CARAMELISED ONION PUFF PASTRY TART
Top puff pastry with tangy mustard, onions and Parmesan cheese for a light vegetarian lunch or party buffet nibble

Steps:
- Finely slice the onions, then put them in a large, lidded pan with the oil and cook over a low heat for 30 mins, stirring from time to time.
- Remove the lid and turn up the heat, cooking the onions until they brown and caramelise, stirring often.
- Heat oven to 180C/160C fan/gas 4. Unroll the pastry and place on a greased baking sheet. Using a sharp knife, cut a 2cm border around the edge of the pastry, going almost but not quite through the pastry. Glaze the edge of the pastry with beaten egg.
- Spread the mustard over the base of the tart and pile on the onions, spreading them out to meet the edge. Mix the breadcrumbs, Parmesan and thyme leaves together, and sprinkle this topping evenly over the onions. Bake the tart for 18-20 mins or until the pastry is golden brown.

- Put oven rack in upper third of oven and preheat oven to 400°F.
- Stir together cheese, mayonnaise, onion, and cayenne.
- Cut out 4 rounds from each bread slice using cutter and arrange on a baking sheet. Bake toasts until tops are crisp and just golden, 3 to 4 minutes. Cool toasts slightly on baking sheet on a rack. (Leave oven on.)
- Top each toast with a rounded 1/2 teaspoon cheese mixture, spreading to edge with a small offset spatula or knife. Bake toasts until topping is puffed and golden, about 6 minutes.

- 1. Preheat the broiler.
- 2. Toast the bread lightly in a toaster oven. Remove the crusts. Cut the slices with a 2-inch round biscuit cutter and spread the rounds lightly with mayonnaise. Put a slice of onion on top of each piece and spread with mayonnaise again. Broil until golden brown. Serve hot.
- Ellen's Tips:
- You can add some chopped fresh parsley on top of the puffs after broiling. You can spread some hot and sweet mustard on top of the onion before the mayonnaise for a spicier version of this recipe.

A simple, super-quick-to-prepare recipe for an attractive and delicious appetiser, from the August/September 2005 issue of 'Australian Vogue Entertaining + Travel'. The recipe recommends using good-quality store-bought puff pastry. - put the stick of butter in water, when it comes to a boil again and butter is melted add salt and flour all at once Turn on low and stir until a ball forms and pulls from side of pan.
