PEACH COCONUT ICE CREAM
A lovely peach coconut ice cream.

Steps:
- Heat coconut milk and cream on the stove over medium high in a saucepan until hot and barely bubbling (bring to a low boil). Add sugar; mix to dissolve. Remove from heat. Pour mixture into a blender along with the chopped peaches. Allow mixture to cool about 10 minutes before pouring mixture in a large container; refrigerate a few hours until cold.
- If using an ice cream maker, follow the instructions on your ice cream maker accordingly.
- You can also try this
- without an ice cream maker
- by putting the ice cream mixture in a freezer-safe container, placing it in the freezer and stirring with a spoon every hour for roughly 8 - 10 hours. If you try this without an ice cream maker the consistency will not be as creamy as you'd get when using an ice cream maker, but the ice cream will still be great.
- If you have leftovers in the freezer, thaw the ice cream at least 10 minutes before attempting to dig in because it will be much stiffer than store-bought ice cream.
COCONUT PEACH PLANT-BASED ICE CREAM
A tropical delight for your taste buds, this ice cream is made from silky coconut milk, ripe Southern peaches, and a little extra love.

- If using a mixer (like a Kitchenaid attachment), freeze overnight. The mixing bowl needs to be as cold as possible when used.
- In a food processor or blender, blend 2 1/2 cups of the diced peaches.
- In a saucepan over medium heat, add coconut milk. Once warm, stir in coconut sugar until dissolved. Slowly add cornstarch and vanilla extract until dissolved.
- Remove mixture from heat and allow to cool completely. Let sit in the refrigerator for several hours or overnight. If you need to cool it faster, place in a Ziploc bag and submerge in an ice bath.
- Attach ice cream bowl to stand mixer. Set the mixer to the stir setting and pour in ice cream mixture. Add the final 1/2 cup of diced peaches. Allow to mix for about 30 minutes. If using a different machine, follow the necessary instructions.
- Scoop mixture into a plastic or metal container and freeze for about 6 more hours or overnight.

- In large bowl, mix together eggs and sugar until smooth; puree peaches in blender or food processor and stir 5 cups of puree into egg mixture. Stir in cream, half-and-half, vanilla and salt and mix well.
- Pour mixture into freezer canister of ice cream maker and freeze according to manufacturer's instructions.

- Puree peaches with the sugar and half-and-half in batches in a blender or food processor.
- In a gallon ice cream freezer container, mix together the peach mixture, sweetened condensed milk, evaporated milk, and vanilla. Pour in enough whole milk to fill the container to the fill line, about 2 cups.
- Follow the manufacturer's instructions to freeze the ice cream.

- In a small bowl, combine the coconut, almonds, sugar, flour and salt. Stir in egg whites and extract. Line a baking sheet with foil; grease foil well. Spread coconut mixture into a 9-in. circle on foil. , Bake at 325° for 20-25 minutes or until lightly browned. Cool on a wire rack. Refrigerate overnight., Place crust on a serving plate; spread with whipped cream. Combine peaches and sugar; spoon over cream. Cut into wedges. Serve immediately.

- In a small sauce pan melt the coconut milk on a low heat. Add the coconut sugar and stir until dissolved. Remove the milk & sugar from the heat and let cool.
- Add the cooled coconut milk and sugar to a blender with the peaches and vanilla extract. Set aside one peach to mix in at the end so that I would have small chunks mixed throughout the ice cream. Blend until completely smooth.
- For a no churn version add the ice cream mixture to a freezer safe container and place in the freezer for 4-6 hours. Every hour or so you'll need to take out the ice cream and mix by hand until it's done.
