PEA AND HAM SOUP (SLOW COOKER OR STOVE)

Recipe video above. This is a fabulous "throw it all in the slow cooker" soup. There's no need to cook the onion separately - it "sautés" itself in the fat from the ham that rises to the surface. Thick, hearty soup broth infused with incredible flavour from the ham! Use leftover ham bone, or purchase a ham hock.

500g / 1lb dried split peas ((Note 1))
1.2-1.5kg / 2.4-3lb ham hock (aka ham bone), bacon hock or MEATY leftover ham bone ((Note 2))
1/4 tsp salt ((start with less, adjust later))
3/4 tsp black pepper
2 garlic cloves (, minced)
2 bay leaves (, dried or fresh)
1 onion (, finely chopped)
1 carrot (, peeled and finely chopped)
2 celery sticks (, finely chopped)
8 cups (2 litres/qts) water
Parsley (, finely chopped)
Crusty bread for dunking!

Steps:

  • Place peas in slow cooker, push ham in. Scatter all ingredients around the ham bone, then pour over water.
  • Slow cook 8 to 10 hours on LOW or 6 hours on HIGH. (Or 2.5 hours on low on stove, 1 h - 1 hr 20 min pressure cooker/Instant Pot on HIGH)
  • Remove ham bone, shred ham meat. Discard bone and fatty skin.
  • Remove bay leaves. Use a stick blender to blitz 2 or 3 times - thickens soup but doesn't make it completely smooth (my preference, you can blend completely if you want).
  • Return ham into slow cooker, stir. Taste and add more salt if needed (soup gets lots of salt from ham).
  • Serve garnished with parsley. Serve with crusty bread for dunking - make a quick Irish Soda Bread, Garlic Bread or upgrade to Cheesy Garlic Bread!

1.1kg (21⁄2lb) unsmoked ham
1 bay leaf
1tbsp olive oil
1 onion, finely chopped
Salt and freshly ground black pepper, season to taste
1tbsp Dijon mustard
3 garlic cloves, finely chopped
2 sprigs of rosemary handful of thyme, leaves only
900ml (11⁄2 pints) hot beef stock for the slow cooker OR 1.2 litres/2 pints for the traditional method
450g (1lb) frozen peas
3 potatoes, peeled and chopped into bite-sized pieces

Steps:

  • Slow cooker method: Preheat the slow cooker, if required. Sit the ham and bay leaf in the slow cooker and cover with 900ml (11⁄2 pints) of water. Cover and cook on auto/low for 8 hrs or on high for 4 hrs, then remove the ham and set aside. Discard the stock, or strain and reserve a little to add to the soup. Heat the oil in a large heavy-based pan over a medium heat, add the onion, and cook for 3-4 mins until soft. Season with salt and pepper, then stir in the mustard, garlic, and herbs (reserve some thyme leaves for garnish). Add a little stock and bring to the boil, then tip in the peas (if you prefer them puréed, pulse them gently in a liquidizer or use a stick blender). Transfer to the slow cooker, add the remaining stock and the potatoes, cover, and cook on auto/low for 8 hrs or on high for 4 hrs. Remove any fat from the ham, chop into bite-sized pieces, and stir into the soup. Taste and season as needed. Garnish with the reserved thyme leaves and serve with wholemeal bread. OR Traditional method: Add the ham and bay leaf to a large pan, cover with 1.2 litres (2 pints) of water and bring to the boil. Partially cover, reduce to a simmer, and cook for about 1 hr or until the ham is cooked. Skim away any scum that comes to the surface of the pan as you go. Discard the stock, or strain and reserve a little to add to the soup. Set the ham aside until cool enough to handle. Heat the oil in a large heavy-based pan over a medium heat, add the onion, and cook for 3-4 mins until soft. Season with salt and pepper, then stir in the mustard, garlic, and herbs (reserve some thyme leaves for garnish). Add a little stock and bring to the boil, then tip in the peas and remaining stock. Bring to the boil, reduce to a simmer, and cook for 45 mins, topping up with hot water as needed. About 20 mins before the end of the cooking time, bring a separate pan of water to the boil. Add the potatoes, bring back up to the boil, and then simmer for 12-15 mins until soft. Drain and set aside. Remove the rosemary from the soup, then use a stick blender to gently purée the peas, or ladle them into a liquidizer and pulse a couple of times. Return them to the pan and stir in the potatoes. Remove any fat from the ham, chop into bite-sized pieces, and stir into the soup. Taste and season as needed. Garnish with the reserved thyme leaves and serve with wholemeal bread. This slow cooker split pea and ham soup is a fantastic soup for the winter. It's completely homemade, and the result shows as it's packed with flavor and looks amazing.

600 g (1.3 lb) ham hock
1 onion, diced
2 tsp garlic, crushed
2 carrots, diced
2 cups green split peas, rinsed
1 bay leaf
2 Tbsp sherry
1 l (1.1 qt) water
1 l (1.1 qt) chicken stock

Steps:

  • Add all the ingredients into a slow cooker.
  • Cook on low for 6-8 hours.
  • Remove the ham hock and put it to the side. Discard, the bay leaf.
  • Remove the skin from the ham and shred the meat. Discard the skin, fat, and bone.
  • Blend until smooth by using a food processor or stick blender.
  • Add the shredded meat into the soup.
  • Cook on low for 1 hour or until it's nice and hot.
  • Season to taste.
  • Serve & Enjoy.

1 package (16 ounces) dried green split peas, rinsed
2 cups cubed fully cooked ham
1 large onion, chopped
1 cup julienned or chopped carrots
3 garlic cloves, minced
1/2 teaspoon dried rosemary, crushed
1/2 teaspoon dried thyme
1 carton (32 ounces) reduced-sodium chicken broth
2 cups water

Steps:

  • In a 4- or 5-qt. slow cooker, combine all ingredients. Cover and cook on low 8-10 hours or until peas are tender.Freeze Option: Freeze cooled soup in freezer containers. To use, thaw overnight in the refrigerator. Heat through in a saucepan over medium heat, stirring occasionally.

1 (16 ounce) package dried split peas, rinsed
1 ham bone (meaty) or 2 ham hocks
1 cup carrot, diced
1/2 cup onion, chopped
1 cup celery, chopped
2 garlic cloves, minced
1 bay leaf
2 teaspoons parsley flakes
1/4 teaspoon dried marjoram, crushed
1/4 teaspoon dried thyme, crushed
1 tablespoon salt (to taste-definitely reduce if not using water)
1/2 teaspoon pepper
1 1/2 quarts hot water

Steps:

  • Layer ingredients in slow cooker in the order listed.
  • Pour in water. Do not stir!

1 tablespoon olive oil
1 medium onion, chopped
2 medium carrots, chopped
2 medium stalks celery, chopped
2 cloves garlic, finely chopped
1 teaspoon dried thyme leaves
1 carton (32 oz) Progresso™ reduced sodium chicken broth
3 cans (15.8 oz each) black-eyed peas, drained, rinsed
1 smoked ham hock or shank
2 tablespoons chopped fresh Italian (flat-leaf) parsley

Steps:

  • Spray 5-quart slow cooker with cooking spray.
  • In 12-inch skillet, heat oil over medium heat. Add onion, carrots and celery; cook and stir 5 to 6 minutes or until vegetables soften. Add garlic and thyme; cook and stir 1 minute. Transfer to slow cooker.
  • Add broth, black-eyed peas and ham hock to slow cooker.
  • Cover; cook on Low heat setting 7 to 8 hours or until meat on ham hock is tender and easily separated from bone.
  • Remove ham hock. Remove ham from bone; discard bone. Shred ham; return to slow cooker, and stir.
  • Skim off any excess fat from top of soup. Add parsley, and serve.
