MEDITERRANEAN CHICKPEA PASTA SALAD



Mediterranean Chickpea Pasta Salad image

This vegetarian chickpea pasta salad is loaded with grape tomatoes, cucumbers, feta, and fresh basil and dressed with a garlicky lemon vinaigrette. It's the perfect picnic, cookout, or meal prep pasta salad!

½ lb. chickpea pasta (I used rotini)
2 cups diced cucumber (seeds removed)
2 cups halved grape tomatoes
½ cup sliced black olives
½ cup thin red onion slices (a small red onion)
½ cup crumbled feta cheese
handful fresh basil, torn or shredded
1 large lemon, juiced
3 tbsp white wine vinegar
½ cup extra virgin olive oil
2 large garlic cloves
1 tsp dried oregano
1 tsp dried basil
¼ tsp black pepper
1 tsp coarse salt
2 tsp raw sugar

Steps:

  • Cook the chickpea pasta according to package directions, in salted water. Allow to cool slightly. Toss with a little oil to prevent sticking if needed.
  • Meanwhile, make the vinaigrette. Add all vinaigrette ingredients to a mason jar with a lid and shake until blended or whisk in a medium bowl.
  • Assemble the salad. Add the warm chickpea pasta, vegetables, and feta to a large mixing bowl. Pour the vinaigrette over the salad and toss to coat. Top with the torn basil. Serve.

1 (16 ounce) package rotelle pasta
2 tablespoons extra virgin olive oil
½ cup chopped oil-cured olives
2 tablespoons minced fresh oregano
2 tablespoons chopped fresh parsley
1 bunch green onions, chopped
1 (15 ounce) can garbanzo beans (chickpeas), drained and rinsed
¼ cup red wine vinegar
½ cup grated Parmesan cheese
salt and pepper to taste

Steps:

  • Bring a large pot of salted water to a boil, add pasta and cook until al dente. Drain and rinse under cold water. Set aside to chill.
  • In a large skillet heat the olive oil over medium low heat. Add the olives, oregano, parsley, scallions and chickpeas. Cook over low for about 20 minutes. Set aside to cool.
  • In a large bowl toss the pasta with the chickpea mixture. Ad the vinegar, grated cheese and salt and pepper to taste. Let sit in refrigerator overnight. When ready to serve taste for seasoning and add more vinegar, olive oil and salt and pepper if desired.

Easy and tasty chickpea pasta salad recipe

3 tablespoons lemon juice (around 1 large lemon)
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon basil
1/8 teaspoon garlic powder
16 oz whole wheat pasta shells
1/2 cup diced red onion
3 cups cherry tomatoes, halved
1 green bell pepper, sliced
1 cup crumbled feta cheese
1 can of chickpeas, drained

Steps:

  • Cook pasta to al dente and drain. Immediately rinse with cold water, strain, and place in a large bowl
  • Add the red onion, cherry tomatoes, bell pepper, feta, and chickpeas to the pasta
  • Shake all ingredients for dressing until well combined, then pour over the pasta salad
  • Stir well to combine
  • Serve fresh

An Italian remix on pasta salad that's sure to be the star of the party. Short, curly gemelli or fusilli noodles are perfect in this summery dish, as they leave room for other ingredients in every forkful, and the grooves hold the herbs and the zingy lemon vinaigrette in this Pasta Salad with Tomatoes, Mozzarella, and Chickpeas.

1 small clove garlic, minced
Kosher salt and freshly ground pepper
1 tablespoon fresh lemon juice
2 tablespoons red-wine vinegar
1 teaspoon dried oregano
1/3 cup extra-virgin olive oil
1 pint cherry tomatoes, halved
1 pound gemelli or fusilli
1 fennel bulb, cored and chopped (1 1/2 cups)
3 tablespoons capers, chopped, plus 2 tablespoons brine
1 can (15 ounces) chickpeas, drained and rinsed
4 ounces salted mozzarella, cubed (3/4 cup)
1 ounce Parmigiano-Reggiano, grated (1/4 cup)
1/2 cup chopped flat-leaf parsley

Steps:

  • Using the side of a chef's knife, mash garlic with 1 teaspoon salt into a paste. Transfer to a small bowl; whisk in lemon juice, vinegar, oregano, and oil. Stir in 1/4 teaspoon each salt and pepper. In a fine-mesh sieve, toss tomatoes with 1 teaspoon salt; let stand 15 minutes to drain.
  • Cook pasta in generously salted water according to package directions until cooked all the way through. Drain (but don't rinse, which would waterlog the noodles), then spread on a rimmed baking sheet and toss with half of vinaigrette. Let cool completely, about 20 minutes.
  • Meanwhile, in a large bowl, toss fennel, capers and brine, chickpeas, mozzarella, and salted tomatoes with remaining vinaigrette. Add pasta; toss to combine. Season with salt and pepper. Refrigerate up to a day ahead; let stand at room temperature at least 30 minutes before serving. (Cold pasta salad is too firm and less flavorful.) Toss with Parmigiano-Reggiano and parsley; serve.

25 g pasta (dried 1/2 cup)
125 g chickpeas (rinsced and drained)
125 g corn kernels (rinsed and drained)
1 lebanese cucumber (small chopped)
1/4 red capsicum (chopped)
1 tablespoon pesto sauce (tomato)
1 tablespoon parsley (chopped fresh)
fresh ground black pepper

Steps:

  • Cook the pasta in a small saucepan of boiling water following the packet directions and then drain and rinse under cold water and then drain well and transfer to an airtight container.
  • Add chickpeas, corn, cucumber, capsicum, pesto and parsley to the pasta and season with pepper and toss the combine.

4 ounces uncooked spinach rotini pasta or 4 ounces fusilli
1 (15 ounce) can chickpeas, rinsed, and drained
1/3 cup finely chopped carrot, to taste
1/3 cup chopped celery
1/2 cup chopped red bell pepper
2 green onions with tops, sliced
3 tablespoons balsamic vinegar
1/4 cup mayonnaise, to taste (Hellman's is best)
2 -4 teaspoons prepared whole grain mustard
salt or seasoning salt, to taste
black pepper
1/4 teaspoon dried Italian seasoning

Steps:

  • Cook pasta in boiling water until firm-tender drain, and rinse under cold water until cool; drain again well.
  • In a medium bowl, combine the cooked pasta, chick-peas, carrot, bell pepper and green onions.
  • In a small bowl, whisk together the vinegar, mayo, mustard, black pepper, salt and Italian seasoning until well blended (adding more spices to taste); pour over the salad; toss to coat evenly.
  • Cover, and refrigerate for 2 hours to blend flavors.
