2 tablespoons butter
2 tablespoons olive oil
1 large onion, diced
1 1/2 tablespoons Hungarian paprika
6 large potatoes, diced 3/4 inch (waxy type)
1 small green pepper, diced
1 large tomatoes, peeled and diced
salt and pepper, to taste
water

Steps:

  • In a large saucepan, melt butter and olive oil.
  • Sauté the onions for 5 minutes.
  • Put all of the rest of the ingredients into the pot, just barely covering the potatoes with water.
  • Bring to a boil, then reduce to a simmer.
  • Avoid stirring as much as you can to keep the potatoes from breaking apart.
  • Cook for 30 minutes or until tender.

3 cloves garlic, minced
2 tablespoons bacon drippings or 2 tablespoons oil
3 tablespoons hot Hungarian paprika
2 teaspoons ground cayenne pepper
1 small bell pepper, stems and seeds removed,diced
1/2 teaspoon caraway seed
2 large potatoes, peeled and sliced
1 cup white wine
fresh ground black pepper
1 cup sour cream

Steps:

  • In a large, shallow pan, saute the onion and garlic in the bacon drippings until soft.
  • Add the paprika, cayenne, bell pepper, and caraway seeds and saute for another 1-2 minutes.
  • Add the potatoes, wine, and black pepper.
  • Simmer, covered, for 20 minutes or until the potatoes are done.
  • Add water as necessary but maintain a thick consistency.
  • Stir in the sour cream and simmer until heated through.

3 slices bacon
1 (3 pound) whole chicken, cut into pieces
1 teaspoon salt
1 teaspoon ground black pepper
2 onions, diced
1 tablespoon paprika
1 teaspoon caraway seeds
4 potatoes, cut into large chunks
½ cup sour cream
¼ cup chopped fresh parsley
1 tablespoon garlic powder

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and crumble. Reserve 1 tablespoon bacon grease in the skillet.
  • Season chicken pieces with salt and pepper. Place chicken in the skillet with bacon grease and cook over high heat until chicken is golden brown on all sides, about 10 minutes. Transfer chicken to a plate.
  • Cook and stir onions in the same skillet until softened, 5 to 10 minutes. Reduce heat to low and stir paprika and caraway seeds into onions; add chicken. Cover skillet and cook for 30 minutes. Add potatoes to chicken mixture, cover skillet, and cook until potatoes are tender and chicken is no longer pink in the center, about 30 more minutes. Transfer chicken and potatoes to a serving dish.
  • Stir sour cream, parsley, and garlic powder into the same skillet until sauce is smooth and creamy, 3 to 5 minutes. Pour sauce over chicken and potatoes and sprinkle with bacon.

1/4 cup butter, cubed
1 large onion, chopped
1 broiler/fryer chicken (4 to 5 pounds), cut up
2 tablespoons paprika
1 teaspoon salt
1/2 teaspoon pepper
1-1/2 cups water
2 tablespoons cornstarch
2 tablespoons cold water
1 cup sour cream

Steps:

  • Preheat oven to 350°. In a large skillet, heat butter over medium-high heat. Add onion; cook and stir until tender. Sprinkle chicken with paprika, salt and pepper; place in an ungreased roasting pan. Spoon onion mixture over chicken. Add water. Bake, covered, 1-1/2 hours or until chicken juices run clear., Remove chicken and keep warm. Pour drippings and loosened browned bits from roasting pan into a saucepan. Skim fat. In a small bowl, mix cornstarch and cold water until smooth. Stir into pan juices with onion. Bring to a boil; cook and stir until thickened, 1-2 minutes. Remove from heat. Stir in sour cream. Serve with chicken.
