cheese, 1/2 tsp (2 mL) salt and the pepper in large bowl.
  • Bring large pot of salted water to a boil. Add pasta; stir occasionally until water returns to a boil. Cook for 9 to 11 minutes or until tender but firm. Drain, reserving 1 cup (250 mL) of the pasta cooking water. Toss pasta with pesto mixture. Add half of reserved pasta cooking water and toss again. Add more water if necessary to loosen sauce, adding 1/4 cup (50 mL) at a time. Stir in basil.
  • Divide pasta among six bowls; spoon tomatoes over top. Serve with additional grated or shaved cheese, if desired.

The type of sausage you use will greatly affect the taste of the whole dish. I'm partial to Sicilian-style chicken sausage for this recipe. Garnish each bowl with Parmesan cheese.

2 tablespoons unsalted butter
1 tablespoon extra-virgin olive oil
1 small onion, minced
3 cloves garlic, minced
1 (4 ounce) package chopped pancetta
1 (12 ounce) package Italian chicken sausage (such as Trader Joe's® Chicken Sicilian Sausage)
⅓ cup red wine
1 (8 ounce) package crimini mushrooms, sliced
20 cherry tomatoes, halved, or more to taste
3 tablespoons chopped fresh basil
2 tablespoons chopped fresh oregano
salt to taste
1 (16 ounce) package orecchiette pasta
1 cup chopped baby spinach

Steps:

  • Heat butter and oil in a large skillet over medium heat. Add onion and garlic; cook and stir until the onion starts to soften, about 2 minutes.
  • Increase heat to high and add pancetta to the skillet. Cook and stir until crispy, 3 to 5 minutes. Remove casings from the sausages; add sausage meat to skillet. Cook and stir until browned, 3 to 5 minutes. Pour in wine and scrape the bottom of the skillet.
  • Toss mushrooms into the skillet. Cook, stirring occasionally, until slightly softened, 5 to 10 minutes. Add tomatoes, basil, oregano, and salt. Stir to combine. Reduce heat to low; cover and simmer, stirring occasionally, until the sauce is thick, 1 to 2 hours.
  • Fill a large pot with salted water and bring to a rolling boil. Stir in orecchiette and return to a boil. Cook pasta uncovered, stirring occasionally, until tender yet firm to the bite, about 7 minutes. Reserve 1/2 cup of cooking water and drain without rinsing the pasta.
  • Stir spinach into the sauce in the skillet. Cook until wilted, about 1 minute. Toss pasta into the skillet and stir to combine everything. Stir until heated through, adding some reserved pasta water if the sauce seems too thick.

  • Heat oil in large nonstick skillet over medium-high heat. Add onion and sauté until tender, about 5 minutes. Add garlic and crushed red pepper; stir 1 minute. Stir in tomatoes with juices and 1/4 cup water. Bring to boil. Reduce heat to medium; boil gently until sauce thickens, stirring occasionally, about 10 minutes. Stir in beans and basil. Season sauce to taste with salt and pepper.
  • Meanwhile, cook orecchiette pasta in large pot of boiling salted water until almost tender, about 15 minutes. Add broccoli florets; cook until pasta is just tender but still firm to bite and broccoli florets are crisp-tender, about 2 minutes longer. Ladle out 1/2 cup pasta cooking water and reserve. Drain orecchiette and broccoli florets; return to pot.
  • Add tomato sauce and reserved pasta cooking water to pasta and toss to blend. Season to taste with salt and pepper. Transfer pasta to bowl. Sprinkle with cheese and serve.

Don't bother making this unless you have the most delicious, perfectly ripe and juicy tomatoes, as the dish depends almost exclusively on this one ingredient. You must make this with pasta that will catch the delicious juices. Orecchiette seems to do it the best, but farfalle, fusilli, and penne work well, too. Season the tomatoes with a pinch of salt as you chop to coax the juices from them.

  • In a large skillet, heat the oil over medium heat. Add the garlic and fry until it begins to turn gold, about 1 minute.

36 ounces cherry tomatoes, on the vine, cut in half
1 (16 ounce) package Italian chicken sausage (use 3-5 links to your taste, I use 3)
4 ounces pancetta, pre-chopped
1 small onion, minced
3 garlic cloves, minced
2 tablespoons unsalted butter
1 tablespoon extra virgin olive oil
1/3 cup red wine
1 (8 ounce) package cremini mushrooms, sliced
3 tablespoons fresh basil, chopped
2 tablespoons fresh oregano, chopped
1 cup Baby Spinach, chopped

1 (16 ounce) package orecchiette (or small shells if you can't find Orecchiette)

Steps:

  • Heat a large skillet over medium heat. Add butter and oil. Once the butter is melted, add the onion and garlic. Cook until the onion is starting to get soft.
  • Turn the temp up to medium high and add the pancetta, cook until crispy. Remove the casings from the sausage then add to skillet and brown. Pour in the wine and scrape up those delicious browned bits.
  • Toss in the mushrooms and stirring occasionally, cook till they are slightly softened.
  • Add the tomatoes (any extra juices too), basil and oregano, and salt to taste, and stir to combine. Turn heat to low, cover and simmer for one to two hours, stirring occasionally.
  • While the sauce is simmering, cook the pasta (make sure you have good salty water) until just al-dente. Drain the pasta, reserving 1/2 cup pasta water (DO NOT RINSE).
  • Back to the skillet -- add the spinach and cook till it begins to wilt. Then toss in the pasta and stir to combine everything -- stir frequently until everything is heated through. (add some reserved pasta water if the sauce seems too thick)
  • Spoon into bowls and top with fresh Parmesan cheese. Enjoy!
