Peanut Butter Pudding is scrape-the-pan delicious. And this homemade pudding is just as easy as a box mix, but so much more scrumptious!

1/2 cup brown sugar, lightly packed
1/2 tsp salt
2 cups whole milk
3 Tbsp cornstarch
1/2 cup peanut butter, creamy
1 tsp vanilla extract

Steps:

  • Whisk the cornstarch with a little bit of the milk until very smooth and the cornstarch is completely dissolved. Add this mixture back to the rest of the milk, and set aside.
  • In a medium, heavy bottomed saucepan, add the brown sugar along with a couple tablespoons water and melt the mixture until it starts to bubble.
  • Add the milk and the salt to the saucepan, and whisk everything together. It's ok if the sugar seizes up, it will melt again as the pudding cooks.
  • Over medium heat, continue to cook the mixture, stirring constantly, until it just comes to a boil.
  • Remove from the heat and whisk in the peanut butter and the vanilla extract until completely smooth.
  • Pour the pudding into your pudding cups, and allow to chill in the fridge for a few hours, or up to overnight. Serve with whipped cream and crushed peanuts, if desired.

½ cup (100g) granulated sugar
3 tablespoons cornstarch
¼ teaspoon kosher salt
3 cups (735g) milk
2 tablespoons butter
¾ cup (193.5g) peanut butter
1½ teaspoons vanilla extract

Steps:

  • In a saucepan over medium heat, combine the sugar, cornstarch, and salt. Slowly add in milk, whisking constantly until all of the sugar is dissolved.
  • Increase to medium-high heat and bring the mixture to a boil.
  • Reduce heat to medium-low. Cook, whisking constantly for 2 more minutes.
  • Remove the pan from the heat and stir in the butter, peanut butter, and vanilla. Whisk until smooth and creamy.
  • Transfer the pudding to a bowl, cover with plastic wrap (making sure to press down on the plastic wrap so it touches the pudding), and let it chill in the refrigerator for at least an hour. Serve chilled.

Change them up a little and customize to your liking (or your pantry's contents): Use crushed chocolate sandwich cookies instead of vanilla wafers, or add a little bit of strawberry jam for a peanut butter and jelly spin!

1/2 cup granulated sugar
3 cups whole milk
3 large egg yolks, beaten
1 tablespoon cornstarch
1/8 teaspoon kosher salt
1 cup smooth natural peanut butter
2 large ripe bananas
32 round vanilla wafer cookies
1/2 cup heavy cream
1 tablespoon confectioners' sugar
2 tablespoons honey-roasted peanuts, roughly chopped

Steps:

  • Whisk together the granulated sugar, 1/3 cup of the milk, egg yolks, cornstarch and salt in a large bowl.
  • Heat the remaining 2 2/3 cups milk in a large saucepan over medium heat until hot but not boiling. Whisk half into the egg mixture until smooth, then gradually whisk the egg mixture into the milk in the saucepan. Bring to a boil, whisking constantly, and cook, continuing to whisk, until the mixture thickens, 6 to 8 minutes. Remove the saucepan from the heat, and whisk in the peanut butter until melted. Transfer to a medium bowl, and let the pudding cool to room temperature, stirring frequently to prevent a skin from forming, about 45 minutes.
  • Cut the bananas into small chunks. Put an even tablespoon of pudding in the bottom of a 5-ounce paper cup; top with 2 cookies and then 1 tablespoon of bananas. Repeat with another layer of pudding, cookies and bananas. Top with a final layer of pudding. Repeat with the remaining ingredients to make 8 pudding cups. Cover the cups with plastic wrap, and refrigerate long enough for the cookies to soften, at least 6 hours and (preferably) overnight.
  • When ready to serve, whip the heavy cream and confectioners' sugar with an electric mixer in a large bowl until medium-to-stiff peaks form. Top each cup with a dollop of whipped cream, and sprinkle with the chopped peanuts.

1 carton (12 ounces) frozen whipped topping, thawed, divided
2-2/3 cups cold 2% milk
1 package (3.9 ounces) instant chocolate pudding mix
1 package (3.4 ounces) instant vanilla pudding mix
1 milk chocolate candy bar (1.55 ounces), coarsely chopped

Steps:

  • Place flour and butter in a food processor; cover and process until mixture resembles coarse crumbs. Add 1 cup cashews; pulse a few times until combined. , Press into a greased 13x9-in. baking dish. Bake at 350° for 25-28 minutes or until golden brown. Cool completely on a wire rack. , In a small bowl, beat the cream cheese, peanut butter and confectioners' sugar until smooth. Fold in 1 cup whipped topping.   • Melt chocolate chips and coconut oil in a small saucepan over low heat, stirring constantly, until about half of the chocolate chips are melted (~1 minute). Remove the pan from the heat and stir until the chocolate is completely melted. You could also do this in the microwave, melting the chocolate in 30-second increments.
  • Line a mini muffin pan with 15 mini muffin liners (paper or silicone). If you don’t have a mini muffin pan, you can place the liners on a plate (preferably with a raised edge). Make sure the muffin pan or plate will fit in your freezer before continuing.
  • Fill the liners with 1 teaspoon of the chocolate mixture. Spread the chocolate in the liners until it's 3/4 of the way up the sides. The best way to do this is to pick up the muffin liner and move the chocolate around in the liner until gravity spreads it evenly. Continue until you have 15 chocolate shells (as the original recipe is written). Reserve remaining melted chocolate for the top layer of the peanut butter cups.
