Steps:
- Roast potatoes in a preheated 375-degree oven. While roasting potatoes, sweat onion in olive oil until translucent. Add garlic and cook for 2 minutes. Deglaze pan with white wine and reduce until almost all liquid is gone. Add orange juice and reduce by 2/3. Fold in herbs and season with salt and pepper. When potatoes are done, pour hot mojo over potatoes and serve immediately.
PAPAS: POTATOES
I come from a family of eaters and have carried on the tradition even though I am a single mother. My daughter's favorite breakfast on Sunday is papas. She wakes up to the smells of love from Mom and all is right in her world.

Steps:
- I use the heaviest pan in my home. Cast iron works the best but the Dutch oven works, too.
- Preheat oven to 375 degrees F.
- Stir the bacon and sausage on medium heat until halfway cooked. Add the potatoes, onion, and garlic. Stir to combine and add the spices. Cook another 5 minutes and place pan or pot into the oven for about 15 to 20 minutes. Stir the papas once or twice to avoid any sticking and to get some yummy color. Warm up tortillas. Prepare eggs. Take papas out of oven and serve steaming hot with cheese, chile sauce, eggs, tortillas and giggles.
- In a large saute pan heat olive oil and add onions, garlic, chiles and salt. Saute until onions are translucent and chiles have begun to soften. Stir in soups and cook until it bubbles. In a blender or with an immersion blender, puree for 30 seconds.
SHAKEY'S MOJO POTATOES
I don't know if you remember Shakey's Pizza but they would serve these potatoes with their famous Chicken and it was so good!! The best pizza and chicken with potatoes EVER!! Make them and let me know what you think!!

Steps:
- Bake the potatoes in the oven at 425F for about 1 hour, let cool. (I rub olive oil on my potatoes, then wrap in foil, my preference)
- Cut each potato into 1/4" rounds.
- Heat oil to 375°F
- Stir together the flour, cayenne, thyme, garlic powder, salt and pepper to taste. (you can adjust seasonings to your liking)
- Dip each potato wedge into the milk (can add egg if you want), then dredge thoroughly in the seasoned flour mixture.
- Deep fry wedges without overcrowding, until crisp and golden.
- Drain on paper towels and serve.

YUCA CON MOJO
Yuca is among the most commonly eaten viandas - the local word for starchy fruits and vegetables, such as plantain and taro - in Puerto Rico. It is the root of the cassava, an extraordinarily resilient plant that was the principal food of the Indigenous Taínos of the island. Among its many preparations, this is my favorite: boiled yuca doused in a garlicky citrus mojo dressing, my grandmother's recipe. She never wrote it down, but my mother had it deep in her memory, and we cooked it together for this version you see here. The mojo will keep for several weeks in the fridge, and is also delicious on crispy fried tostones, roasted vegetables and fish.

- Fill a large pot with water and bring to a boil over high heat.
- Prepare the yuca: Fill a large bowl with water. Peel the yuca with a sharp peeler or paring knife, then chop it into 2-inch pieces, tossing them in the bowl of water as you go to avoid discoloration.
- Make the mojo: Bring olive oil to a simmer in a deep skillet over medium heat. Add onion, garlic, peppercorns, bay leaves and 1/2 teaspoon salt, stirring well to incorporate. Cook until the onions are translucent and soft, stirring often and being careful not to let the onions brown, about 5 to 7 minutes. Remove from heat and add vinegar, and add salt to taste.
- Once water is at a rolling boil, add 1/4 cup salt, then carefully add yuca. Boil for 20 to 30 minutes, until a sharp knife goes through easily, careful not to let yuca overcook and become mushy.
- Drain yuca and transfer to a serving dish. Pour over warm mojo and serve.
MOJO PICON (GARLIC SAUCE)
This dish comes from the Canary Islands. It is a staple there, and goes with just about everything! Try it with "papas arrugadas" (small boiled potatoes with salt and lemon) for a Canary Island specialty! Delicious! It keeps well in the refrigerator, and is even better after a day or two. Serve at room temperature.

Steps:
- Using a mortar and pestle, mash cumin, garlic, and chilis with salt.
- The mixture should be mashed well.
- Add paprika, vinegar and oil, and continue to blend.
- Add bread crumbs and mash.
- Gradually add water until desired consistency is reached.
- Serve with Spanish cheese (Majorero is nice), or over boiled potatoes, with crusty french bread, on fried fish, Anything goes!
