GOLDEN PAPAYA AND CRAB SALAD



Golden Papaya and Crab Salad image

This delicious and healthy salad is courtesy of "Martha Stewart's Healthy Quick Cook."

1/2 pound sugar snap peas, strings removed and cut into thirds
Coarse salt and freshly ground black pepper
1 pound lump crabmeat, picked over
1/2 small red onion, chopped
1/2 cup Lime Caper Vinaigrette
2 medium papayas, halved, seeds removed, and peeled
Lime wedges

Steps:

  • Bring a large saucepan filled with water to a boil over high heat. Generously salt water and return to a boil. Prepare an ice-water bath. Add snap peas to boiling water and cook until just tender, 45 to 60 seconds. Drain and immediately transfer to ice-water bath until cool. Drain again and pat dry; set aside.
  • Place crabmeat in a medium bowl and, using a fork, break it into bite-size pieces. Add peas and onion and stir to combine. Stir in vinaigrette; season with salt and pepper and toss to coat. Slice a small piece off each papaya half along the rounded edge and place on a plate. Spoon 1/4 of the crab mixture into each papaya half, garnish with lime wedges, and serve.

3 tablespoons champagne vinegar
3 tablespoons honey
2 tablespoons chopped sweet onion
1 teaspoon Dijon mustard
1/2 teaspoon sea salt
1/2 cup canola oil
1 tablespoon poppy seeds
2 cans (6-1/2 ounces each) jumbo lump crabmeat, drained {Maria: the flavor of jumbo lump crabmeat is much better than plain old lump crabmeat plus it's more tender, so please be sure to get jumbo. thx!}
6 cups watercress
2-1/2 cups fresh grapefruit segments
12 cherry tomatoes, halved
1 medium ripe avocado, peeled, pitted and sliced
1-1/2 teaspoons white grapefruit juice

Steps:

  • Process first five ingredients in a blender or food processor until smooth. While processing, gradually add oil in a steady stream until dressing thickens. Pour into a serving bowl; stir in poppy seeds., Transfer 1/4 cup salad dressing to a small bowl. Toss with crab. Add remaining ingredients to serving bowl; gently toss until combined. Top with crab mixture.

CRAB, CHILLI & PINK GRAPEFRUIT SALAD

This fragrant, zingy little crab salad is super fresh and has a great chilli kick to it

2 pink grapefruits
200 g white crabmeat, from sustainable sources, ask your fishmonger
2 fresh red chillies, deseeded and finely chopped
1 bunch fresh basil, leaves picked and chopped, baby leaves reserved
extra virgin olive oil
sea salt
freshly ground black pepper
4 handfuls mixed fresh leaves, washed and spun dry

Steps:

  • Top and tail the grapefruits. Stand them on one of the flat ends and carefully trim off the skin with a knife, turning the fruit as you go. To segment them, follow the white lines with your knife and gently twist the knife out to remove each segment. Place the segments in a bowl and squeeze all the juice from the centre parts on top.
  • Pick through the crabmeat and remove any bits of shell. Place it in a separate bowl with the chilli. Tear over most of the basil leaves then spoon over 2 tablespoons of the grapefruit juice and add 4 teaspoons of extra virgin olive oil. Season with a little bit of salt and a pinch of pepper then gently mix together.
  • Add the salad leaves to the bowl with the grapefruit segments, add a lug of extra virgin olive oil and a pinch of salt and pepper, then toss to coat each leaf. Arrange the salad over four plates, top with the grapefruit segments from the bottom of the bowl, followed by equal amounts of the dressed crab, then scatter over the reserved basil leaves. Serve with a glass of crisp white wine.

1 large papaya
3/4 lb crab, drained
1/2 cup chopped celery
1/4 cup minced red onion
2 tablespoons white wine vinegar
1 tablespoon olive oil
1 1/2 teaspoons chopped fresh sage
1/4 teaspoon cayenne
boston lettuce leaf

Steps:

  • Peel and section grapefruit, reserving juice.
  • Peel, halve and slice papaya.
  • In another bowl, combine crab, celery and red onion.
  • In a small bowl, whisk together 2 tablespoons reserved grapefruit juice, vinegar, olive oil, sage and cayenne.
  • Pour over crab and toss lightly to combine.
  • Line plates with lettuce leaves. Arrange papaya slices and grapefruit on plates. Serve crab mounded in the center.

This tasty recipe for avocado, papaya, and pink grapefruit salad with maple dressing comes from "In Great Taste," by Evelyn Lauder.

2 pink grapefruits
1 medium papaya
2 firm, ripe avocados, cut in half, pitted, and peeled
Juice of 1 lemon
2 tablespoons pure maple syrup
Juice of 3 limes
Freshly ground pink peppercorns, (optional)

Steps:

  • Remove peel and pith from the grapefruit using a sharp paring knife. Carefully cut between membranes to remove segments, and place in a medium bowl. Peel the papaya, cut in half, and remove seeds. Slice into pieces about 2 1/2 inches by 1/2 inch thick. Add to the bowl, and toss to combine.
  • Slice the avocados lengthwise into 1/2-inch slices and pour the lemon juice over them. Add to the fruit mixture.
  • In a small saucepan, warm the maple syrup and lime juice, whisking to combine; set aside to cool.
  • Toss the fruits together, and drizzle with the dressing. Serve seasoned with pink pepper, if desired.

2 teaspoons Dijon mustard

1 Belgian endive, cut in 1/2 inch strips

  • With a small paring knife, peel and section the grapefruits, saving any juice.
