This is a paleo-friendly, gluten-free Asian-inspired zoodle recipe. Don't worry about going back for seconds with all those veggies! This is my new go-to!

- Heat olive oil and 1 tablespoon teriyaki sauce in a large skillet over medium heat. Add carrot, bell pepper, and onion; cook and stir until onions are translucent, about 5 minutes. Stir in bok choy, zucchini, and garlic powder. Drizzle on remaining teriyaki sauce. Cook, stirring occasionally, until zucchini is tender, about 7 minutes.

- In a medium bowl, whisk together the aminos, sweetener of choice, vinegar, sesame oil, garlic, ginger, arrowroot starch and salt & pepper, to taste.
- In a large bowl, combine shrimp with salt, pepper, and drizzle 1-2 tablespoons of sauce over the shrimp.
- Heat 1-2 tablespoons of oil in a large pan on medium - medium-high heat. Add shrimp and sear for 1 minute, turning halfway, until almost pink and cooked through. Add in the bell peppers and cook for another minute, until slightly softened. Pour in the sauce and turn the heat to high. Season to taste with salt, black pepper and/or red chili flakes.
- *If cooking the zucchini noodles, add into the pan and use tongs to toss and coat with sauce. Cook for 1-2 minutes until zucchini is just tender but still firm. Be careful not to overcook.

- Start off by using the spiraliser to create vegetable noodles. To do this simply use a peeler to scrap the skin off the zucchini, it should come off quite easily. Then wedge the zucchini in between the spike and insert it into the protruding metal piece. Rotate the lever clockwise until the zoodles exit the other side, using a dish to catch the noodles.
- Put the veggie noodles into a colander, massage with 1tsp off pink salt and set aside for 10-15 minutes.
- After the given time you will notice the zoodles begin to sweat. At this stage wash and drain the zoodles.

- Cut the chicken into one-inch pieces, trimming away any excess fat. In a medium bowl, whisk together the chicken marinade. Add the chicken and toss well to evenly coat. Set aside.

- Cut and slice remaining veggies as noted above, making sure to keep the red pepper and mushrooms separate from the other ingredients. Then, heat a wok or large sauté pan over medium-high heat.
- Once the pan is hot, add 1 tablespoon of toasted sesame oil. Add the diced green onions and sauté a minute or two until fragrant. Then, add the chicken making sure to evenly distribute throughout pan. Allow chicken to sear for a minute. Then, gently toss to cook all sides, just until chicken is opaque (about 2 minutes).
