OVEN ROASTED PARMESAN POTATOES
I have tried a lot of good roasted potato recipes, but I keep coming back to this one. I've never found one I like better! These are crispy on the outside, and soft and creamy on the inside.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking pan or cast iron skillet with cooking spray; pour in about 1 teaspoon vegetable oil to coat the bottom.
- Mix Parmesan cheese, salt, garlic powder, paprika, and black pepper together in a bowl.
- Blot the cut-side of potatoes with a paper towel to remove any moisture. Place potatoes in a bowl and drizzle with 1 tablespoon vegetable oil; toss until potatoes are lightly coated. Sprinkle potatoes with Parmesan cheese mixture; toss to coat. Arrange potatoes, cut-side down, onto the prepared baking pan.
- Bake in the preheated oven for 15 to 20 minutes. Turn potatoes to cut-side up; continue baking until golden and crispy, about 15 to 20 more minutes. Serve with sour cream.

PARMESAN SHRIMP SHRIMP TWICE BAKED POTATOES

- So it's actually a really, really ridiculously easy recipe, but for the sake of the newbies out there that may be just now finding their way into the kitchen, I'm going to go the detailed route with the instructions. Essentially you bake the potatoes, whip the insides, saute the shrimp, season, combine, and stuff. your. face. Let's begin!
- Preheat your oven to 350 degrees Fahrenheit
- Wash and scrub potatoes, pierce each a 4-6 times with a fork, and rub with olive oil.
- Sprinkle each spud generously with coarsely ground kosher salt and set atop a baking sheet on the middle rack of your oven or toaster oven.
- Bake for 60 minutes or until tender in the center with a crispy golden skin. Larger potatoes may need an extra 10-20 minutes bake time depending on your oven.
- Short on time? You can also microwave the baked potato and then finish it off in the toaster oven to crisp the skin. After cleaning and "forking," wrap each potato in a damp paper towel and microwave, together, for 8-11 minutes while your oven or toaster oven preheats to 350F. Rub with oil and top with salt and bake until skin is crispy, approx 10-15 minutes.
- While the potatoes are baking, start the shrimp.
- Defrost if using frozen, or do the "I-skipped-a-step!" happy dance if using fresh.
- Saute your shrimp in a little bit of oil [about 1/2 tablespoon or so!], just enough so the shrimp glisten as they cook.
- While they simmer away, season with your choice of spices. I sprinkled mine with garlic powder, cayenne pepper, red pepper flakes and dried parsley along with a little bit o. Because I love the garlicky kick, I also added a few drops of sriracha chili sauce. Stir/flip with a spatula as you season to prevent them from sticking and to spread the herbs and spices to both sides of the shrimp. They will only need a few minutes to cook and are done when they turn peachy-pink and opaque.
- Once your potatoes are done baking, allow to cool a bit before slicing into the center. To maintain the shape, cut only halfway through the top portion of the potato, as pictured below.
- Now scoop out the center! Leave behind enough to maintain the shape of the potato, about 1/4 inch should do it. Add the insides to a bowl.
- Here's where you get to get creative with what you have on hand. The idea behind a twice baked potato is to fluff up the middle of the potato a-la-mashed potatoes without actually mashing a boatload of spuds. Add-in options for fluffing/whipping the potato can be anything you choose: greek yogurt or sour cream, veggie broth or chicken broth, even milk or coconut milk. Choose your favorites [I went with 1/4 cup veggie broth, 1/4 cup coconut milk, and about 1/2 cup of greek yogurt] and fluff away. You can use a fork to whip the potatoes or an electric beater, up to you!
- Stir in freshly chopped green onion, 1/4 teaspoon of garlic powder, 1/4 teaspoon of salt, and a few cranks of freshly ground black pepper.
- Taste and adjust seasonings as needed [I have a heavy hand with the garlic and always add red pepper flakes and parsley to everything!] and gently spoon the whipped deliciousness into the potatoes.
- Top with an extra sprinkle of cheese [optional] and your tasty seasoned shrimp and return to the oven to bake for 10 minutes or so.
- Garnish with even more green onion [love them so!] and dig in while they're deliciously steamy!

TWICE BAKED POTATOES
Steps:
- Preheat the oven to 400 degrees F.
- Rub the potatoes with olive oil and salt; prick them a few times with a fork. Place the potatoes on a baking sheet and bake until tender, 50 minutes to 1 hour. Let cool slightly.
- Make a slit in the potatoes and scoop out most of the flesh into a large bowl, leaving 1/2 inch behind so the skins hold their shape. To the bowl, add 1/2 cup of the Parmesan as well as the milk, sour cream, melted butter and half of the scallions; fold together to combine. Season with salt and pepper. Divide the mixture among the potato skins, mounding a bit, and sprinkle with the remaining 1/2 cup Parmesan.
- Bake the stuffed potatoes until golden brown on top, 15 to 20 minutes. Sprinkle with the remaining scallions.
TWICE BAKED POTATOES
Since you can prepare them in advance (even the day before) and bake them the second time right before supper, this work really well for company. Just refrigerate until ready to bake. A great side for steak or roast.

- Preheat oven to 425 degrees.
- Wash potatoes.
- Place in shallow pan.
- Bake for 45 minutes or until easily pierced with a fork, turning once.
- Remove from oven and reduce temperature to 350 degrees.
- While still hot, carefully cut potatoes in half, lengthwise.
- Scoop out potato, leave an 1/8 inch wall.
- Place potato centers in mixing bowl, add butter and milk.
- Whip until fluffy.
- Add sour cream, cheeses, onion powder, salt and cayenne pepper.
- Mix.
- Spoon back into skins.
- Sprinkle with paprika.
- Bake in greased shallow baking pan.

CRISPY ROASTED PARMESAN POTATOES

- Preheat oven to 200C/400F.
- Mix Parmesan Mixture in a bowl.
- Drizzle oil in 22 x 33cm / 9 x 13" glass baking dish (Note 2). Tilt pan to spread all over the base.
- Use a spoon to scatter the Parmesan Mixture over the base. Spread as evenly as you can. Once sprinkled, do not touch - don't try to spread it.
- Place potatoes cut side down, pressing firmly.
- Optional: drizzle top of potatoes with a touch of oil or spray with oil, then sprinkle with salt.
- Bake potatoes for 35 - 40 minutes or until they are soft and the parmesan crust is deep golden (you can check through the glass!)
- REST for 5 minutes. Then use an egg flip to cut between every 4 or so potatoes (i.e. cutting through the parmesan crust which bonds between each potato - see video), then scoop up 4 or so potatoes and flip them upside down so the cheese side is up on a serving platter.
- Serve with Dipping Sauce, if using, and sprinkle over extra green onions if desired. Serve as a side dish or as nibbles!

- 1. Preheat oven to 400 degrees.
- 2. Scrub potatoes, prick with a fork all around, rub down generously with olive oil and sprinkle with salt.
- 3. Bake in oven for about an hour until potatoes are tender and the skin is crisp.
- 4. While potatoes are baking put 1/2 cup of olive oil in a small pot, add garlic cloves, turn to low heat and let garlic cloves roast.
- 5. Once potatoes are done, cut length wise, scoop out potato flesh witin a half inch of the skin. Put flesh into a bowl.
- 6. Take garlic from oill once they begin to brown. Put butter and garlic in a mini food processor and blend together to make garlic butter.
- 7. Add garlic butter, cheese, parsley,1/2 cup of evaporated milk, and a couple spoonfuls of garlic oil. Salt and pepper.
- 8. Mix thoroughly, if mixture is to dry, not coming together add more milk and/or oil. Check for salt and pepper and adjust as needed.
- 9. Spoon mixture into potato skins. Top each with a sprinkling of parmesan cheese.
- 10. Put back in oven for ten to fifteen minutes, until cheese browns and potatoes are heated through.
- 11. These are delicious with a wonderfully grilled ribeye that your husband should be doing while you're working on potatoes.

- Heat oven to 400 degrees F.
- Cut thin slice off top of garlic head to expose cloves; discard top. Place garlic head on square sheet of foil; drizzle with oil. Wrap garlic loosely with foil. Prick potatoes in several places with fork. Bake potatoes and garlic 1 hour.

- Scrub potatoes, dry them off and pierce several times with a fork; place on a baking sheet. Wrap garlic in foil and place alongside the potatoes.
