1/2 cup peanut butter (I used creamy Skippy)
1/4 cup powdered sugar
0.5 (5 ounce) bag hershey's milk chocolate chips
24 -30 small pretzel twists (I like Snyder's)

Steps:

Stir powdered sugar and peanut butter together until combined. This will take some time and a little elbow grease but it will come together eventually.
Melt the chocolate chips. I put mine in a glass Pyrex measuring cup and microwave for 1 minute, stir, and microwave 30 seconds more.
Sandwich about 1t. of the peanut butter mixture between two pretzels.
Dip in melted chocolate (I use a fork to fish the pretzels out and bang off the excess chocolate).
Let set up for several hours (overnight is best). Don't freeze as the peanut butter filling will cause the chocolate to sweat when they thaw out.

1 cup (2 sticks) unsalted butter, at room temperature
1 cup sugar
1/2 cup unsweetened cocoa powder
1 teaspoon vanilla extract
1/2 teaspoon kosher salt
1 large egg, at room temperature
1 1/2 cups all-purpose flour
1/2 cup peanut butter chips
1/2 cup mixed chocolate chips, such semisweet, bittersweet or white chocolate chips
1 pint chocolate-peanut butter ice cream, softened slightly

Steps:

Preheat the oven to 350 degrees F.
Combine the butter and sugar in a large bowl. Using a hand mixer, beat the mixture until light and creamy, about 2 minutes. Add the cocoa powder, vanilla, salt and egg and beat again until smooth and combined. Add the flour, peanut butter chips and chocolate chips. Use a rubber spatula to stir until just mixed.
Line 2 baking sheets with parchment paper. Scoop out 2-inch balls of dough. Place 14 on each baking sheet. Bake, rotating halfway through, until the cookies are just set around the edges and the tops look dry, about 15 minutes. Let cool for 15 minutes on the baking sheets. Remove to a wire rack to cool completely.
When the cookies are completely cool, scoop a heaping tablespoon of the ice cream onto the flat side of one cookie. Top with another cookie and press together gently. Continue with the remaining cookies and ice cream, freezing the sandwiches as you go.

12 tablespoons unsalted butter
1 cup graham cracker crumbs
1 cup confectioners' sugar
1 teaspoon vanilla extract
1 cup plus 1 tablespoon creamy peanut butter
1 cup semisweet chocolate chips
About 1 1/2 cups pretzel sticks

Steps:

Line an 8- or 9- inch square baking pan with foil.
Melt 8 tablespoons of the butter and add to a large bowl. Add the graham cracker crumbs, sugar, vanilla and 1 cup of peanut butter and stir until well combined. Transfer the peanut butter mixture to the prepared baking pan and smooth with an offset spatula to create an even layer.
Combine the chocolate chips, the remaining 4 tablespoons butter and the remaining tablespoon peanut butter in a medium microwave-safe bowl and microwave in 30-second intervals, stirring after each, until melted. Alternatively, this can be done over a double boiler. Pour the chocolate mixture over the peanut butter and smooth with an offset spatula. Arrange the pretzel sticks on the surface of the chocolate, pressing them lightly to adhere. Refrigerate until hardened, about 1 1/2 hours. Cut into squares to serve.

1 tablespoon peanut butter
2 cups pretzels, crushed

Steps:

Mix the chips and the peanut butter in a microwaveable bowl.
Heat for 2 minutes in the microwave.
Stir and then add in pretzels and mix completely.
Pour onto greased cookie sheet and place in refrigerator for 5-10 minutes.
Break into pieces and store in an airtight container.
