CRISPY PAN FRIED OYSTERS WITH LEMON CAPER AIOLI
This will serve 4 as a main course or more if served as an appetizer. I like to serve mine with some greens for freshness and some pickled red onions for extra acid and crunch. Alternatively, pop these crispy oysters into a soft squishy bun, add the aioli and garnish with shredded lettuce or cabbage as a po'boy sandwich.

Steps:
- Mix together all aioli ingredients before preparing oysters so the flavours can meld. This can be made ahead up to 2 days.
- Pour oysters into a colander to drain while you set up 3 shallow bowls in a row. In first bowl, mix together flour, salt, pepper and optional add in ingredients if using. In second bowl, add eggs and beat until frothy.In third bowl, pour crushed saltines. (You can crush with your hands or the bottom of a heavy glass)
- Dredge oysters in flour, coat well in egg wash and then press gently in saltines to coat well and place on a plate, repeating until all oysters are coated.
- Preheat a large pan (or two if needed) filled with a few millimeters of vegetable oil on medium heat until shimmery and then place oysters in the pan in one layer. They can be quite close together.
- Fry until golden on one side (4-5 minutes) and then flip and repeat on second side. Adjust heat as need so that they will cook through without browning too fast.
- Garnish with mixed greens and pickled onions if desired and serve with the aioli.*Store leftovers in the fridge up to 2 days. Reheat any leftovers in a dry frying pan to re-crisp them.
PAN FRIED OYSTERS WITH LEMON TRUFFLE AIOLI
Yield Makes One Serving, no matter how many oysters you use;)

- 1 Make the aioli. 2 Chop the panko breadcrumbs in a food processor to break them into fine granules. 3 Mix the flour with the salt & pepper. 4 Set up a three-stage breading station - flour, egg, panko bread crumbs. 5 Heat 1/3″ of high heat oil (grapeseed, vegetable oil, etc) in a deep frying pan until it shimmers. 6 Toss the oysters in the seasoned flour, then dip them in the egg, then toss them in the breadcrumbs. 7 Test the oil with a few breadcrumbs. When it's hot enough to fry (the oil bubbles around the test crumbs), gently lay in the oysters. Take care not to crowd the pan. 8 As each side of the oysters crisps and turns golden brown, turn them to cook the other sides. 9 When the oysters are done, move them to paper towels to drain off the excess oil. 10 Serve with the white truffle lemon aioli either spread on the plate or in a separate dish for dipping. GRILLED OYSTERS WITH LEMON DILL BUTTER
Steps:
- Heat a charcoal or gas grill. If using charcoal, make sure you have a full layer of hot coals on the grate.
- In the bowl of an electric mixer fitted with the paddle attachment, combine the butter, garlic, dill, lemon zest, lemon juice, 3/4 teaspoon kosher salt and 1/4 teaspoon pepper.
- Place the oysters (oyster-side up!) on a platter. With two small spoons, place a small dollop (about 1 teaspoon) of the herbed butter on each oyster. Place lightly crinkled sheets of aluminum foil loosely on the grill grates. Place the oysters on the foil, making sure they're level so the butter doesn't spill out. (The foil keeps the oyster shells from tipping over.) Cover the grill with the lid, making sure the vents are open, and cook for 2 to 3 minutes, until the butter comes to a simmer and the oysters are just heated through. Sprinkle with sea salt and serve hot.
FRIED CALAMARI WITH FRIED LEMONS AND LEMON AIOLI

Steps:
- For calamari: Soak the calamari pieces in the buttermilk in a bowl for at least 1 hour and up to 4 hours in the refrigerator.
- For the lemon aioli: Add the mayonnaise, Dijon mustard, lemon zest and juice, salt and pepper to a medium bowl. Stir to combine and adjust the seasoning as needed. Set aside until ready to serve.
- Preheat a deep-fryer or several inches of oil in a Dutch oven to 375 degrees F.
- For the flour seasoning: Add the flour, paprika, salt and pepper to a large bowl. Drain the calamari and put into the flour mixture, making sure each piece gets coated with the flour. Dump all the contents into a colander and shake off any excess flour. Line a dish with paper towels and set aside.
- In batches, add the lemon slices and calamari to the preheated oil and fry, mixing with a slotted spoon to prevent the calamari from clumping together, until golden brown, 2 to 3 minutes.
- Right before you take the calamari and lemon out of the fryer, toss in the parsley leaves carefully; this will cook very fast and can splatter, so stand back. Take all the contents out of the fryer to the lined dish and season with salt.
- Serve with the aioli, garnished with the zest and chopped parsley.
OYSTERS WITH TRUFFLE FROTH
Steps:
- Preheat oven to 300 degrees F.
- Shuck the oysters. Discard the top shell. Strain oysters and oyster liquor (see Cook's Note*) through fine sieve into a ceramic or glass bowl. Cover in plastic wrap and place in the refrigerator. Scrub the bottoms shells of the oysters under running water and arrange them on a baking sheet. Bake for 10 minutes. Remove and set aside to cool.
- Turn oven to broil.
- Drain 2/3 of the liquid from the oysters for the sauce and set aside. Make a 1-inch bed of salt in a large pan. Evenly space the cleaned oyster shells on the salt bed with the outside edge of the shell facing down. Place 1 oyster on each shell. Place 1 drop of truffle oil on each oyster (truffle oil is potent so use sparingly). Drizzle 1 teaspoon of the froth over each oyster. Place the pan under the broiler until the froth turns golden brown, about 1 minute. Serve immediately.
- In a small bowl lightly froth the egg yolks with the hand held blender.
- In a heavy bottomed saucepan bring the oyster liquor and cream just to the boil. Reduce the heat to low. Pour 1/3 of the mixture into the 2 egg yolks and froth with the hand held blender. Slowly add the frothed egg mixture to the saucepan. Immediately begin frothing the mixture in the saucepan over low heat. Pour froth over truffle laced oysters on the half shell.
FRIED OYSTER SANDWICHES WITH LEMON AIOLI

- Begin by heating the oil in a Dutch oven to 365 degrees.
- While the oil heats, make the Lemon Aioli: Simply mix all the ingredients together in a bowl and chill until serving.
- Next, prepare a dredging station: In the first bowl, mix together the egg, milk, and tabasco. In the second bowl, mix together the flour, cornmeal, salt, and pepper.
- Dip the drained and dried oysters in the milk mixture, and then in the flour mixture. Place the coated oysters on a plate.
- When the oil has reached 365 degrees, fry six oysters at a time, for about two minutes. Turn the oysters so that they get golden brown all over. Drain the cooked oysters on a wire rack over a pan. Let the oil come up to 365 degrees again, and then fry the next six oysters. Repeat until all the oysters are done.
- Spread some Lemon Aioli on each roll, and add six oysters and some lettuce and tomato.

I love oysters, raw, cooked, smoked or any way I can get them. Pan fried is easy, fast and really good. I can eat this by myself easily. Maybe I should double or triple this??

- Heat oil and butter until sizzling hot.
- Add oysters.
