Alex Guarnaschelli's Chicken Parmesan with Spaghetti

Make a spaghetti side dish with a waffle iron using this unique mash-up recipe.

6 large eggs 2 cups breadcrumbs
toasted 1 tsp garlic powder 1 lb skinless chicken breast meat
sliced into pieces ¼-inch thick and pounded thinner 2 tbsp unsalted butter 3 cups tomato sauce 1/4 cup fresh basil
chopped 1 1/2 lbs firm
whole milk mozzarella cheese 2 cups Parmesan cheese
finely grated 6 cups cooked spaghetti 6 tbsp extra-virgin olive oil Kosher salt

Steps:

  • Crack 3 eggs and separate the yolks into a small bowl. Add a splash of cold water to the yolks and whisk to blend. In another bowl, combine the breadcrumbs and garlic powder. Season the chicken pieces on both sides with salt and dip each thoroughly in the eggs and then thoroughly in breadcrumbs. Place the chicken in a single layer on a baking sheet. Refrigerate.In a large skillet, heat 2 tbsp olive oil and butter over medium heat. Heat until the butter begins to froth. Add the chicken pieces in a single layer and cook on the first side until golden brown, 3-4 minutes. Gently turn them on their second side and cook for an additional 2-3 minutes. When cooked, remove them from the pan with a slotted spatula and turn them onto a paper towel to drain slightly.Preheat oven to 375°F.Remove the excess grease from the pan where the chicken was cooked. Add the tomato sauce and cook until warmed, 2-3 minutes. Remove from the heat and add the basil. Layer half of the chicken in a single layer in a medium baking dish. Top with half of the sauce and about half of the mozzarella and Parmesan. Top with remaining chicken then remaining sauce and remaining cheese to coat the top. Place in the oven and bake until hot and bubbling, 25-30 minutes. Broil the cheese for 1 minute if possible. Preheat the waffle iron. In a large bowl, toss the spaghetti with 3 tablespoons of olive oil and 3 eggs. When iron is hot, lightly brush the inside with some olive oil to prevent sticking. Take about 3/4 to 1 cup of the pasta and arrange it on the hot waffle iron and close the lid. Cook, without disturbing, 5-8 minutes. Open and remove. Season with salt. Repeat with the remaining pasta. Serve waffles alongside chicken.

1 cup grated Parmesan cheese
2 tablespoons garlic powder
1 tablespoon onion powder
½ tablespoon paprika
1 teaspoon salt, or more to taste
1 teaspoon ground black pepper

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Pour olive oil into a large resealable plastic bag and add potatoes. Seal the bag and shake to coat every piece with oil.
  • Combine Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper in a second resealable bag. Pour oiled potatoes into the bag, seal, and toss well to coat.
  • Spread potatoes on the prepared baking sheet.
  • Bake in the preheated oven for 15 minutes. Flip potatoes over and bake until crisp on the outside and soft on the inside, about 15 minutes more.

4 large russet potatoes
peanut oil for frying
4 teaspoons truffle oil
¼ cup finely shredded Parmesan cheese
4 teaspoons minced fresh parsley
1 teaspoon sea salt

Steps:

  • Cut potatoes into French fry shapes, about 3/8-inch wide and thick, using a mandoline or a knife. Soak potatoes in a large bowl of cold water for about 30 minutes. Drain and pat potatoes dry with a clean towel.
  • Heat oil in a deep-fryer or deep saucepan to 275 degrees F (135 degrees C).
  • Gently lower 1/4 of the potatoes into the hot oil and cook, stirring occasionally, for 2 minutes. Transfer cooked potatoes to a clean towel using a slotted spoon. Repeat frying with remaining potatoes.
  • Heat the same oil to 350 degrees F (175 degrees C). Fry potatoes again, working in batches, until golden brown, about 5 minutes. Transfer fries to a clean kitchen towel using a slotted spoon.
  • Place fries in a bowl and drizzle truffle oil over warm fries; season with Parmesan cheese, parsley, and sea salt.

1 (22 ounce) package frozen waffle-shaped French fries
1 teaspoon italian seasoning
2 tablespoons parmesan cheese (canned stuff is what I use)
1 teaspoon salt
1 tablespoon parsley
1/4 teaspoon pepper
oil, for binding

Steps:

  • Heat oven according to package directions and cook until crisp.
  • While fries bake, in a small bowl, combine dry seasonings and just enough oil to make a thin dressing (approximately 1-2 tbsp.).
  • When fries are done, toss immediately with oil and herb mixture. Drain any excess oil and serve immediately.

Quick and Easy Parmesan Truffle Fries image

Use frozen, bagged fries to have tasty truffle fries, covered in truffle oil, parmesan, and parsley on the table in less than 15 minutes.

1 26 oz bag frozen shoestring french fries, (or 'fast food fries')
3 tbsp white truffle oil
2 oz parmesan cheese, (shredded)
1/4 cup chopped fresh parsley
1 egg yolk
1 tsp kosher salt
2 tsp malt vinegar
1/2 cup vegetable oil
1/4 tsp paprika

Steps:

  • Preheat oven to 450F. Set up racks in the upper middle and lower middle positions.
  • Take out two baking sheets and spread out half a bag of fries onto each sheet. Bake the fries for 6 minutes. Then switch the trays from upper to lower and lower to upper, and turn each of them 90 degrees (flip back and front.) Bake an additional 6 minutes. If the fries aren't quite crisp enough, bake them for 1-2 minutes more.
  • While the fries are cooking, organize the truffle oil, parmesan, and parsley. Then, make the aioli.
  • For the aioli: Whisk together the egg yolk, salt, and 1 tsp of malt vinegar. The yolk will get light colored and then darken a bit. Now is the time to start adding the oil. Whisking the egg mixture constantly, begin adding the oil in a slow, steady stream until all the oil is used and the sauce has thickened. Stir in the paprika. Then, taste the aioli and add more malt vinegar until you like the flavor. I find that one more teaspoon is perfect.
  • Once the fries are done, immediately toss them with 2 tablespoons of the truffle oil and about half the parmesan and parsley. Mound them up in your serving dish and then top with the remaining truffle oil, parmesan, and parsley. Serve with the malt vinegar aioli.

2 eggs, separated
1 3/4 cups water
2 tablespoons olive oil
2 cups freshly grated Parmesan
Nonstick cooking spray
12 ounces spicy Italian sausage, removed from casings, crumbled and cooked
1/4 cup chopped fresh chives
Maple syrup, for serving
Serving suggestions: sour cream, crumbled bacon or pesto

Steps:

  • Preheat a waffle iron.
  • Using a rubber spatula, mix together the waffle mix, egg yolks, water and olive oil in a medium bowl until just combined, with a few streaks and lumps remaining. Fold in the Parmesan.
  • In a separate medium bowl, whisk the egg whites until they hold stiff peaks. Fold the whites into the batter.
  • Spray the hot waffle iron with nonstick spray. Ladle 1/2 cup of the batter (or as much as your iron will allow) into each mold, and sprinkle with sausage and chives. Close the top and cook until the waffles are golden brown and cooked through, about 3 minutes. Repeat with the remaining batter, sausage and chives.
  • Serve with maple syrup. Top as desired with sour cream, bacon or pesto.
