Tomato Pasta Salad with pasta, tomatoes, bell peppers, feta cheese, fresh basil and garlic. It is a 20 minute crowd pleaser.

2 lbs ripe tomatoes (chopped)
3 large red bell peppers (seeded and chopped)
1/2 cup basil, parsley or dill (finely chopped)
1 cup feta cheese (crumbled)
1 large garlic clove (grated)
2 tbsp olive oil (extra virgin)
Pinch of salt
Ground black pepper (to taste)
2 cups (8 oz) any short pasta (uncooked)

Steps:

  • In a large salad bowl, add ingredients as you are preparing them in the above listed order: tomatoes, bell peppers, basil, feta cheese, garlic, olive oil and pepper.
  • Cook pasta as per package instructions undercooking by 2-3 minutes or until pasta is al dente, cooked but firm. Drain.
  • Add cooked pasta directly from the pot to salad bowl. This will allow hot pasta to melt feta cheese a bit and help flavours marry each other. A bit of pasta water transferring with pasta is fine.
  • Add a pinch of salt and gently stir pasta salad just enough to combine. Serve warm or cold.

1 1 lb Mini penne pasta (or use your favorite pasta shape)
1/3 Cup Olive oil
2 TBSP Stone ground mustard
1 TBSP Minced garlic
1 Pint Cherry tomatoes
5 Oz Crumbled Feta Cheese
1/4 Cup Fresh basil
1/2 TSP Kosher salt
1/2 TSP Ground pepper

Steps:

  • Fill a large pot halfway with water and heat over high heat until boiling.
  • Add pasta and cook for 9 minutes, or until tender.
  • While pasta is cooking, cut tomatoes in half, and chop basil.
  • Strain pasta and rinse well with cold water. Pour into a large bowl.
  • In a small bowl, mix olive oil, mustard, garlic, salt, and pepper.
  • Add dressing mixture to pasta and stir well.
  • Add tomatoes, feta, and basil to pasta, and toss to combine.
  • Chill for 1 hour before serving.

  • Boil bowtie pasta until al dente.
  • Slice cherry tomatoes.

1/2 pound fusilli (spirals) pasta
Kosher salt
Good olive oil
1 pound ripe tomatoes, medium-diced
3/4 cup good black olives, such as kalamata, pitted and diced
1 pound good feta cheese, medium-diced
6 sun-dried tomatoes in oil, drained and chopped
5 sun-dried tomatoes in oil, drained
2 tablespoons red wine vinegar
6 tablespoons good olive oil
1 garlic clove, diced
1 teaspoon capers, drained
1 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
1 cup freshly grated Parmesan
1 cup packed flat-leaf parsley, chopped

Steps:

  • Cook the pasta in a large pot of boiling salted water with a splash of oil to keep it from sticking together. Boil for 12 minutes, or according to the directions on the package. Drain well and allow to cool. Place the pasta in a bowl and add the tomatoes, olives, feta and chopped sun-dried tomatoes.
  • For the dressing, combine the sun-dried tomatoes, vinegar, olive oil, garlic, capers, salt and pepper in a food processor until almost smooth.
  • Pour the dressing over the pasta, sprinkle with the Parmesan and parsley, and toss well.

1/3 cup olive oil
2 tablespoons red wine vinegar
1 small shallot, minced
1 teaspoon dried oregano
8 ounces dried ziti
1 cup chopped cucumber

1/4 cup pitted Kalamata olives, chopped
2 medium vine-ripe tomatoes, chopped

Steps:

  • Bring a large pot of salted water to a boil.

1 tablespoon lemon juice

1 green bell pepper, chopped

This summery dish walks the line between tangy, juicy tomato salad and hearty pasta salad. To make it, ripe tomatoes are marinated with capers, garlic, basil and lots of good olive oil until they almost fall apart, creating a wonderfully soupy dressing for the pasta. Then the pasta is added while still hot to mix; as it cools, it absorbs all the bright flavors. If you can, choose heirloom tomatoes in an array of hues, and serve this in a glass bowl to show it off. Cubes of fresh mozzarella, or bocconcini, make for creamy addition. Add them just before serving, so the heat of the pasta doesn't melt the cheese.

2 pounds very ripe tomatoes, coarsely chopped
1/4 cup drained capers or sliced olives
3 garlic cloves, finely grated or mashed to a paste

1 large basil sprig, plus 1/2 cup torn fresh basil leaves
3 oil-packed anchovy fillets, minced (optional)
1/2 cup extra-virgin olive oil, plus more for serving

Steps:

  • In a large bowl, toss together the tomatoes, capers, garlic, 1/2 teaspoon salt, black pepper, red-pepper flakes, the whole basil sprig and anchovies if using. Let sit for 5 minutes, then stir in 1/2 cup oil. Taste and add salt and pepper if needed. The tomatoes should be aggressively seasoned. So good, and a nice change from typical pasta salads. I always get asked for this recipe at potlucks. I usually increase the dressing by about a third, as we like salads moist. A few hours before serving I add the tomatoes along with chopped artichokes, kalamata olives, basil and parsley. Right before serving, I add some roasted pine nuts. This recipe is very versatile, add whatever you want, some of the ingredients I have added in the past are fresh grated parmesan cheese and cucumbers. This dish gets better the longer it sits, even 24 hours works just fine. Cooking time does not include the setting time. Adapted from Bon Appétit, August 2003.
