Pandesal is a Filipino favorite. These soft and fluffy bread rolls can be eaten at any time of the day. Eat it with cheese, butter, ham or your favorite filling.

2 ¼ teaspoons active dry yeast
¼ cup warm water
1 cup lukewarm milk
2 tablespoon unsalted butter at room temperature
½ cup sugar
1 teaspoon salt
2 eggs, (beaten)
4 ½ cups all purpose flour or more as necessary
Breadcrumbs

Steps:

  • Dissolve the yeast in ¼ cup warm water in a big bowl. Let stand for 10 minutes, and then stir well.
  • In a bowl, combine milk, butter, eggs, sugar and salt.
  • Add milk mixture and 2 cups flour into the yeast mixture. Beat with a wooden spoon or electric mixer until smooth. Gradually stir in remaining flour, adding more if necessary.
  • Transfer dough to a lightly floured surface. Knead dough, adding flour as necessary, until dough is smooth, elastic and no longer sticky (around 10 minutes).
  • Place dough in a lightly greased bowl, cover with plastic wrap and let rise for 1 hour or until double in size.
  • Transfer dough to a lightly floured board. Divide dough into 24 pieces. Shape each piece into a ball, roll in breadcrumbs and place in a baking pan lined with parchment paper.
  • Cover with a cloth and let rise for at least one hour or until almost double in size.
  • Bake in 225 F oven for 20 minutes and then increase the oven temperature to 325 F while keeping the bread in the oven. Bake for another 10-15 minutes or until golden brown.

3 cups all-purpose flour (- see NOTE 1 about bread flour)
1/4 cup sugar
1 teaspoon salt
1 cup milk (- lukewarm)
1 egg
2 tablespoon butter (- melted (or margarine))
1 1/2 teaspoon instant dry yeast (- see Note 2)
1/4 cup breadcrumbs

Steps:

  • In a big bowl, mix together flour, sugar, salt.
  • Pour in milk, beaten egg and melted butter. Mix several times until well blended. Make sure that the milk is only mildly warm and not hot.
  • Add the instant dry yeast and fold until a sticky dough forms.
  • Tip the dough on a floured surface and knead until it becomes smooth and elastic, about 5-10 minutes.
  • Form the dough into a ball and lightly coat with oil. Place it in a bowl and cover with a kitchen towel or plastic wrap and place it in a warm area and let it rise until it doubled in size. Depending how warm it is, could take 30 minutes to an hour.
  • Punch down the dough and divide into 2 equal parts using a knife or dough slicer. Roll each into a log. Cut each log into 6 smaller pieces.
  • Shape each piece into a ball and roll it in breadcrumbs, completely covering all sides.
  • Arrange the pieces on a baking sheet leaving some gaps in between (at least an inch). Leave them to rise second time until double in size.
  • While waiting, preheat oven 370° F /185°C. Bake the Pandesal for 15 minutes or until the sides are a bit browned.
  • Remove from oven and serve while hot!

Pandesal or pan de sal is the famous little bread roll from the Philippines. It is airy and slightly sweet.

4 cups flour
½ cup caster sugar
5 tablespoons butter (, melted)
1 tablespoon active dry yeast
1 tablespoon baking powder
1¼ cup milk ((warm))
1 teaspoon salt
2 cups breadcrumbs
1 egg
1 tablespoon oil

Steps:

  • In a bowl, mix the yeast, half the sugar and milk and stir gently until the yeast and sugar are completely dissolved.
  • In another bowl, combine egg, oil and melted butter.
  • Add the dry ingredients in the bowl of a stand mixer starting with the flour, remaining sugar and baking powder. Mix well.
  • Add the mixture of egg, butter and oil and add the mixture of yeast, milk and sugar and mix gently, for several minutes, until obtaining a homogeneous dough. Add the salt and knead again for 5 minutes.
  • Form a ball by working the dough on a flat surface. Then place it in a large salad bowl covered with a damp cloth and let it rise for an hour in a warm place away from drafts.
  • Place the dough on a work surface and divide it into 4 equal pieces. Roll each piece until to form a cylindrical shape.
  • Cut 3 or 4 rolls diagonally into each cylinder. Roll each bread in the breadcrumbs and place on a sheet covered with parchment paper, allowing some space between them. Cover with a dry cloth and let the dough rise again for 20 minutes.
  • Preheat oven to 375 F / 190˚C for 15 minutes. Bake the breads for 15 minutes.
  • Serve hot or warm.

3 ¼ cups bread flour
¾ teaspoon bread improver
¼ cup sugar
¼ teaspoon salt
2 tablespoons margarine
2 eggs
1 cup canned evaporated milk
1 cup canned evaporated milk
½ cup dry bread crumbs

Steps:

  • Place the yeast, bread flour, bread improver, sugar, salt, margarine, eggs, and 1 cup of evaporated milk into a bread machine in the order recommended by the manufacturer. Select the Dough cycle, and press start.
  • When the cycle has ended, remove the dough from the machine, and form into 2 inch balls. Dip each ball in the remaining evaporated milk, then in the dry bread crumbs. Place the rolls on a baking sheet crumb-side up. Cover loosely with a cloth or plastic, and let rise until doubled in size, about 30 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C). Bake rolls for 8 minutes, or until golden brown on the top and bottom.

2 cups warm water (110 degrees F/45 degrees C)
2 teaspoons active dry yeast
⅓ cup white sugar
¼ cup vegetable oil
1 ½ teaspoons salt
6 cups all-purpose flour

Steps:

  • Put the warm water in a small mixing bowl and add the yeast and 1 teaspoon of the sugar; stir to dissolve. Let stand until creamy, about 10 minutes.
  • In a large mixing bowl, combine the remaining 15 teaspoons of sugar and the oil and mix until smooth. Add the salt, 1 cup of flour and the yeast mixture; stir well. Add the remaining 5 cups flour, 1/2 cup at a time, until the dough pulls away from the sides of the bowl.
  • Turn the dough onto a lightly floured surface and knead until smooth, supple and elastic; about 10 minutes. Lightly oil a large mixing bowl, place the dough in it and turn to coat the dough with oil. Cover with a damp towel or plastic wrap and let sit in a warm place until the dough has doubled in volume; about 1 hour.
  • Turn the dough onto a lightly floured surface and divide into 4 equal pieces. Form each piece into a cylinder and roll out until the 'log' is 1/2 inch in diameter. Using a sharp knife, cut each 'log' into 1/2 inch pieces. Place the pieces, flat side down, onto two lightly greased baking sheets. Gently press each roll down to flatten.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Cover the rolls with a damp cloth and let rise until doubled in volume, about 30 minutes.
  • Bake at 375 degrees F (190 degrees C) until golden brown, about 20 minutes.

I grew up eating pan de sal for breakfast or merienda (snack). My favorite was Baliwag-style, enriched with milk, butter and egg. Knead dough in bread machine, then shape and bake in regular oven. Breadcrumbs provide that distinctive crunchy crust. Masarap (delicious)! **Dough ball should be as sticky as the back of a Post-it Note. Otherwise, add up to 2 TBL of flour or water, as needed.**

1 cup skim milk (110-115 deg. F)
5 tablespoons unsalted butter (do not use "spreads")
1 egg, lightly beaten
1 teaspoon salt
1/2 cup sugar

1/2 cup breadcrumbs

Steps:

  • Microwave milk on High for 30 seconds; Warm uncracked egg to room temperature by placing in hot water for 60 seconds, then beat lightly; Melt or soften butter to room temperature.
  • Select "Dough" cycle; Add all ingredients, EXCEPT for breadcrumbs, in the order your machine requires.
  • First Rise: When the machine is done kneading, the dough will be sticky (gooey dough means moist pan de sal); Place dough in a bowl greased with Pam spray and spray top of dough with more Pam; Cover and let rise in a warm place for 45 minutes, or until doubled in volume (To test: gently poke dough with two fingers; if it leaves an impression without springing back, it is doubled).

½ cup whole milk, room temperature
1 cup warm water
1 large egg, room temperature
1 ½ tablespoons ube flavoring
4 cups bread flour
1 tablespoon instant yeast
½ cup sugar
½ teaspoon kosher salt
3 tablespoons unsalted butter, softened
nonstick cooking spray, for greasing
14 oz easy melt processed cheese, cut into ½-inch (1.24 cm) pieces, room temperature
1 cup fine plain bread crumbs

Steps:

  • In a 4-cup spouted measuring cup or medium bowl, whisk together the milk, warm water, and egg. Whisk in the ube flavoring.
  • In a large bowl, combine the flour, yeast, sugar, and salt and mix well.
  • Make a well in the center of the dry ingredients, then pour the wet ingredients into the well. Slowly mix together using a whisk or your hands until all of the moisture is absorbed by the dry ingredients and a dough begins to form, about 3 minutes. Add the butter to the dough and knead until incorporated, about 5 minutes.
  • Spray a clean surface with nonstick spray. Transfer the dough to the surface. The dough will be sticky, but resist adding more flour as it will make the finished product tough and dry. Knead the dough by picking up from the center with both hands on either side of the dough and slapping the bottom end onto the countertop, then folding the top end forward. Rotate your hands 90 degrees and pick up the dough from the center again and repeat the slap and fold motion. Repeat until the dough is more elastic and has a significantly smoother texture, 8-10 minutes.
  • Transfer the dough to a clean large bowl greased with nonstick spray and spray the top of the dough with more nonstick spray. Cover and let rise in a warm place for 30-60 minutes, or until doubled in size.
  • Once the dough has risen, grease your hands with nonstick spray and portion the dough into 24-25 pieces, about 50 grams each, then roll into balls. Cover the portioned dough with a kitchen towel to prevent a crust from forming while you shape each pandesal.
  • Flatten a piece of dough evenly in your palm to create a disc about 3 inches in diameter. Place a cube of the easy-melt cheese in the center, gather the edges of the dough around the cheese and pinch to seal, then roll into a smooth ball. Immediately roll the finished pandesal in the bread crumbs to coat completely. Repeat with the remaining dough.
  • Place 8-12 pandesal on each of 2-3 baking sheets lined with parchment paper and lightly cover with plastic wrap. Let proof at room temperature until doubled in size, 60-90 minutes.
  • Preheat the oven to 350˚F (180˚C).
  • Remove the plastic wrap from the baking sheets. Bake the pandesal, working in batches if needed, for 18-20 minutes, until puffed and lightly golden on the bottoms. Let cool for 10 minutes before serving.

  • Cool to lukewarm.
