YUM!!! This is an excellent frosting which incorporates two of my favorite things...peanut butter and cream cheese and it's also easy to make. I used it to frost a banana cake I made (recipe #50349-which is an excellent cake recipe) and it was soooo good! I found this recipe on another recipe website. I'm thinking it would also be great on chocolate cake.

1 (8 ounce) package cream cheese, softened
1/2 cup creamy peanut butter (would also be good with crunchy peanut butter)
1 teaspoon vanilla
3 -3 1/2 cups powdered sugar
2 tablespoons milk or 2 tablespoons cream

Steps:

  • Mix together cream cheese and peanut butter with mixer until smooth.
  • Add vanilla and powdered sugar, 1 cup at a time, along with the milk or cream and beat until spreading consistency.
  • (I used only 3 cups powdered sugar and 2-3 tbsp. of milk).
  • Spread on cooled cake.

1 cup peanut butter
2 eggs
2 cups buttermilk
4 cups powdered sugar

2 Tbs. milk

Steps:

  • Place sugar, butter, peanut butter and eggs in a mixing bowl and mix up with an electric mixer until well combined and smooth.
  • Mix self-rising flour with baking soda. Add flour to wet mixture alternately with the buttermilk.
  • Bake in three layer cake pans at 350 for about 35 minutes. Allow to cool ten minutes in pan before turning out to cool completely.

1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup vegetable oil (180 ml) (canola oil works too)
1 1/2 cups light brown sugar (300 grams) (or 3/4 cup dark brown sugar and 3/4 cup granulated sugar)
3/4 cup smooth peanut butter (180 grams)
3 large eggs (room temperature)
2 teaspoons vanilla extract
1/3 cup sour cream (80 ml) (room temperature)
3/4 cup milk (180 ml) (room temperature)
3/4 cup unsalted butter (170 grams) (softened but still slightly firm to the touch)
2 ounces cream cheese (56 grams) (full-fat, brick style )
3/4 cup peanut butter (180 grams)
3 1/2 -4 1/2 cups powdered sugar (420 - 540 grams)
1-2 tablespoons heavy cream (15-30 ml) (if needed)

Steps:

  • Preheat the oven to 350F (180C or 160C fan-forced).
  • Line the bottom of two 8-inch round cake pans with baking paper. Lightly grease and flour the sides. Be sure that the sides of the pans are at least 2 inches (5 cm). See recipe notes for pan size options.
  • Whisk together the flour, baking powder, baking soda and salt in a medium bowl.
  • Beat together the oil, light brown sugar and peanut butter in a very large bowl.
  • Mix in the eggs and vanilla extract. Stop mixing once you no longer see pieces of egg.
  • Using a hand-held metal whisk, whisk in the sour cream.
  • Whisk in about 1/2 of the flour mixture (again, whisking by hand).
  • Carefully whisk in the milk.
  • Whisk in the rest of the flour mixture until combined. Stop mixing once combined.
  • Divide the batter evenly between the 2 prepared pan. Bake both on the middle rack of the oven for about 28-33 minutes, or until an inserted toothpick comes out clean and you see the edges starting to pull away from the pan.
  • Cool the cakes fully.
  • In a large bowl using an electric mixer, beat the butter until smooth.
  • Mix in the cream cheese, followed by the peanut butter.
  • Starting with the mixer on a low speed, beat in about 2 cups of powdered sugar.
  • Mix in the rest of the powdered sugar about 1/2 cup at a time until the desired sweetness is reached. If the frosting seems too thick, beat in 1-2 tablespoons of cream, 1 tablespoon at a time.
  • Ensure the cake layers are fully cooled before assembling the cake.
  • If the tops of your cakes are domed, use a serrated knife to gently saw off the rounded tops.
  • Place 1 cake layer bottom side up on the plate or cake stand that you plan to serve it on.
  • Frost the top with about 1/3 of the frosting.
  • Place the second cake layer on top, with the bottom facing up.
  • Frost a thin layer of frosting around the sides to seal in any crumbs. Optionally, place the cake in the fridge for 20-30 minutes for the frosting to firm up.
  • Frost the sides and top with swirls of peanut butter frosting. Optionally, top the cake with peanut butter cups.

1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature, plus more for greasing the pans
2 1/2 cups all-purpose flour
1 teaspoon baking powder
3/4 teaspoon fine salt

1 cup packed light brown sugar
2/3 cup smooth peanut butter
1/2 cup granulated sugar
4 large eggs
1 teaspoon pure vanilla extract
1 cup milk
1 1/4 cups granulated sugar
5 large egg whites
Pinch fine salt
1 1/4 cups smooth peanut butter
4 sticks (1 pound) unsalted butter, cut into 1 1/2-inch chunks, at room temperature

Steps:

  • For the cake: Position an oven rack in the center of the oven, and preheat to 350 degrees F. Butter two 9-inch round cake pans, and line the bottom of each with a round piece of parchment. Sift the flour, baking powder, salt and baking soda together onto a piece of parchment or into a large bowl.
  • Beat the butter, brown sugar, peanut butter and granulated sugar in a large bowl with an electric mixer on medium-high speed until the mixture is light and creamy, about 5 minutes. Scrape down the side of the bowl as needed. Add the eggs, 1 at a time, beating well after each addition. Continue beating until the mixture is light and creamy, about 2 minutes. Beat in the vanilla. Reduce the mixer speed to medium-low, and add the flour mixture in 3 additions and the milk in 2 additions, beginning and ending with the flour. Beat until just combined.
  • Evenly divide the batter among the prepared cake pans. Bake until a toothpick inserted in the center comes out clean, 30 to 35 minutes. Let the cakes cool in the pans for a few minutes, then transfer them to a cooling rack to cool completely. Invert each onto a cooling rack, and remove the parchment. (The cakes can be stored at room temperature, wrapped in plastic wrap, for 1 day.)
  • For the buttercream: Bring a few inches of water to a boil in a saucepan large enough to hold the heatproof bowl of a stand mixer above the water.
  • Whisk together the granulated sugar, egg whites and salt in the stand mixer bowl. Set the bowl above the boiling water, and whisk until the mixture is warm to the touch and the sugar has completely dissolved. Transfer the bowl to the stand mixer fitted with the whisk attachment, and beat at medium-high speed until cool and the whites hold stiff peaks, about 5 minutes. Beat in 3/4 cup of the peanut butter until smooth. Beat in a couple of chunks of butter at a time, making sure the pieces are incorporated before adding more. Continue beating on medium-high speed until the buttercream thickens into stiff peaks. (The mixture at some point may appear to be very liquidy, but continue to beat.) Beat in the vanilla.
  • To assemble: Slice each cake in half, for a total of 4 cake rounds. Spread the remaining 1/2 cup peanut butter on 3 of the rounds, dividing evenly. Put 1 round, peanut butter-side up, on a cake stand or serving platter, and spread about 3/4 cup of the buttercream on top, leaving about a 1/2-inch border all around. Repeat with 2 more layers of peanut-buttered cake and buttercream. Place the last cake round (without the peanut butter) on top. Frost the outside of the cake with the remaining buttercream. Refrigerate the cake until it sets up (this makes it possible to cut neat slices), at least 4 hours up to overnight. Sprinkle the top with peanut brittle before serving. Serve chilled or at room temperature.

PEANUT BUTTER FROSTING:
2 packages (8 ounces each) cream cheese, softened
1 can (14 ounces) sweetened condensed milk
1-1/2 cups peanut butter
1/4 cup salted peanuts, chopped
3 milk chocolate candy bars (1.55 ounces each), broken into squares

Steps:

  • In a small saucepan, whisk 1 egg until blended. Stir in 2/3 cup sugar, 1/2 cup milk and chocolate. Cook and stir over medium heat until chocolate is melted and mixture just comes to a boil. Remove from the heat; cool to room temperature., In a large bowl, cream shortening and remaining sugar until light and fluffy. Add remaining eggs, one at a time, beating well after each. Beat in vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture alternately with remaining milk, beating well after each addition. Stir in chocolate mixture., Pour into three greased and floured 9-in. round baking pans. Bake at 325° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely., For frosting, beat cream cheese in a large bowl until smooth. Gradually add milk and peanut butter until creamy.
