5 medium white button mushrooms
1/2 (10-ounce) box frozen chopped spinach, defrosted
3 sprigs fresh rosemary
10 ounces large pimiento-stuffed green olives
Zest of 1 orange
Zest of 1 small lemon
1 (3-pound) veal roast, netted and tied
Fine sea salt
Freshly ground black pepper
2 tablespoons olive oil
2 tablespoons honey
6 tablespoons apricot preserves
2 teaspoons imitation mustard

Steps:

  • Preheat oven to 375°F.
  • Place the mushrooms, the 1/2-box defrosted spinach, leaves from the rosemary sprigs, olives, orange zest, and lemon zest into the bowl of a food processor fitted with a metal blade. Pulse to combine to a paste.
  • Untie the roast. Season both sides with salt and pepper. Spread the stuffing paste evenly over the surface of the veal, generously covering it.
  • Reroll the roast and tie it just tightly enough to secure; don't tie too tightly or the filling will all ooze out. The filling will be visible.
  • Heat the olive oil in a large skillet. Add the veal roast and sear on all sides until the meat is a deep golden-brown. Place the seared roast into a roasting pan.
  • In a small bowl, mix the honey, apricot preserves, and mustard. Rub all the meat surfaces with a thick coating of the apricot-honey mixture, reserving some mixture. Bake for 1 hour, covered. Remove the roast from the oven and baste with remaining apricot-honey mixture. Return to the oven, uncovered, for 15 more minutes. Allow the roast to stand for 10 minutes before slicing. The roast should be juicy and slightly pink in the center.

1 tablespoon anchovy paste
1 stick (1/2 cup) unsalted butter, softened
6 veal cutlets (scallopini; preferably cut from round; no more than 1/4 inch thick; 1 1/2 pounds total)
3 ounces Gruyère, coarsely grated (1 1/2 cups)
2 ounces baby spinach leaves (1 1/4 cups)
1/3 cup dry white wine
3 tablespoons finely chopped fresh flat-leaf parsley

Steps:

  • Mash anchovy paste into 4 tablespoons butter in a bowl until combined. Gently pound cutlets to slightly less than 1/8 inch thick between 2 sheets of plastic wrap with flat side of a meat pounder or with a rolling pin. Pat cutlets dry and season lightly with salt and pepper, then spread 1 1/2 teaspoons anchovy butter over top of each cutlet. (You will have a little butter left over.) Sprinkle 1/4 cup cheese over anchovy butter, leaving a 1/4-inch border, then arrange spinach leaves, overlapping in 1 layer, to cover cutlets. Working with 1 cutlet at a time, arrange with a short side nearest you and roll up tightly, then secure with a wooden pick.
  • Put oven rack in middle position and preheat oven to 425°F.
  • Pat rolls dry. Heat 2 tablespoons butter in a 12-inch ovenproof heavy skillet over moderately high heat until foam subsides, then sauté veal, turning occasionally, until golden on all sides, about 4 minutes total. Transfer skillet to oven and bake veal until just cooked through, about 5 minutes. Transfer veal with tongs to a platter (reserve skillet) and keep warm, covered.
  • Pour off all but 1 tablespoon fat from skillet, then add wine and deglaze skillet by boiling (on stovetop) over high heat, scraping up brown bits, until reduced by half, about 2 minutes. Remove from heat, then add any juices accumulated on platter and swirl in remaining 2 tablespoons butter (not remaining anchovy butter). Cook over low heat until incorporated. Stir in parsley and salt and pepper to taste.

1/2 cup dried porcini mushrooms, coarsely chopped
2 stalks celery, 1/4-inch dice
1 carrot, 1/4-inch dice
1/2 onion, 1/4-inch dice
1 cup prosciutto, 1/4-inch dice
2 tablespoons sage, coarsely chopped
1/4 head cabbage, julienned
1/4 cup white wine
1/4 cup raisins
Pinch cinnamon
1 veal loin
Caul fat

Steps:

  • Soak the mushroom in warm water for about 1 hour. Saute celery, carrot, onions, prosciutto and sage in butter over medium heat for about 4 minutes. Add cabbage and mushrooms and cook for 5 more minutes or until all the vegetables are tender. Add wine and let evaporate. Add raisins and a pinch of cinnamon. The stuffing should well cooked and with no liquid left. Clean the loin from the fat. Cut the loin in a half. With a butcher's knife make an incision lengthwise in the loin, that goes from one side to the other. Do the same with the other half. Stuff the loin with the cold stuffing, making sure to fill the loin evenly from one end to the other. Season the two pieces of loin with salt and pepper if you like. Wrap them in caul fat and butcher's twine. Saute the loin in butter or oil until golden brown and finish in a preheated 375 degree oven for about 20 minutes. The temperature of the meat should be 120 degrees. The stuffing should be slightly warm. Let the veal rest for 10 minutes in a warm place before serving. We serve the loin sliced with spinach, simply sauteed in butter and pine nuts.

1 rack of veal or 1 other veal roast (6-bone)
1 cup cooked spinach, chopped
3 large egg yolks
1/2 cup ricotta cheese
1/2 cup breadcrumbs
1/4 lb italian genoa salami, chopped
4 cloves garlic, chopped
1 teaspoon kosher salt
1 teaspoon ground black pepper
1/4 cup olive oil
1 tablespoon kosher salt
1 tablespoon ground black pepper

Steps:

  • Preheat your oven to 425F.
  • In a bowl combine the spinach with the egg yolks, ricotta, bread crumbs, salami, garlic and 1 tsp each salt and black pepper.
  • Mix well until as smooth as possible.
  • Set aside.
  • Make a pocket in the rack for the stuffing.
  • To do this use a very sharp knife to make an incision in the center of the eye of the rack.
  • Push the knife tip in and insert the knife the entire length of the rack but do not let it come out the other side.
  • Remove the knife and insert the handle of a wooden spoon.
  • Work the spoon handle back and forth to create a pocket that runs from one end of the rack to the other.
  • Place the stuffing into a pastry bag fitted with a plain tip.
  • Insert the pastry bag in the pocket of veal and gently squeeze the bag.
  • This would probably work just as well using a ziploc bag with one of the tips snipped off.
  • Use the wooden spoon you used to make your pocket to push the stuffing down as far as it will go.
  • Work the stuffing down into the meat until it reaches the unopened end of the rack.
  • Continue to alternate between the bag and the plunging wooden spoon and fill the veal completely.
  • When the rack is ready to cook rub it with the olive oil and season with 1 Tbs each salt and black pepper.
  • Place the rack into a roasting pan and cook for 30 minutes.
  • Reduce heat to 350F and cook and additional 1 hour and 20 minutes.
  • A meat thermometer should read 150 degrees F.
  • before you remove it from the oven.
  • Let rest for 20 minutes before carving.

1 five-pound breast of veal with pocket for stuffing
Salt, if desired
Freshly ground pepper
1/2 teaspoon dried thyme
1 1/2 bay leaves
1 teaspoon chopped garlic
2 tablespoons olive oil
2/3 cup finely chopped onion
1/2 pound ground veal
1/2 pound ground pork
1 cup finely chopped or diced mushrooms
4 cups loosely packed, coarsely chopped, cleaned spinach
1/2 cup fine, fresh bread crumbs
1/2 cup ricotta cheese
1 egg, lightly beaten
1/8 teaspoon freshly grated nutmeg
1/8 teaspoon dried red-pepper flakes
1 tablespoon corn oil
3/4 cup thinly sliced carrots
1/2 cup coarsely chopped celery
1 cup coarsely chopped onion
3 sprigs parsley
2 sprigs fresh thyme or 1/2 teaspoon dried
1 cup canned imported tomatoes
1 cup dry white wine
1 clove garlic, unpeeled
1 cup chicken broth or water

Steps:

  • Sprinkle the veal breast inside and out with salt and pepper to taste
  • Chop together on a flat, heavy surface the half teaspoon dried thyme, half a bay leaf and one teaspoon chopped garlic. Set aside.
  • Heat one tablespoon of the olive oil in a skillet and add the finely chopped onion. Cook, stirring, until wilted and add the ground veal and pork. Cook, stirring and chopping down with the side of a heavy metal kitchen spoon to break up lumps in the meats. Add the garlic mixture and mushrooms and cook, stirring, about five minutes.
  • Add the spinach and cook until wilted. Add the bread crumbs, ricotta cheese and egg. Add the nutmeg, salt and pepper to taste and pepper flakes. Stir to blend well. Let cool.
  • Meanwhile, preheat the oven to 375 degrees.
  • Open up the pocket of the breast. Fill the pocket with the mixture. Sew up the pocket all around with string to enclose the filling. Rub the bottom of a baking dish with the tablespoon of corn oil.
  • Put the breast in the baking dish and rub it all over with the remaining one tablespoon of olive oil. Place the breast, bone side down, in the baking dish and place in the oven. Bake 30 minutes.
  • Add the sliced carrots, celery and coarsely chopped onion. Continue baking 30 minutes.
  • Meanwhile, tie the three sprigs of parsley, two sprigs of thyme and remaining bay leaf into a bundle. Add this to the veal.
  • Add the tomatoes, wine and garlic clove. Cover the meat loosely with foil and continue baking about 30 minutes.
  • Reduce the oven heat to 350 degrees. Remove the foil and baste well. Continue baking 30 minutes. The total baking time is two hours. Transfer the meat to a warm serving platter.
  • When ready to serve, add the broth or water to the pan. Bring to the boil on top of the stove. Stir to dissolve the brown particles that cling to the bottom and sides of the pan. Discard the bundle of herbs amd garlic clove.
  • Remove the string from the veal. Carve the veal and serve with the vegetables in sauce surrounding the roast.

STUFFED ROAST VEAL BREAST

2 1/2 cups coarse stale bread crumbs, preferably from a crusty country loaf
1 pound sweet Italian sausage meat
1/4 cup chopped parsley
1/2 cup chopped onion
1 teaspoon freshly ground black pepper
3 to 4 cloves garlic, peeled, crushed and chopped (2 teaspoons)
1 3 1/2- to 4- pound veal breast (4 to 5 ribs)
1 tablespoon olive oil
1 teaspoon salt
1 large onion, sliced
1/2 cup water
2 pounds medium-size potatoes (about 6), peeled and halved lengthwise

Steps:

  • In a bowl, mix together the stuffing ingredients.
  • Put the veal breast meat side up on a flat surface. Using a sharp, thin knife, slice along the widest side of the breast, as close to the bones as possible, to create a deep pocket. Push the stuffing into the cavity and press on it to distribute it evenly over the bones. Tie the open end shut with soft kitchen string, wrapping it twice to secure the stuffing inside.
  • Heat the olive oil in a large casserole. Sprinkle the meat all over with salt, and when the oil is hot, brown the meat for a total of 30 minutes over medium heat, turning occasionally so it is uniformly brown. Add the sliced onion and water; cover, reduce heat to very low and cook 1 hour.
  • Preheat the oven to 400 degrees. Remove the meat to a platter. In the remaining juices (about 1 1/2 cups), arrange the potatoes in one layer. Put the roast on top, meat side up, and cook, uncovered, in the oven for 30 to 40 minutes, until the meat is nicely browned on top and the potatoes are cooked through.
  • At this point, the roast is cooked enough so the ribs can be twisted and pulled away from the meat. Slice the meat, following the shape of the ribs and slicing right through the cartilage bones. Serve each person one slice with potatoes and pan juices.

This is a little more time consuming than the recipes I have been posting lately but it is well worth the effort. It would be one to make for a special occasion or a dinner party to impress.

800 g veal loin
2 medium yellow peppers, roasted
150 g boursin garlic & herb spreadable cheese, at room temperature
150 g soft fresh goat cheese, at room temperature
20 baby spinach leaves
12 basil leaves

salt

4 large sun-dried tomatoes, drained
6 slices bacon
olive oil
olive oil
2 shallots, chopped finely
1 1/2 cups water
1 1/2 teaspoons instant chicken bouillon granules
2 tablespoons lemon juice
2 tablespoons capers
2 tablespoons fresh parsley, finely chopped
1/4 cup butter, 40-50g approx
pepper
2 teaspoons cornflour

Steps:

  • Roast peppers in 200c oven, flesh side down, until skin blisters and blackens. Allow to cool peel skin off and slice into thin strips, set to one side.
  • Stir the boursin and goats cheese until well combined, set to one side.
  • Slice veal down the middle, length ways, being careful not to cut all the way through. Open out and with a meat mallet pound until is of equal thickness and a rough rectangle shape. Season with pepper, salt and garlic powder.
  • Place spinach leaves down the centre of the veal to form about a 2 inch wide strip, lay peppers on top of spinach, arrange sun-dried tomatoes on pepper.
  • Set aside about 1/4 cup of cheese mixture for the sauce. Spoon remaining cheese mixture in an even log over the tomatoes, finally arrange basil leaves on the top of the cheese.
  • Fold veal over filling,and roll up, secure by tying kitchen string at several intervals down the length, also wrap the string once lengthwise around the veal to secure ends.
  • Cover ends of veal with aluminum foil to enclose filling completely. Cover veal and reserved cheese separately and chill for at least 6 hours. This can prepared a day ahead of time.
  • Melt the butter and olive oil in a large fryimg pan over medium high heat. Remove foil from ends of veal, keep to put back on. Brown veal on all sides, turning frequently, about 10 Min's. Remove from pan, replace foil on ends and drape bacon across the veal and tuck ends under.
  • Place veal in a roasting pan and roast in pre-heated oven 180c-190c depending on oven temps for 50 Min's, Remove and transfer to a chopping board and allow to rest 10 Min's before slicing.
  • Sauce.
  • Heat a small amount of oil in a pan and add shallots, cook until shallots soften.
  • Add water and stock granules, bring to the boil, reduce to a simmer, for a few minutes.
  • Whisk in lemon juice, capers and parsley, over a low heat gradually whisk in butter and 1/4 cup reserved cheese mixture.
  • Season with pepper.
  • Mix a little water with cornflour, add to sauce, turn the heat up slightly and cook, stirring, until mixture thickens.
  • To Serve: Remove foil, bacon and string from veal, slice into even slices, arrange on a plate and drizzle sauce over. I served mine with dilled carrots. So serve with your favourite veg and mash if desired.
  • I served this for three and it was perfect but I did not serve any starchy carbs with, so it may work for 4, but I would suggest upping veal to 1kg for 4.

1 1/2 pounds spinach leaves washed thoroughly
6 tablespoons unsalted butter
2/3 cup freshly-grated Parmigiano-Reggiano
2 extra-large eggs
2 pounds boneless veal loin butterflied, and pounded thin with a mallet
1/4 pound thinly-sliced Pancetta
1/4 cup extra-virgin olive oil
1 cup dry white wine
2 cups chicken broth plus
extra if needed
1/4 teaspoon salt
1/8 teaspoon freshly-ground black pepper

Steps:

  • Cook the spinach in a covered 12-inch sauté pan over high heat for 5 minutes. Remove from the pan, rinse, chop, and squeeze dry. Melt 2 tablespoons of the butter in the same pan over medium heat and add the spinach and 1/3 cup of the Parmigiano; cook 5 minutes. Cool and drain off any liquid. In a medium bowl, beat the eggs with the remaining 1/3 cup of Parmigiano. Heat a 10-inch nonstick skillet over a medium flame, add the eggs, and cook until set on both sides, about 2 minutes per side, turning once. Remove this frittata to a plate. Place the veal on a cutting board, smooth side down. Top with the Pancetta, then with the frittata, cutting the frittata as needed to cover it, and finally with the sautéed spinach. Roll lengthwise into a bundle and tie with butcher's string. Heat the olive oil and the remaining 4 tablespoons of butter in a 12-inch sauté pan over a medium-high flame. Add the veal and sear until browned on all sides, about 10 minutes, turning to cook evenly. Add the wine and cook 5 minutes. Add the broth, salt, and pepper. Reduce the heat to medium-low, cover, and cook for 1 hour, or until the veal is firm but not dry and lets out a clear juice when pierced, adding broth as needed. Discard the string, slice thinly, and serve hot, with the pan juices. This recipe yields 6 servings. Preparation Tips: Stuff the veal up to 12 hours ahead and refrigerate.
