Steps:
- Stir cream cheese, Cheddar, pear, scallion white, salt, and pepper together in a medium bowl.
- Coat a large piece of plastic wrap with cooking spray. Scoop the cheese mixture onto it. Using the plastic wrap to help you, form the cheese mixture into a ball, then completely wrap in plastic. Refrigerate for at least 1 hour and up to 2 days.
- Just before serving, combine pecans and the reserved scallion greens in a shallow dish. Roll the cheese ball in the mixture, pressing to adhere.

- In a small bowl mix spread ingredients. set in the middle of a decorative platter. Arrange the wedge of rouqefort, the wheels of brie and the port du salut on a decorative platter. Surround with the fruits. Serve the pears and peaches whole, the oranges segmented. Leave the tops of the berries on. Have dessert plates for all, and knives, napkins etc. Put the baguette on a bread board. Arrange the cracker on their own plate. Serve with a good dessert wine or Champagne!

My Grams used to make this often when I was growing up. I just loved it and still do! Hubby requests this a lot and so does the picky daughter! It's so simple, yet tastes so good. Especially on hot summer evenings.

PICKLED PEARS & CHEESE PLATTER

- Put the vinegar, sugar and spices into a large saucepan with 500ml of water. Heat gently to melt the sugar. Meanwhile, peel the pears, halve, then scoop out the core with a teaspoon or melon-baller. Add the pears to the pan, they should be just about covered with the liquid, then bring to a simmer for 25-30 mins. Test the pears with a tip of a knife - they should be just tender. Lift out with a slotted spoon and put into a large Kilner jar or a few smaller ones. Boil the liquid down to about 600ml, then pour over the pears to cover. Seal and store in the fridge for up to a week, before serving.
- On Christmas Day, remove the pears from the fridge so they come up to room temperature. To serve, thickly slice and toast the bread and slice the cheese into thin wedges. Lift the pears from the jar and layer up with the cheese on a large platter or board, then scatter with some leaves. Serve with the bread.

- To create a cheese platter to serve alone or with fruit at the end of a meal, select cheeses with a range of tastes from delicate, mild, and buttery, to strong, rich, and nutty, to salty, sharp, and pungent. Choose a balance of textures from soft and voluptuous to hard and crumbly. Traditionally, a cheese course moves from mild cheeses to sharp to rich, but for the simplest presentation, arrange cheeses together on a platter with crackers (try crackers seasoned with pepper or rosemary) or thin slices of baguette. A few walnuts and a glass of port might be welcome also.

- Grapes with Gorgonzola, Brie, or Stilton

- In the fall and winter, lots of apple varieties are in season. Choose a couple you're not familiar with and some old favorites. Serve the apples with several cheeses and sample all the different combinations of apples and cheese.
