NO-BAKE PEANUT BUTTER BANANA BARS



No-Bake Peanut Butter Banana Bars image

Using LG's freezer, this is a cross between chocolate-covered bananas and candy bars.

Number Of Ingredients 8

5 tablespoons unsalted butter, melted, plus more for pan
7 ounces chocolate wafers (about 32 wafers)
1 cup confectioners' sugar
1/8 teaspoon salt
cup creamy peanut butter
3 ripe but firm bananas, trimmed and cut into 1/2-inch slices
1 cup semisweet chocolate chips
1/2 cup roasted lightly salted peanuts, chopped

Steps:

  • 1. Butter an 8-inch square baking pan with nonstick cooking spray, then line with parchment paper, with overhang on all sides. 2. Process the wafers in a food processor until fine crumbs form. (You should have 1 1/2 cups crumbs.) Add the confectioners' sugar and salt and pulse until well mixed. Add the butter and 3/4 cup peanut butter and pulse, scraping the bowl occasionally, until evenly moistened. 3. Transfer to the prepared pan and spread in an even layer. Arrange the banana slices in a single layer on top and press in firmly. Freeze until set, about 30 minutes. 4. Meanwhile, combine the chocolate chips and remaining 1/4 cup peanut butter in a heatproof bowl. Set over a saucepan of simmering water and melt, stirring occasionally, until smooth. Pour over the banana layer and spread evenly. Sprinkle the peanuts on top and gently press into the chocolate mixture. 5. Freeze until firm, at least 4 hours. Lift out of the pan with the parchment overhang. Cut into 2- by 1-inch bars. Bars can be frozen in an airtight container for up to 1 week.

2 cup oats, dry

Steps:

  • Preheat oven to 350°F and line the bottom of an 8 x 8 inch glass dish with parchment paper. (We also used our fingers to grease the sides of the dish with coconut oil.)
  • Mash the bananas and mix together with oats and peanut butter.
  • Spread the dough evenly in the prepared dish, then sprinkle with walnuts and chocolate chips. Lightly press the nuts and chocolate into the bars.
  • Bake for 18-20 minutes or until an inserted toothpick comes out clean. Cool for 20 minutes in the pan, then slide a spatula under the parchment paper and carefully transfer the whole uncut bar onto a rack for further cooling. (You can cut the bars at this point, and eat them warm! The more time you give them to cool, the easier it will be to cut them.)

20 thin chocolate wafers
2 tablespoons unsalted butter, melted, plus more for pan
4 ounces cream cheese
1 1/4 cups confectioners' sugar
1 cup heavy cream
1 cup heavy cream
1/2 cup peanut butter
3 to 4 bananas
1/2 cup chopped roasted peanuts

Steps:

  • Make the crust: Preheat oven to 350 degrees. In a food processor, process cookies until crumbs form. Add butter; pulse until mixture holds together when squeezed. Prepare crust as directed below. Bake until crust is firm and dry to the touch, 15 to 20 minutes. Cool to room temperature.
  • Make the filling: In a clean food processor, process cream cheese, sugar, heavy cream, peanut butter, and salt until smooth and light, scraping sides of bowl as needed.
  • Peel bananas; halve lengthwise. Spread half the cream-cheese mixture over crust; top with a snug layer of bananas. Cover with remaining cream-cheese mixture, smoothing top. Sprinkle with peanuts; cover with plastic wrap. Freeze until firm, at least 6 hours.
  • To remove, wipe outsides of pan with a hot towel; run a knife around inside edge (between paper and pan). Gently pull on paper to lift out of pan. Cut into 12 rectangles.
  • Make the crust:Butter an 8-inch square baking pan. Line it with 2 crisscrossed rectangles of parchment paper.Press crust firmly into bottom and slightly up sides. Use the bottom of a measuring cup or small bowl to help pat crumbs in evenly.

2 cups old fashioned oats
2 cups creamy peanut butter
1 cup nutella, spread
1/2 cup honey
1/4 cup ground flax seeds
1/4 cup slivered almonds

Steps:

  • Place peanut butter and nutella in microwave safe bowl and heat till melted (about 1 minute to 1 1/2 minutes).
  • Pour all other ingredients in large bowl.
  • Mix PB & Nutella with other ingredients and stir until well combined.
  • Line a 9x13 pan with aluminum foil and then spray with cooking spray. Dump granola into 9x13 pan and spread until even and packed down.
  • Chill for at least an hour. Cut into bar size portions and individually wrap in saran wrap and store in ziploc bag in fridge!

1 tablespoon peanut butter
2 teaspoons nutella or 2 teaspoons other chocolate hazelnut spread
1 teaspoon flax seed (can be omitted)

Steps:

  • Slice banana into little disks, about 1-1.5 cm thick.
  • Mix the remaining ingredients, and dab the mixture onto half of the banana slices.
  • Top each banana slice with a peanut butter mixture one, squishing together like a sandwich.
  • Poke each mini sandwich with a tooth pick if you desire, or if you are serving at a banquet, pot luck or lunch-in.
