STEAK-PEPPERCORN SALAD



Steak-Peppercorn Salad image

2 8-ounce beef eye round steaks
4 teaspoons dijon mustard
Kosher salt and freshly ground black pepper
3 tablespoons extra-virgin olive oil
8 ounces white mushrooms, halved or quartered
1/4 cup grated parmesan cheese, plus more for topping
3 tablespoons low-fat sour cream
2 to 3 teaspoons brined green peppercorns, drained and chopped, plus 1 teaspoon brine from the jar
2 large romaine lettuce hearts, chopped
3 stalks celery, sliced
1 cup cherry tomatoes, halved or quartered
2 cups whole-wheat croutons

Steps:

  • Rub the steaks all over with 1 teaspoon mustard and 1/4 teaspoon each salt and black pepper. Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the steaks and cook until browned, 5 to 6 minutes per side for medium rare. Transfer to a cutting board. Wipe out the skillet.
  • Heat 1 more tablespoon olive oil in the skillet. Add the mushrooms and cook, undisturbed, until golden, about 2 minutes. Season with salt and continue to cook, stirring, until just soft, 3 more minutes.
  • Whisk the parmesan, sour cream, 3 tablespoons water, the remaining 1 tablespoon olive oil and 3 teaspoons mustard, the green peppercorns and brine, and 1/4 teaspoon each salt and black pepper in a large bowl. Add the mushrooms, lettuce, celery, tomatoes and croutons and toss. Cut the steak into bite-size pieces; add to the bowl and toss. Divide among plates and top with more parmesan.

Steps:

  • 1. In a large skillet over moderately high heat, sauté the bacon, stirring occasionally, until crisp, 10 to 12 minutes. Using a slotted spoon, transfer to a paper-towel-lined plate to drain. Set aside.
  • 2. In a medium bowl, whisk together the oil, vinegar, salt, and pepper. In a large bowl, toss the spinach with half the dressing.
  • 3. Divide the spinach among 4 plates. Top with the pear slices. Sprinkle the bacon, cheese, red pepper, and shallot over each plate. Drizzle with the remaining dressing and serve immediately.

2 Bartlett pears, ripe but firm
5 teaspoons extra-virgin olive oil
1 teaspoon honey
1/2 teaspoon dry mustard
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/2 medium red onion, thinly sliced into rings
2 Belgian endive, sliced crosswise into 1-inch pieces
1 watercress, tough stems removed
1/4 pound Stilton or Roquefort cheese, crumbled
1 1/2 teaspoons red-wine vinegar
1 teaspoon Worcestershire sauce

Steps:

  • Cut pears lengthwise into quarters. Peel, core, and cut each quarter into approximately 1-inch chuncks; place in a small bowl. Add 2 teaspoons olive oil, honey, dry mustard, salt, and pepper, and toss well.
  • Place a medium skillet over medium-high heat. Add pears and onions, and cook, shaking the skillet a few times, until pears are golden brown and onions are slightly wilted, about 3 minutes.
  • Transfer pears, onions, and any juices to a bowl. Add endive, watercress, cheese, remaining olive oil, vinegar, and Worcestershire sauce, and toss together gently. Season to taste with salt and pepper, and serve warm.

4 cups fresh arugula
1 medium pear, peeled and cut into 1/2-inch cubes

1 large boston lettuce, torn into bite-sized pieces
1 tablespoon olive oil (butter can also be used)
2 firm but ripe bosc pears or 2 Anjou pears, cored and cut lengthwise into 8 wedges
1/4 cup cider vinegar
1/2 teaspoon Dijon mustard
1/2 teaspoon sugar
1/4 teaspoon salt
1/8 teaspoon black pepper, coarsely ground

Steps:

  • In large serving bowl, place lettuce.
  • In 12-inch nonstick skillet, heat oil (or butter) on medium-heat 1 minute. add pears and cook 10 to 15 minutes or until they begin to soften and turn golden.
