I learned how to make this dish from friends in Genoa, Italy, where they're known for creating tasty combinations of veggies, pasta and beans. You can sub feta cheese to give this a Greek twist. -Trisha Kruse, Eagle, Idaho

Number Of Ingredients 10

8 ounces uncooked penne pasta
2 tablespoons olive oil
1 garlic clove, minced
2 cans (14-1/2 ounces each) Italian diced tomatoes, undrained
1 can (15 ounces) cannellini beans, rinsed and drained
1 package (10 ounces) fresh spinach, trimmed
1/4 cup sliced ripe olives
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup grated Parmesan cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, heat oil over medium-high heat. Add garlic; cook and stir 1 minute. Add tomatoes and beans. Bring to a boil. Reduce heat; simmer, uncovered, 5-7 minutes to allow flavors to blend., Add spinach, olives, salt and pepper; cook and stir over medium heat until spinach is wilted. Drain pasta; top with tomato mixture and cheese.

Number Of Ingredients 7

400-460 g (14-16 oz) dry medium shells pasta
1 (798 ml or 27 oz) can diced tomatoes
1 (398 ml or 14 oz) can baked beans
1 tbsp chili powder
1 tsp oregano
½ tsp garlic powder
140 g 5 oz shredded cheddar or mozza cheese

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Fill a large pot halfway with water. Boil and cook the shell pasta. Drain when cooked to al dente.
  • In a 9x12 baking dish, stir together the tomatoes, baked beans, chili powder, oregano, and garlic powder.
  • Stir in the cooked and drained noodles.
  • Top with the shredded cheese.
  • Bake for 10-15 minutes, or until the cheese is melted and bubbly.

1 ¼ cups dried Borlotti beans* (soaked 8-12 hours in a bowl of water drained and rinsed) ((225 grams))
2 tablespoons olive oil
1 clove garlic (minced)
½-1 onion chopped
1 celery stalk chopped
2 carrots chopped
4 cups vegetable broth** ((1 litre))
¾ teaspoon oregano
¾ teaspoon basil
½ teaspoon salt
pinch or 2 of hot pepper flakes if desired
¾ cup tomato puree (passata) (170 grams))
2 cups water ((480 grams))
1 ¼ cup dried pasta (small ditaloni, quadrucci etc) ((250 grams))

Steps:

  • In a large pot add the olive oil, minced garlic, chopped onion, celery and carrots, cook until transparent.
  • Then add the vegetable broth, spices, puree and beans bring to a boil, cover with a slight opening and continue to simmer over low/medium heat for approximately 20-30 minutes or until the beans are tender and the soup has thickened. Stirring occasionally.
  • Once they are cooked and tender, then you can blend 1/3-1/2 the ingredients or leave as is. Add the water (taste for salt) and bring the soup to a boil then add the dry pasta. Cook until the pasta is al dente. If you find it too thick then add a little more water or broth, too thin then add less water before adding the pasta. Serve immediately sprinkled with some freshly grated parmesan cheese. Enjoy!

1 lb jumbo pasta shells
6 tablespoons butter
1 onion, finely chopped
6 garlic cloves, minced
1 cup heavy cream
1 (28 ounce) can diced san marzano tomatoes
1 (16 ounce) can small white beans, rinsed and drained
1/2 cup grated parmesan cheese, plus more for serving
1/2 cup snipped chives
salt & freshly ground black pepper

Steps:

  • In a large pot of boiling, salted water, cook the pasta until al dente; drain and set aside.
  • In the same pot, melt the butter over medium heat. Add the onion and garlic and cook, stirring occasionally, until tender, about 6 minutes. Add the cream and simmer, stirring occasionally, until reduced by half, about 5 minutes. Add the reserved pasta, the tomatoes and beans and cook until heated through, about 5 minutes. Toss with the 1/2 cup parmesan and chives, then season to taste with salt and pepper. Pass more parmesan at the table.

Shell beans and tomatoes are still available at the end of September in farmers' markets, and I'll continue to make pasta with uncooked tomatoes until there are no sweet tomatoes to be found. Shell beans are a rare treat, soft and velvety, to be savored during their short season.

Number Of Ingredients 12

1 1/4 pounds ripe tomatoes, peeled and chopped (see note)
Freshly ground pepper to taste
2 to 3 tablespoons olive oil (to taste)
2 tablespoons slivered fresh mint or basil
1 pound shell beans (in the pod), like scarlet runners, borlotti, cannellini or other heirlooms available at your farmers' market (about 1 3/4 cups)
1 small onion, halved
7 cups water
3 large garlic cloves, 2 crushed, 1 minced
A bouquet garni made with a few sprigs each parsley and thyme, a Parmesan rind, and a bay leaf
Salt to taste
1 pound whole wheat penne, rigatoni or fusilli
2 ounces feta, crumbled (1/2 cup)

Steps:

  • In a large pasta bowl, toss together the tomatoes, minced garlic, salt, pepper, olive oil, and mint or basil. Allow to sit at room temperature for 30 minutes to an hour. Taste and adjust seasonings.
  • Meanwhile shell the beans and combine with the onion, water, the crushed garlic cloves, bouquet garni and salt to taste in a heavy saucepan or soup pot. Bring to a boil, reduce the heat, cover and simmer 45 minutes, or until the beans are tender. Taste and adjust salt. Remove and discard the onion, the bouquet garni and the garlic cloves. Drain though a colander set over a bowl. Stir the beans into the tomato mixture.
  • Bring a large pot of water to a boil, salt generously and add the pasta. Cook al dente, drain and toss with the tomatoes and beans. If desired add about 1/4 cup of the bean broth. Add the feta cheese, toss again and serve at once.

This recipe originally called for adzuki beans, but as those are extremely hard to find state-side, I use whatever type of beans I have on hand. I like garbanzos and cannellini best, but kidneys and pintos work well also. Adjust the pepper flakes to your personal taste. I usually use around 3/4 tsp. depending on how I am feeling while cooking. If you don't have Asiago cheese on hand, Parmesan and Mozzarella will work just as well. This can also be made vegan by omitting the cheese or substituting soy cheese. This can be used as a main dish for four or a side dish for eight.

2 teaspoons olive oil
1/2 cup green bell pepper, chopped
1 tablespoon garlic, finely chopped
1 (15 ounce) can diced tomatoes, undrained
1/4 teaspoon crushed red pepper flakes (to taste)
1 (16 ounce) can garbanzo beans, rinsed and drained
2 tablespoons dried basil
2 tablespoons parsley flakes
1/4 cup asiago cheese, finely shredded

Steps:

  • Cook pasta according to package directions, omitting salt and oil. Drain and set aside.
  • Meanwhile, in a medium saucepan, heat olive oil over medium heat. Add bell pepper and garlic. Cook, stirring occasionally, until vegetables are soft, 3 to 5 minutes.
  • Add tomatoes and hot pepper flakes. Bring to a boil over high heat. Reduce heat and simmer, uncovered, 10 minutes.
  • Stir in beans, basil, and parsley. Cook until beans are heated through, about 2 minutes, stirring occasionally. Stir in cooked pasta and heat through.
  • Spoon into serving bowls and top each with Asiago cheese.

Steps:

  • Saute; a couple of cloves of chopped garlic in olive oil in a large, deep skillet over medium heat.
  • Add 2 cups of chopped fresh or canned tomatoes and cook for 5 minutes, or until saucy; add 1.5 cups canned white beans (or about 1 cup of cooked beans) and heat until bubbly.
  • Add a little more minced garlic, then a pound of cooked penne pasta.
  • Add fresh basil and a bit more oil and serve.
