Categories     Bread

Time 30m

Number Of Ingredients 11

1/2 cup warm water (38 Celsius/100 Fahrenheit)
1 teaspoon sugar
2 teaspoon active dry yeast
1/2 cup warm (or at room temperature) plain yoghurt
1 1/2 tablespoon olive oil
1 clove garlic, grated
1/2 teaspoon salt
300 gram (2 1/2 cup) all purpose flour + roughly 60 gram (1/2 cup) while kneading
2 tablespoon unsalted butter, cut into small cubes
1-2 tablespoon salted butter, melted
2-3 tablespoon chopped fresh cilantro(or parsley) leaves

Steps:

  • Mix together warm water, sugar, and active dry yeast in a large mixing bowl. Set aside for 10 minutes, or until foamy.
  • Once the yeast solution is foamy, add yoghurt, olive oil, grated garlic, salt, and the 300 gram all purpose flour. Knead the dough until soft and non sticky. If the dough is sticky, add in 1 tablespoon of flour at a time, and continue kneading. You may need less or more than the stated 60 gram of additional flour, depends on your the brand of flour, the temperature and/or humidity of your kitchen.
  • Incorporate the pieces of unsalted butter cubes into the dough, and knead until soft, smooth, and elastic. Don't worry too much if there is some small lumps of butter not fully incorporated.
  • Place the dough in an oiled mixing bowl. Cover with saran wrap or a wet kitchen towel. Let the dough proof until the volume is almost doubled. It should take about 1 hour in a warm kitchen, and may take longer in winter time.
  • Once the dough is doubled, it is time to start preheat the oven to 260 Celsius (500 Fahrenheit). Line 2 baking sheets with parchment paper and set aside.
  • Punch the dough to release air bubbles, then knead again for 3-5 minutes.
  • Turn the dough out on a well floured work surface. Gather into a round ball, then divide into 8 portions.
  • Shape each portion into a ball, then flatten with your palm and fingers into a slightly oval shape. I usually just eyeball it so one half-sheet pan can fit 4 pieces of bread. If you need a measurement, then I would say about 5"x7" each.
  • Bake in preheated oven for 7-8 minutes. Then turn on the broiler function, and broil for 1 minute.
  • Brush freshly baked naan bread with melted salted butter, then sprinkle with some chopped fresh cilantro (or parsley). Best when served immediately.

Time 1h25m

Number Of Ingredients 13

1/4 cup warm water
2 teaspoons granulated sugar
1 1/2 teaspoons active dry yeast (or instant (rapid rise))
3/4 cup warm milk
3/4 cup plain Greek yogurt (or natural plain yogurt)
1/4 cup vegetable oil (plus 2 tablespoons extra for cooking)
2 cloves garlic (minced)
4 cups plain flour plus extra for dusting -- (19 1/2 oz. or 560g)
1 teaspoon baking powder
1 teaspoon salt
3 tablespoons butter, (melted)
2 cloves garlic, (minced)
1 teaspoon fresh chopped cilantro or parsley

Steps:

  • Combine together the water, sugar and yeast. Let sit for 5-10 minutes or until the mixture begins to bubble on top
  • Add in the milk, yogurt, oil, minced garlic, flour baking powder and salt. Mix until the dough comes together with your hands.
  • Turn dough out onto lightly floured surface. Use floured hands to knead the dough until smooth, about 3 to 5 minutes.
  • Lightly grease the same mixing bowl with a small spray of cooking oil. Transfer dough to the bowl and cover with plastic wrap. Let rest at room temperature for about an hour until doubled in size.
  • When ready to cook, divide the dough into 10 equal pieces. Roll into balls, then use a rolling pin to roll each piece of dough into a large oval, about 6-inches long and 1/8-inch thick. Repeat with remaining dough.
  • Heat a large cast iron skillet over medium-high heat. Grease skillet all over with 1/2 teaspoon of the extra oil.
  • Place one piece of the naan on the oiled hot skillet and cook until bubbles form on top, about 1-2 minutes. While cooking, brush the top with a little oil.
  • Flip and cook for another 1-2 minutes, until large golden spots appear on the bottom.
  • Remove from the skillet and wrap in a clean kitchen towel. Repeat with the remaining naan (keep them wrapped in a towel while you work).
  • Combine melted butter and minced garlic together in a bowl. Brush each naan with the garlic butter and top with the fresh herb of your choosing.

HERBED GARLIC BUTTER NAAN

Herbed Garlic Butter Naan image

A slight variation on an HBH classic, this extra soft, doughy, chewy, naan is brushed generously with caramelized garlic herb butter. So easy make, and pretty difficult to mess up, you simply can't go wrong with this naan.

Provided by Tieghan Gerard

Time 1h30m

Number Of Ingredients 12

1/4 cup warm water
1 tablespoon honey
3/4 teaspoon active dry yeast ((optional, see note))
3/4 cup warm whole milk
1 cup full fat plain greek yogurt
4 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon kosher salt
8 tablespoons (1 stick) salted butter, melted and divided in half
2-4 cloves garlic, grated
3/4 cup chopped mixed herbs (such as parsley, cilantro, chives, and/or dill)

Steps:

  • 1. In the bowl of a stand mixer, combine the water, honey, and yeast. Let sit for 5-10 minutes or until the mixture begins to bubble on top. 2. Add the milk, yogurt, flour, baking powder, baking soda, and salt. Using the dough hook, mix until the flour is completely incorporated, about 2-4 minutes. The dough should be sticky. Dust lightly with flour and knead the dough into a ball using your hands. Cover the bowl with plastic wrap and let sit in a warm place for 1 hour, until doubled in size, or if not using right away, overnight in the fridge.3. When ready to cook divide the dough into 8 equal balls. Using a rolling pin, roll each piece of dough into a large oval, about 8 inches long and about 1/4-inch thick. Repeat with the remaining dough.4. Heat a large cast iron skillet over medium-high heat, you want the pan screaming hot. Brush both sides of the naan with half of the melted butter. Drizzle the the skillet with a teaspoon of olive oil, then carefully use a paper towel to wipe the oil around the skillet. Place the naan on the hot skillet, immediately cover with a lid and cook for 1 minute, bubbles will form. Flip and cook, uncovered for another 1-2 minutes, until large toasted spots appear on the underside. Remove from the skillet and wrap in a clean kitchen towel. Repeat with the rest of the naan, keeping them wrapped in a towel while you work. 5. To make the garlic herb butter. Melt together the remaining half of the melted butter plus the garlic. Heat over low heat until the butter is lightly browned and the garlic golden. Remove from the heat and add the herbs. Brush the garlic herb butter over the warm naan and serve. These are best served warm, right off the skillet, but leftovers are still delicious. Keep stored in an airtight container for up to 3-4 days or freeze for up to 3 months.

NAAN

Naan image

If there's anything that will make you fall in love with Indian food, it's naan. This flatbread from the North of India is juxtaposition at its most beautiful: pillowy and elastic, with dark charred bubbles and a crispy bottom. It's usually made in a tandoor oven, a clay oven that can reach up to 900 degrees F! That's hard to replicate at home, but this stovetop version comes pretty darned close.

Provided by Aarti Sequeira

Time 3h30m

Yield 6 loaves

Number Of Ingredients 11

1 teaspoon active dry yeast
2 teaspoons sugar
2 cups all-purpose flour, plus more for rolling, see Cook's Note*
1 teaspoon fine sea salt
1/8 teaspoon baking powder
3 tablespoons plain yogurt
2 tablespoons extra-virgin olive oil
1 teaspoon kalonji (nigella seeds), optional, see Cook's Note**
1 teaspoon fennel seeds, optional, see Cook's Note**
Melted butter for slathering on the finished naans
Coarse sea salt for sprinkling

Steps:

  • In a large glass, dissolve the dry yeast and 1 teaspoon sugar with 3/4 cup warm water (about 100 degrees F). Let it sit on your counter until it's frothy, about 10 minutes.
  • Meanwhile, sift the flour, salt, remaining 1 teaspoon of sugar and baking powder into a large, deep bowl.
  • Once the yeast is frothy, add the yogurt and the olive oil into the glass, and stir to combine. Pour the yogurt mixture into the dry ingredients and add the kalonji and fennel seeds, if using, and gently mix the ingredients together with a fork. When the dough is about to come together, use your hands to mix. It will feel like there isn't enough flour at first, but keep going until it transforms into a soft, slightly sticky and pliable dough. As soon as it comes together, stop kneading. Cover the dough with plastic wrap or a damp tea towel and let it sit in a warm, draft-free place for 2 to 4 hours.
  • When you're ready to roll, make sure you have two bowls on your counter: one with extra flour in it, and one with water. The dough will be extremely soft and sticky-this is good! Separate the dough into 6 equal portions and lightly roll each one in the bowl of extra flour to keep them from sticking to each other.
  • Shape the naan. Using a rolling pin, roll each piece of dough into a teardrop shape, narrower at the top than at the bottom. It should be 8 to 9-inches long, 4-inches wide at its widest point and about 1/4-inch thick. Once you've formed the general shape, you can also pick it up by one end and wiggle it; the dough's own weight will stretch it out a little. Repeat this method with the rest of the dough. (If you're making the gluten-free version, you'll have better luck pressing the dough out with your fingertips, than rolling.)
  • Warm a large cast-iron skillet over high heat until it's nearly smoking. Make sure you have a lid large enough to fit the skillet and have a bowl of melted butter at the ready.
  • Dampen your hands in the bowl of water and pick up one of your naans, flip-flopping it from one hand to the other to lightly dampen it. Gently lay it in the skillet and set your timer for 1 minute. The dough should start to bubble.
  • After about 1 minute, flip the naan. It should be blistered and somewhat blackened, don't worry - that's typical of traditional naan! Cover the skillet with the lid and cook 30 seconds to 1 minute more.
  • Remove the naan from the skillet, brush with a bit of butter and sprinkle with a little coarse sea salt. Place the naan in a tea towel-lined dish. Repeat with the rest of the naans and serve.

EASY NAAN BREAD

Easy naan bread image

Rustle up soft, fluffy naan bread topped with herby garlic butter. A perfect side dish for dunking into curries, it's super easy to make

Provided by Afia Begom - Afelia's Kitchen

Time 50m

Yield Makes 8-12

Number Of Ingredients 9

570g plain flour, plus extra for dusting
1 tsp sugar
1½ tsp baking powder
½-1 tsp strongly-flavoured seeds, such as nigella or cumin seeds (optional)
2 tbsp melted butter
8 tbsp natural yogurt
oil, for the bowl
2 garlic cloves, crushed
small handful of coriander, finely chopped, plus extra to serve

Steps:

  • Put the flour in a large bowl, then add the sugar, baking powder and 1½ tsp salt. Add the seeds, if you like. Lightly whisk to disperse the ingredients evenly throughout the flour.
  • Add 1 tbsp of the melted butter, followed by the natural yogurt. Mix together with your hands. Once the yogurt and butter have been absorbed, gradually add 180-200ml water, 50ml at a time. Mix between additions, until it begins to come together into a dough. The water amount will depend on the consistency of the yogurt and butter - stop adding when you have a ball of dough.
  • Tip the dough onto a lightly floured work surface and knead thoroughly for 5 mins until smooth and elastic. Put in an oiled mixing bowl, cover with a tea towel and leave to rest for at least 1 hr. The dough will not rise but it is important to let it rest as this helps to make the naans less chewy and more fluffy.
  • If making the garlic butter, mix the garlic with the remaining 1 tbsp melted butter and the coriander. Set aside.
  • Divide the dough into eight, 10 or 12 even-sized pieces, depending on how big you want the naans. Roll into round balls, then return to the bowl, covered with a tea towel.
  • Roll one of the dough balls out on a lightly floured surface into a round, oval or teardrop shape - roll with a diagonal motion to get an oval. Flip the dough over and repeat on the other side.
  • Heat a frying pan. Dry fry the dough over a medium high heat until it begins to puff up and the underside browns in places. Flip and repeat on the other side. Remove the cooked naan from the pan. Spoon a little of the garlic butter over the naan, if using. Sprinkle over some coriander, if you like. Cover with a tea towel while you repeat the process with the remaining balls of dough.
