- Preheat oven to 350 degrees. Spray a 9x13" pan with nonstick cooking spray. In a large bowl combine cake mix, butter and 1 egg; mix with fork just until crumbly. Set aside 1 ½ c. crumbs for topping. Press the remaining crumbs on bottom of prepared pan; Bake 10 minutes. Cut peach slices into 1" pieces; Spoon onto partially-baked crust. In a large bowl, combine cream cheese, sugar, 1 egg and vanilla extract; beat with mixer until creamy. Spread over top of peaches. Sprinkle with reserved crumbs; Bake 30 minutes. Chill at least 30 minutes before serving; Serves 12. Store leftovers in refrigerator.
PEACHY KEEN COBBLER
Out of all the cobblers I have tried, this is my favorite! I got this from one of my sisters, and changed it a litttle. Sometimes I add raspberries or blueberries, etc.

Steps:
- Preheat oven to 350°F.
- Place peaches in bowl, add 1 cup sugar. Stir and set aside for 30 minutes.
- Meanwhile, sift all dry ingredients together in another bowl.
- In separate bowl, add vanilla to milk. Stir dry ingredients into milk mixture.
- Melt butter and add to milk/flour mixture. Place peach/sugar mixture in 11"x 8" baking dish. Pour batter over top.
- Bake at 350*F. 30 minutes. Then turn up to 400*F. and bake another 15 minutes.
- Enjoy!

This is a just a "Peachy Keen" dessert to have when peaches are in their prime - simply delicious!!

- Heat oven to 350°F Spray a 7x11-inch tart pan with butter-flavored cooking spray.
- Cut 1-inch square notches in the corners of the dough. Press 5 sheets of the phyllo into the pan; fold edges over toward the center of the pan. Spray dough with cooking spray; sprinkle with 1 teaspoons cinnamon-sugar, repeat. Press phyllo against sides of tart pan to secure.
- Bake 10-15 minutes, until golden brown. Cool toss fruit slices with remaining cinnamon-sugar, spoon yogurt into shell, top with fruit. In saucepan, over medum heat melt preserves and brush on top of fruit.

- Soften dough at room temperature 5-10 minutes. Press into ungreased 9x13-inch baking pan. Bake for 12-15 minutes at 350° till golden brown. Spread preserves over crust. Sprinkle with half the almonds. Beat egg whites till soft peaks form. Gradually beat in sugar until stiff peaks form. Spread meringue over almonds. Sprinkle with remaining almonds. Bake 20-25 minutes or until lightly browned. Cool. Refrigerate.

- In a large saucepan, combine sugar, water and ginger; bring to a boil. Reduce heat; simmer 10 minutes. Cool completely. Pour syrup through a strainer into a covered container; discard ginger., Place liqueur and 1/4 cup ginger syrup in a blender. (Cover and refrigerate remaining syrup for another use.) Add peaches; cover and process until smooth., Transfer mixture to a 2-qt. pitcher; stir in wine. Serve over ice, topping with ginger ale. If desired, serve with mint and peach slices.

- Place rack in center of the oven then preheat to 350 degrees. Coat a 9" x 13" cake pan with cooking spray or line with parchment paper then set aside.
- In a medium-sized mixing bowl, whisk together ⅓ cup granulated sugar, brown sugar, cornstarch, cinnamon and nutmeg until well combined. Add diced peaches then toss until the peaches are evenly coated and the dry ingredients have dissolved. Stir in lemon or orange juice, lemon zest and salt then set aside. NOTE: When working with fresh fruit, the amount of thickener you need depends on how ripe the fruit is. If you’re using super sweet, ripe fruit, increase the cornstarch by 1 or 2 Tbsp.
- In a separate large mixing bowl, sift together flour, baking powder and salt. Cut the cold butter into flour mixture using a pastry cutter or fork until the mixture resembles coarse crumbs, then add ¾ cup granulated sugar and stir until combined.
- In a small bowl, whisk together beaten egg and vanilla then add to dry ingredients. Mix until well combined.
