1/2 firm-ripe papaya
1/4 red onion
1 fresh jalapeño chile
1 tablespoon finely chopped fresh cilantro
2 teaspoons fresh lime juice
1 teaspoon pure maple syrup

Steps:

  • Discard papaya seeds. Peel papaya and chop enough to measure 1/2 cup. Mince enough onion to measure 2 tablespoons and, wearing rubber gloves, mince enough jalapeño (with seeds) to measure 1/2 tablespoon. In a bowl stir together papaya, onion, jalapeño, and remaining ingredients and season with salt. Salsa may be made 1 day ahead and chilled, covered.

The best substitute for papaya here, believe it or not, is watermelon. Cantaloupe isn't bad either. Serve this with any grilled meat, poultry, or fish.

Yield makes about 2 cups

2 cups papaya in 1/2-inch chunks
1/2 cup minced red onion
1/2 cup minced red, yellow, or green bell pepper or a combination
1 tablespoon extra virgin olive oil
2 tablespoons fresh lime juice
Salt and black pepper to taste
1 jalapeño or other fresh chile, stemmed, seeded, and minced, or hot red pepper flakes to taste
1/4 cup or more chopped fresh cilantro leaves

Steps:

  • Combine all the ingredients. Let sit for about 5 minutes, then taste and adjust the seasoning.
  • Serve immediately or refrigerate for up to a couple of hours. (Bring back to room temperature before serving.)

1 15-ounce can no-salt-added black beans
2 large ripe papayas
1 small red onion to yield
1/4 cup chopped 8 ounces whole yellow or red pepper or 7 ounces chopped ready-cut pepper (1 1/2 cups)
1 jalapeño
1 small or medium clove garlic
3 tablespoons white vinegar
1 teaspoon sugar
Juice of 1/2 lime
1/8 teaspoon salt
Freshly ground black pepper to taste
Few sprigs cilantro to yield 2 tablespoons chopped 2 slices crusty country bread

Steps:

  • Rinse the beans thoroughly, and allow to drain.
  • Peel and coarsely chop the papayas, and place in a large bowl.
  • Finely chop the onion. Wash, trim, seed and finely chop the pepper; wash, halve, seed and finely chop the jalapeño; mince the garlic, and add the ingredients to the bowl with the beans, vinegar, sugar, lime juice, salt and pepper, and mix well.
  • Wash, dry and chop the cilantro, and mix in with the salsa. Serve with the tuna and bread or tortilla.

This is based on a recipe in Kim Sunée's wonderful new book, "A Mouthful of Stars" (Andrews McMeel). Her recipe is more of a salad, a fusion of Thai and Mexican flavors. I loved the idea of combining avocado and papaya, two subtle, creamy fruits, with crunchy, bright-tasting Asian pears and spicy chiles. The first time I saw the recipe I wanted to test it right away, but I didn't have Asian pears. So I used an apple, and loved it. It's the sweet, crunchy fruit that does the trick, and apples and Asian pears both work. There are onions in the original recipe but I've made them optional.

1 papaya , peeled and chopped into 1cm cubes
1 small red onion , chopped
½ green pepper , deseeded and chopped
½ red pepper , deseeded and chopped
1 red chilli (deseeded if you don't like it too hot), finely chopped
2 tbsp roughly chopped coriander
juice 1 lime , plus 1 lime cut into wedges to serve
4 nests medium egg noodles
4 boneless, skinless salmon fillets
1 tbsp vegetable oil
2 tbsp teriyaki sauce
4 large handfuls mixed salad leaves

Steps:

  • To make the salsa, combine the papaya, onion, green and red peppers, chilli, coriander and lime juice in a bowl. Season and set aside.
  • Prepare the noodles following pack instructions. Meanwhile, brush both sides of the salmon fillets with oil, then season. Heat a griddle or frying pan to medium-hot and cook the salmon for 3-4 mins on each side, then remove from the pan. (Alternatively, cook the fillets on a barbecue, and pop the lime wedges next to them, flesh-side down, for 2-3 mins.) Drain the noodles and toss with the teriyaki sauce.
  • Pile the salad leaves and noodles onto plates. Top with the salmon, spoon over the salsa and serve with a lime wedge.
