EASY BAKED JO JO POTATOES
I looked for a Jo Jo recipe for the Family one day and was not satisfied with what I found. They either had too much oil or too much fat from deep frying or butter. I came up with this by combining 4 recipes I found and we loved them! I will never eat deep fried soggy Jo Jo's again, there's no need! Thank you to the four chefs for their inspirations!

Steps:
- Peel potatoes and place in cold water for at least 1 hour. Slice Potatoes into spears. Place on a heavy duty cookie sheet, poor Olive Oil over potatoes and toss. In a pie pan combine remaining ingredients (except hot salt) Press each potato wedge in flour Mixture. Place back on cookie sheet (Balance on skin part if possible) Sprinkle with Hot Salt now if desired. Bake in a 400 degree oven for approx 45 minutes, or golden brown. Use spatula to remove from pan and serve with Ranch dressing and ketchup/salsa.

- Preheat oven to 350 degrees F (175 degrees C).
- Melt butter in large stock pot. Saute onion, green pepper, celery and garlic until tender, being careful not to burn the garlic. Add tomato paste and cook to brown slightly, stirring constantly. Stir in bay leaves, Creole seasoning blend and Worcestershire sauce. Pour into a large roasting pan. Squeeze tomatoes to break up into pieces, and add to mixture in pan. Stir in juice from tomatoes, chicken stock, ham, sausage, chicken, shrimp and rice. Mix well. Cover tightly with aluminum foil.
- Bake in preheated oven for 1 1/2 hours, stirring once halfway through baking time. Remove bay leaves before serving.

Steps:
- In a shallow dish mix flour, garlic powder, lemon pepper, celery salt, onion powder and seasoning salt.
- Dip potato wedges in egg, then in spice mixture.
- Heat deep fryer to 375 degrees F (190 degrees C). Place potatoes in hot oil, and fry until golden brown, about 5 to 7 minutes. Cook in batches to maintain oil temperature. Drain briefly on paper towels. Serve hot.

I call them Jo-Jo's, but they are crunchy potato wedges. make sure you follow the steps/instructions and for the crispiest texture, be sure to keep the cooking oil at the right temp, use an instant-read thermometer to monitor the temp and be patient enough to bring it back to a full 340 degrees before adding the second batch of potato wedges.

- Combine the salt,pepper,onion and garlic powders,cayenne, and oregano in a small bowl.
- Toss the potato wedges with 4 teaspoons of spice mixture and 1/4 cup oil in a large microwave-safe bowl; cover tightly with plastic wrap. microwave on high until potatoes are tender but not falling apart, 7-9 minutes, shaking the bowl (without removing the plastic) to redistribute the potatoes halfway through cooking. slowly remove the plastic wrap from the bowl (be careful of the steam) and drain the potatoes. arrange the potatoes on a rimmed baking sheet and cool until they firm up, about 10 minutes. (potatoes can stay at room temp up to 2 hrs if need be) heat the remaining 3 quarts of oil in a large dutch oven over high heat to 340 degrees.meanwhile, combine the flour,cornstarch in a medium bowl and whisk the buttermilk and baking soda in a large bowl. working in 2 batches, dredge the potato wedges in the flour mixture shaking off excess, dip in the buttermilk mixture,allowing the excess to drip.back into bowl, then coat again in the flour mixture. shake off the excess and place on a wire rack,(the potatoes can be coated up to 30 min in advance).
- when the oil is ready,add half the coated wedges and fry until deep golden brown, 4 to 6 minutes. transfer the wedges to a large bowl and toss with 1 teaspoon of the spice mixture. drain the wedges on a baking sheet lined with paper towels. return the oil to 340 degrees and repeat with the second batch of wedges. serve with extra spice mixture on the side.

THE PERFECT STEAK WITH JOJO FRIES

- Preheat the oven to 225 degrees F. Allow the chill to come off the steaks for 30 minutes prior to cooking, then pat them dry with paper towels.
- Sprinkle the steaks on both sides with salt and pepper. Place on a sheet tray, then scatter the garlic cloves and herbs evenly on top of the two steaks. Roast until the steaks are rare and the internal temperature reaches 120 degrees F, about 15 minutes.
- Meanwhile, heat a pot of several inches of canola oil to 375 degrees F over medium heat. Set up a sheet tray with a roasting rack. Whisk the garlic powder and paprika into the flour in a bowl and season with salt and pepper. Pour the flour mixture into a gallon-sized bag.
- Melt 4 tablespoons butter in a small saucepan.
- Dip each potato wedge in the melted butter, then drop into the bag of flour. Shake the potatoes in the flour mixture, evenly coating, then place on the roasting rack. Let sit until ready to fry.
- Preheat a cast-iron skillet over medium-high heat until hot, then add a film of olive oil followed by the steaks. Sear the steaks on one side until deep golden brown and crusty, 3 to 5 minutes. Flip and sear on the other side until golden brown, another 2 to 3 minutes. During the final minute of cooking, add the remaining 2 tablespoons butter to the pan along with the herbs and garlic. When the butter has melted, baste the steaks. Remove to a cutting board to rest for at least 5 minutes or up to 10 minutes.
- Meanwhile, finish making the JoJo fries: Drop the coated potatoes in the hot oil in small batches and fry until golden brown and crispy, 3 to 5 minutes, bringing the oil back to 375 degrees F in between batches. Remove to the roasting rack and season with salt.
- Slice the rib eyes and place on a plate. Serve with a pile of JoJo fries.
