PARTY CRAB PUFFS
I received this recipe years ago from my grandmother. She also told me to have fun being creative and experimenting in the kitchen. My friends request these little puffs at every gathering. -Jean Bevilacqua, Rhododendron, Oregon

Steps:
- Preheat oven to 400°. In a large saucepan, bring the water, butter and salt to a boil. Add flour all at once and stir until a smooth ball forms. Remove from heat; let stand 5 minutes. Add 1 egg at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. , Drop by teaspoonfuls 2 in. apart onto greased baking sheets. Bake 18-22 minutes or until golden brown. Remove to a wire rack. Immediately split puffs open; remove tops and set aside. Discard soft dough from inside. Cool puffs. , In a large bowl, combine filling ingredients. Just before serving, spoon 1 teaspoonful filling into each puff; sprinkle with parsley if desired. Replace tops.

RYE PARTY PUFFS

- Preheat oven to 400°. In a large saucepan over medium heat, bring water and butter to a boil. Add the flours, parsley, garlic powder and salt all at once; stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add eggs, 1 at a time, beating well after each addition until smooth. Continue beating until mixture is smooth and shiny., Drop batter by rounded teaspoonfuls 2 in. apart onto greased baking sheets. Sprinkle with caraway. Bake until golden brown, 18-20 minutes. Remove to wire racks. Immediately cut a slit in each puff to allow steam to escape; cool. , In a large bowl, combine the first 8 filling ingredients. Stir in olives. Split puffs; add filling.

Immediately cut a slit in each puff to allow steam to escape; cool completely., In separate bowls, combine the ingredients for egg salad filling and ham salad filling. Split puffs and remove soft dough from inside. Just before serving, spoon fillings into cream puffs; replace tops. Refrigerate leftovers.

RYE PARTY PUFFS
PERFECT bites for Super Bowl Sunday and St. Patrick's Day parties! I came up with this recipe years ago, and it won in Taste of Home magazine and Better Homes and Gardens magazine. It makes a lot, but they disappear FAST! Enjoy!

Steps:
- In a saucepan over medium heat, bring water and butter to a boil.
- Add flours, parsley, garlic powder and salt all at once; stir until a smooth ball forms.
- Remove from the heat; let stand for 5 minutes.
- Beat in eggs one at a time until smooth.
- Drop the batter by rounded teaspoonfuls 2 inches apart onto greased baking sheets.
- Sprinkle with caraway seeds.
- Bake at 400º for 18-20 minutes or until golden.
- Remove to wire racks.
- Immediately cut a slit in each puff crossways through center, but not all the way through, to allow steam to escape. (The top will open up like a cap.).
- Let cool.
- In a mixing bowl, mix well the first 8 ingredients, then stir in olives.
- Open puffs, stuff with filling, lightly close tops of puffs over filling.
- Cover, chill til serving.
- Makes 4 1/2 dozen.

PARTY POTATO PUFFS
Transform leftover mashed potatoes into a party-ready appetizer.

- Crisp up prosciutto by placing on cooking parchment paper-lined cookie sheet and baking in 350°F oven 10 to 15 minutes or until crisp. Crumble. Set aside. Leave oven on.
- In large bowl, stir together mashed potatoes, eggs, salt and pepper, goat cheese and slightly less than 1/2 cup Cheddar cheese. Divide mixture among 24 nonstick mini muffin cups. Sprinkle with remaining Cheddar and Parmesan cheeses. Pop in the oven for 30 minutes.
- Top with crumbled prosciutto. Serve immediately.

PARTY CORNED BEEF PUFFS
Delicious, bite-sized party appetizers that can be made a day ahead and served cold. Easy to make and go in a flash. I made the puffs in the shape of footballs for a Super Bowl party.

Steps:
- Mix together the corned beef, onion, mustard, mayonnaise, and horseradish. Cover and refrigerate.
- Preheat an oven to 450 degrees F (230 degrees C).
- In a large pot, bring beer and butter to a rolling boil. Stir in flour and salt until the mixture forms a ball. Transfer the dough to a large mixing bowl. Using a wooden spoon or stand mixer, beat in the eggs one at a time, mixing well after each. Drop by teaspoonfuls onto a lightly greased baking sheet.
- Bake for 10 minutes in the preheated oven. Reduce temperature to 350 degrees F (175 degrees C) and bake an additional 10 minutes until golden brown. Centers should be dry.
- When the shells are cool, split the puffs and fill with the corned beef mixture. Refrigerate until ready to serve.

CHEF JOHN'S PARTY CHEESE PUFFS
These beautiful cheese puffs, gougeres, are as easy as they are delicious. Usually Gruyere cheese is used but I had some very sharp farmhouse Cheddar cheese in the fridge, so I decided to use that. As long as you are using a very sharp, full-flavored cheese I don't think you can go wrong. I love gougeres with Gruyere, but I think the extra-sharp Cheddar was just as good.

- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with a silicone baking mat.
- Stir water, butter, and salt together in a pot; bring to a simmer. Reduce heat to medium and whisk flour into butter mixture until a paste-like dough forms, 2 to 3 minutes. Transfer dough to a bowl to cool until warm, 5 to 10 minutes.
- Whisk 1 egg, thyme, and black pepper into cooled dough until egg is completely incorporated. Add remaining egg and whisk until completely incorporated into dough. Stir 3/4 the cheese into dough until combined. Scoop 1-inch balls of dough onto prepared baking sheet. Top each with remaining cheese.
- Bake in the preheated oven until golden and puffed, 15 to 20 minutes.

- Use small cookie cutters to cut shapes out of the bread and place on baking sheets (reserve the scraps to grind and keep in the freezer for future croquettes, meatballs, etc.) Pop under the broiler to lightly toast on one side Stir together the mayo, Parmesan, onion, and about 1 1/2 T of your seasoning of choice (if including garlic powder, only use about 1/4 t) Flip the bread and spread a small amount of the mayo mixture onto the un-toasted side Pop back under the broiler until bubbly and golden If you want to be fancy about it, arrange on the platter and sprinkle with fresh herbs, or top with thin slices of grape tomatoes, roasted red pepper, sliced olives, etc.
