ROAST BEEF WITH POTATOES AND GREEN PEPPERCORNS



Roast Beef with Potatoes and Green Peppercorns image

1 large beef top round, about 8 to 10 pounds
Kosher salt
Freshly ground black pepper
1/2 cup Dijon mustard
4 ounces green peppercorns in brine
1 lemon, juiced
4 pounds small potatoes, washed and dried

Steps:

  • Preheat the oven to 500 degrees F.
  • Place the roast on a flat surface and season all sides with salt and pepper. Combine the mustard and green peppercorns and the lemon juice and rub all over the beef. Place it on a roasting rack. Place the potatoes in the bottom of the roasting pan and season them with salt and pepper. Place the rack in the pan directly over the potatoes.
  • Place the pan in the center of the oven and cook, undisturbed for 10 minutes. Lower the temperature of the oven to 350 degrees F. Count about 10 minutes for each pound then begin testing the internal temperature. The thermometer should read about 130 degrees F for medium rare. Remember that "carry over" cooking (when the roast comes out of the oven and rests) will mean the temperature will increase a few degrees after the roast is removed from the oven. If it's undercooked, you can always cook it more, but if overcooked, there is no fixing it!
  • Remove the roast beef and place it on a flat surface for carving. Transfer the potatoes to a serving platter. Serve the roast, whole on the platter to carve at the table. Alternatively, arrange slices of beef over the potatoes and coat with a layer of the pan sauce.

1 tablespoon vegetable oil
1 boneless rib-eye or New York strip (shell) steak, 1 1/2 to 2 pounds and 2 1/2 inches thick, room temperature
Coarse salt and cracked (butcher-grind) pepper
Steak Butter

Steps:

  • Preheat oven to 400. Heat oil in a large cast-iron or other ovenproof skillet (not a nonstick) over medium-high until it begins to smoke. Pat steak dry with paper towels. Season each side with 1 teaspoon coarse salt and 1 teaspoon cracked pepper.
  • Cook steak in skillet over medium-high heat until a dark crust has formed, 5 to 7 minutes per side (reduce heat if meat is browning too quickly). Holding steak with tongs, quickly brown all edges, turning as necessary; lay steak flat in skillet.
  • Transfer skillet to oven. Roast until an instant-read thermometer inserted in the thickest part of steak registers desired doneness, 5 to 15 minutes. Transfer to a plate; spread with 1 tablespoon Steak Butter. Cover loosely with aluminum foil, and let rest 5 to 10 minutes (temperature will then rise another 5 to 10 degrees). Slice across the grain; serve with remaining Steak Butter. Cover and refrigerate any leftovers, up to 2 days.

2 tablespoons vegetable oil
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons all-purpose flour
1 cup beef broth
4 shallots, thinly sliced
1 teaspoon dried basil
1 teaspoon dried thyme

Steps:

  • Coat steaks with vegetable oil, but shaking in plastic bag.
  • Season steaks with salt and pepper.
  • Place steaks in hot, large skillet (over medium high heat).
  • Sear steaks, 3 minutes per side, then reduce heat to medium.
  • Cook steaks until desired doneness, about 5 minutes for per side for medium.
  • Put steaks on serving platter and keep warm.
  • Stir flour into dripping left in pan and stir in beef broth.
  • Stirring continuously, cook until slightly thickened (approx 3 minutes).
  • Stir in remaining ingrediets, then drizzle sauce over the steaks.

1/4 cup (1/2 stick) unsalted butter, room temperature
1 teaspoon minced fresh thyme
1 teaspoon honey
1 teaspoon whole pink peppercorns
Coarse kosher salt
Steak:
1 10-ounce New York strip steak (about 1 1/4 to 1 1/2 inches thick)
2 teaspoons extra-virgin olive oil, divided
1 teaspoon minced fresh thyme
Coarse kosher salt
1/4 cup thinly sliced shallot
1 cup dry red wine
1/2 cup low-salt beef broth or low-salt chicken broth
Celery Root and Parsnip Puree

Steps:

  • For pink peppercorn butter:
  • Combine first 4 ingredients in small bowl; mix with fork until peppercorns are slightly crushed.
  • Season with coarse salt and black pepper. Place small sheet of plastic wrap on work surface; place butter mixture atop plastic. Using plastic wrap as aid, form butter mixture into 1 1⁄2-inch-diameter cylinder; wrap tightly and chill. DO AHEAD: Can be made 3 days ahead. Keep chilled. Bring to room temperature before using.
  • For steak:
  • Rub steak with 1 teaspoon oil; sprinkle both sides with thyme, then coarse salt and 1/4 teaspoon black pepper. Let steak stand at room temperature 30 minutes.
  • Heat medium nonstick skillet over medium-high heat. Add steak; cook to desired doneness, 3 to 4 minutes per side for medium-rare. Transfer steak to plate; tent with foil. Add 1 teaspoon oil to skillet; add shallot and sauté until slightly softened, scraping up browned bits. Add wine; boil until liquid is reduced by half, stirring often, about 1 minute. Add broth; boil until sauce is thickened, about 2 minutes. Whisk in 3 tablespoons pink-peppercorn butter. Season sauce with coarse salt and pepper.
  • Cut steak against grain into 1/3-inch- thick slices. Divide between plates. Top with sauce; serve with puree.

Steps:

  • Combine garlic powder, pepper and 1/4 tsp salt. Rub on both sides of steak.
  • Place a nonstick skillet coated with cooking spray over medium-high heat until hot. Add steaks; cook 2 - 3 minutes on each side, or until done.
  • While steaks are cooking, place peppers and remaining 1/4 tsp salt in container of electric blender. Cover and process until smooth.
  • Serve steaks with red pepper sauce.
