HOMEMADE PROTEIN BARS - PALEO FRIENDLY



Homemade Protein Bars - Paleo Friendly image

This is our rendition of a protein bar to have for quick meal/snack options that you can make at home. We really liked this one... not too sweet. We use fruit juice sweetened dried cranberries. You can set aside some of the nut mixture if you'd like to put on top, but it makes for messy bars.

2 cups walnuts
1 cup pecans
2 cups almonds
1 cup pumpkin seeds
1 cup dried cranberries
1 cup vanilla protein powder
½ cup pitted dates
½ cup raisins
½ cup coconut flour
¼ cup maple syrup
3 tablespoons coconut oil
1 tablespoon vanilla extract
1 ½ teaspoons ground cinnamon
1 ½ teaspoons molasses

Steps:

  • Preheat oven to 220 degrees F (104 degrees C). Arrange walnuts and pecans on a baking sheet.
  • Bake in the preheated oven until nuts are roasted and fragrant, about 30 minutes. Remove nuts from oven. Increase oven temperature to 230 degrees F (110 degrees C). Grease a 9x13-inch pan.
  • Pulse roasted walnuts, roasted pecans, and almonds together in a food processor until mixture is resembles a coarse meal; transfer to a large bowl. Add pumpkin seeds, cranberries, protein powder, dates, raisins, coconut flour, maple syrup, coconut oil, vanilla extract, cinnamon, and molasses; mix well. Press mixture into the prepared pan.
  • Bake in the preheated oven until golden brown, about 40 minutes.

1 large sweet potato
3 eggs
3 //4 cup coconut milk
1/2 cup honey
1/2 cup coconut oil
1 cup tapioca starch ( I highly recommend using Let's Do Organic Tapioca Starch. The grind is much finer and produces a texture more conducive to cake)
1/3 cup coconut flour
1 teaspoon nutmeg
1 teaspoon Saigon cinnamon
1/2 teaspoon salt
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 330 degrees fahrenheit. Combine all ingredients well. Pour into a square brownie pan. Bake for 35 mins. Remove cake from oven allow cake to collapse. Place back in oven at 350 degree fahrenheit for 10-15 mins. Remove from oven and allow to sit at least 3-4 hours before cutting.
