PEANUTTY ASIAN LETTUCE WRAPS

Steps:
- Whisk together first five ingredients until smooth. In a large skillet, cook and crumble turkey with carrot over medium-high heat until no longer pink, 6-8 minutes; drain. Add ginger and garlic; cook and stir 1 minute. Stir in sauce mixture, water chestnuts, snow peas and green onions; heat through., Serve in lettuce leaves. If desired, drizzle with additional hoisin sauce.

PEANUT GROUND TURKEY LETTUCE WRAPS
These Peanut Ground Turkey Wraps are so easy to throw together and full of flavor!

Steps:
- In a small microwave safe bowl, heat water until warm.
- Add in peanut butter and whisk until smooth.
- Stir in soy sauce, sriracha, honey, ground ginger, and sesame and oil and stir to combine. Set aside.
- In a large skillet, add in olive oil over medium heat.
- Add in ground turkey and cook until no longer pink, 8-10 minutes.
- Add in cauliflower rice and simmer. If frozen, let simmer an additional 5-10 minutes to ensure it's thawed and excess water has been removed.
- Stir in peanut sauce to thoroughly coat dish. Set aside.
- Set out butter lettuce and top with a small scoop of ground turkey mixture.
- Top with your desired toppings. I like to use shredded carrots, avocado, peanuts, cilantro, green onions, and lime juice.
- Serve and enjoy!

- Heat olive oil in a pan over medium-high heat. Add onion and soy sauce; cook until tender, about 5 minutes. Stir in garlic; cook until fragrant, about 1 minute. Add turkey and cook, breaking into smaller pieces, until no longer pink, about 5 minutes.
- Make the sauce by whisking soy sauce, rice vinegar, brown sugar, sesame oil, red pepper flakes, and ginger together in a small bowl. Pour over turkey mixture and simmer until slightly reduced, 2 to 3 minutes.

- In a large nonstick skillet coated with cooking spray, cook turkey over medium heat until no longer pink., Coarsely chop stir-fry vegetables; add to the pan. Stir in the teriyaki sauce, hoisin sauce, peanut butter, ginger, vinegar and oil. Stir-fry over medium-high heat for 5 minutes. Add garlic; cook 1 minute longer., Remove from the heat; stir in onions. Place a scant 1/2 cup turkey mixture on each lettuce leaf; fold lettuce over filling. - In a large mixing bowl, combine the ground turkey, lemon grass paste, fish sauce and salt/pepper until thoroughly mixed and let sit for 10 minutes.
- In a large saucepan or wok, heat peanut oil and stir fry the green onions, serrano peppers, ginger, mushrooms, water chestnuts, and garlic until soft (about 4 mins). Now add the ground turkey and hoisin sauce then cook until done (turkey is brown).
- Chop the fresh herbs as above and place each in an individual serving container (small bowl or ramekin).
- To make the sauce: In a small mixing bowl, soak the crushed red pepper in lime juice for several minutes Add the garlic, sugar, and fish sauce and stir to dissolve the sugar. Transfer to a serving container and add the grated carrots and serve at room temperature Refrigerated, the sauce will keep in a tightly covered container for up to 5 days.
- To Serve: Arrange lettuce on a large platter surrounded by the containers of chopped herbs, etc. and the sauce. To make a wrap take a lettuce leaf in hand, scoop a large tablespoon of meat on to lettuce leaf, then add any herbs that you like. Add a teaspoon of sauce onto the mixture on the leaf and then roll and eat. Yum!

- Heat peanut oil in heavy large skillet over medium-high heat. Add onion and sauté until beginning to brown, about 3 minutes. Add turkey and sauté until brown and cooked through, breaking up with back of spoon, about 7 minutes. Add peanut sauce, hoisin sauce, and 1 tablespoon soy sauce; heat through. (Can be made 8 hours ahead. Cover and refrigerate. Reheat in microwave or skillet, adding water by tablespoonfuls to moisten if necessary, before continuing.) Stir in cucumber and chopped mint. Season with salt and pepper.
- Transfer turkey mixture to medium bowl. Place mint sprigs and lettuce leaves on platter. To make wraps, spoon turkey mixture onto lettuce leaf, add a few mint sprigs, fold in sides over filling, and roll up. Pass additional soy sauce alongside wraps for dipping.
