4 eggs
1 banana, very ripe
1/4 cup coconut oil
1/2 teaspoon baking soda
1/8 teaspoon salt
1 teaspoon dried rosemary
2 teaspoons dried onion (or garlic & onion mix)
1/3 cup coconut flour

Steps:

  • Preheat oven to 350 degrees.
  • Combine all ingredients, except coconut flour, in blender. Blend to smooth.
  • Add coconut flour and blend.
  • Spread batter into a parchment paper lined pan. (8in pie pan or square pan).
  • Sprinkle more dried onions on top.
  • Bake for 30 mins until browned.
  • Cut into 4ths & slice through to make 2 sandwich slices per quarter!
  • Yum!

Just made this bread off a recipe on the net. However I added honey and salt. Was great for a different breakfast bread. Of course used the thermomix.

2 cups dessicated flour
1 cup almond flour
1 teaspoon baking powder
1 tablespoon honey
1/2 teaspoon kosher salt
6 eggs

Steps:

  • Place coconut in thermomix and set to 8 for 15 seconds.
  • Add almond flour, salt and baking powder. Set to 5 for 15 seconds.
  • Add honey and eggs. Set to 8 for 15 seconds.
  • Place in small loaf pan that has been well greased.
  • Place in 160C oven for 40 minutes (check at 35 minutes that it is not ready).
