Creamy flan gets a Southern-style twist in this crowd-pleasing dessert. As elegant as it looks, it's actually a snap to make.

- Heat oven to 350°F.
- Bring 3/4 cup sugar and water to boil in small saucepan on medium heat, stirring occasionally. Cook 6 to 8 min. or until deep golden brown. (Do not stir.) Pour into 9-inch round pan; tilt pan to evenly cover bottom with syrup.
- Blend milk and cream cheese in blender until smooth. Add eggs, vanilla, 1 cup nuts and remaining sugar; blend just until smooth. (Do not overmix). Pour over syrup in pan; cover. Place filled pan in larger pan; add enough water to larger pan to come halfway up side of smaller pan.
- Bake 50 min. to 1 hour or until knife inserted near center of flan comes out clean. Cool 10 min. Carefully transfer flan from water-filled pan to wire rack; cool completely.
- Refrigerate several hours or until chilled. Unmold flan onto plate. Garnish with remaining nuts. Serve topped with COOL WHIP.

- In a heavy saucepan, cook sugar and water over medium-low heat until melted and golden, about 15 minutes. Brush down crystals on the side of the pan with additional water as necessary. Quickly pour into an ungreased 2-qt. round baking or souffle dish, tilting to coat the bottom; let stand for 10 minutes. , Preheat oven to 350°. In a bowl, beat the cream cheese until smooth. Beat in eggs, 1 at a time, until thoroughly combined. Add remaining ingredients; mix well. Pour over caramelized sugar. , Place the dish in a larger baking pan. Pour boiling water into larger pan to a depth of 1 in. Bake until the center is just set (mixture will jiggle), 50-60 minutes. , Remove dish from a larger pan to a wire rack; cool for 1 hour. Refrigerate overnight. , To unmold, run a knife around edges and invert onto a large rimmed serving platter. Cut into wedges or spoon onto dessert plates; spoon sauce over each serving.

Steps:
- Caramel.
- Put the sugar and water in a small saucepan and stir over low heat until the sugar dissolves. Bring to the boil and cook until golden.
- Pour into an 18cm sandwich pan or 6 individual moulds (coated lightly with oil). Rotate the pan or moulds until the caramel coats the sides and base. Set aside.
- Heat the evaporated milk and fresh milk with the split vanilla pod - but don't boil. Remove from the heat and let stand for 5 minutes.
- Beat the eggs and sugar together until blended. Pour the egg/sugar mix slowly into the milk, stirring constantly.
- Remove the vanilla pod and pour the filling into the caramel lined pan or moulds.
- Put the custard into a baking dish with hot water to come halfway up the sides.
- Bake in a moderately warm oven 160C (325F) for 25 minutes (individual moulds) or 45 minutes (pan) - or until a knife inserted in the centre comes out clean.
- Cool, then chill for a few hours or overnight.
- Unmould on to a serving dish or individual plates. Serve with pouring cream.

SIMPLY THE BEST MEXICAN FLAN
I had this when I was in Sanfo visiting a friend. its so light and sweet. Try it, you' ll know what I mean.

Steps:
- Heat 1/2 cup sugar in sauce pan to make caramel.
- Watch closely till it turns amber, swirl now and then.
- Pour to individual 5 ramekin cups.
- Let cool to form base of the flan.
- In a pan, heat milk with half and half just till barely simmering.
- If making it coffee flavor, now is the time to put the coffee granules.
- Add the 1/2 cup remaining sugar and stir till dissolved.
- Pour some of the milk mixture to eggs and beat (just to temper eggs).
- Pour the warm egg mixture back to the pan and keep whisking.
- Add in vanilla and salt.
- Pour to ramekins.Place all ramekins in a big pan 13x9.
- Bake 325 oven for 45 minutes bane maria.
- (pouring hot water on the 13x9 pan, working up to 1 inch of water on the ramekins.).

BUTTER PECAN FLAN CAKE
This is another version of my Flan Cake. I brought it to a dinner with some friends and they couldn't get enough of it. Some had tried my Chocolate Flan Cake but I think they liked this one better (hard to believe). It is really good. It is hard to pick which one I like the most out of the 3 different ones I've posted. This version is not as rich as the Chocolate Flan which means you can eat a bigger piece! DO NOT try to serve this before chilled completely. I make my cake the day before and chill overnight. When taking it somewhere I leave it in the bundt pan until we are at the place then flip it over right before serving.

- Cake Mix: Mix cake according to the directions on the back of the box. Combine Cake mix, sprite, oil, vanilla extract, caramel flavoring and eggs, mix well. Do not use both water and coke.
- Flan Part: Combine evaporated milk, sweet condensed milk, eggs, vanilla extract and caramel flavoring, mix with mixer or in a blender. Mix for 2-3 min. Set aside. You can use 3 to 5 eggs, the more eggs you use the creamer the flan will be. \ Set flan mixture aside.
- Caramel Sauce: Spray Bundt pan with Pam or Joy (flour plus oil) spray. Pour of 1 1/2 cups Cajeta or caramel sauce/topping into bottom of bundt pan.
- Assemble the cake: 1. Spray 12 cup bundt pan with Pam or Joy (flour plus oil)spray. 2. Pour 1 1/2 cup Cajeta or caramel sauce into bottom of bundt pan. 3. Pour cake batter evenly on top of caramel that is in the bundt pan. 4. Slowly pour flan mixture on top of cake batter. The flan mixture will sink to the bottom of the cake batter by itself. This will cause the cake batter to rise up in the bundt pan. Make sure it doesn't overflow.
- Prepare cake to bake: Get a pan large enough for the bundt pan to fit inside. I use a 9 x 13 inch cake pan. Fill the 9 x 13 inch pan with 2 inches of water. Place bundt pan in the pan with the water in it. Place both pans in the oven. Cover the bundt pan with foil for the first 35 minutes of baking.
- Bake the cake: Preheat oven 400 degrees, Bake about 1 hour. Start checking cake after 45 minutes and check every 15 minutes until done. It is very important for cake to be completely done or flan will not set. Check cake with toothpick, also take a knife and gently pull the cake a little from the middle tube/center of cake and peak at cake. If gooey the cake is not done and put back in oven. Also, the cake will separate from the sides and middle of the pan when done. This seems to be the most difficult part about baking this cake. If cake is not done then the flan will be not set up. When done remove bundt pan from larger pan with water and set on cooling rack.
- Serving the cake: Although very tempting DO NOT serve before cooling cake! Cool cake on cooling rack at room temperature then place cake in refrigerator at least 2-3 hours before trying to serve. I make mine the night before and refrigerate overnight. Remove from refrigerator 1-2 hours before serving. Take a large serving platter and put on top of bundt pan and flip cake over. The cake will come out of the bundt pan. This cake is layered with the cake on the bottom, topped with the flan and the caramel on top and dripping down the sides of the cake. If transporting the cake to another location leave the cake in the bundt pan and flip it onto a platter when you get there.
MAPLE FLAN IN A WALNUT CRUST

- 1. To prepare the flan, place the maple syrup in a large, heavy saucepan. Set it over low heat and let simmer until the syrup is reduced by a quarter (to 3/4 cup), 15 to 20 minutes.
- 2. Add the cream to the syrup and stir until mixture is smooth and comes back to a simmer.
- 3. In a large bowl, whisk the egg yolks until smooth. Add a little of the hot maple cream into the eggs to warm them, whisking constantly to keep the yolks from curdling. Pour the mixture into the saucepan, whisking the cream constantly. Strain the mixture into a bowl, stir in the salt, and chill for at least 2 hours and up to 5 days.
- 4. Preheat oven to 300°F. Place 1/4 cup water in a small saucepan over medium heat, then add the sugar and corn syrup. Raise the heat to high and cook, swirling the pan occasionally, until the mixture becomes a dark amber caramel, 7 to 10 minutes. Immediately pour the caramel into an 8-inch round nonstick cake pan, tilting to make sure the sides are well coated. Work quickly so the caramel doesn't harden. If it does, rewarm it over low heat.
- 5. Pour the maple custard into the caramel-coated cake pan. Place it in a baking pan and carefully move it to the oven rack. Pour enough very hot water into the baking pan to reach two thirds of the way up the side of the cake pan. Cover the baking pan with foil and prick all over with a fork. Bake the flan for about 1 hour, then lift off a corner of the foil to vent the steam. Re-cover the pan and continue to bake until the flan is set around the edges but still slightly jiggly in the center, about 45 minutes longer. Remove the flan from the baking pan and transfer to a rack. Let cool at room temperature, then cover and refrigerate overnight.
- 6. To prepare the walnut crust, preheat oven to 350°F. Spread the nuts out on a baking sheet and toast them in the oven, stirring once or twice, until they smell nutty, about 10 minutes. Transfer the pan to a wire rack to cool.
- 7. Using a food processor, pulse the walnuts until they are finely ground, then reserve. In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and confectioners' sugar until combined, about 1 minute. Beat in the egg. In a medium bowl, whisk together the flour, almond flour, walnuts, and salt. Add the flour mixture to the butter mixture in 2 batches, scraping down the sides of the bowl between additions. Mix until the dough just holds together. Scrape the dough onto a piece of plastic wrap and form it into a disk. Wrap it and chill for at least 1 hour, until firm.
- 8. Preheat oven to 325°F. On a lightly floured surface, roll out the dough 1/8 inch thick into a 12-inch round. Fit the dough into a 9-inch quiche pan. Trim away any excess dough, then use a fork to prick the crust all over. Bake the tart crust until it's pale golden, about 25 minutes. Transfer the pan to a wire rack to cool. (The tart shell can be made 8 hours ahead and kept at room temperature or frozen.)
- 9. To unmold the flan, run a small knife around the sides of the cake pan, then invert the flan into the baked tart shell. Serve with whipped crème fraîche, if desired.
- Variation
- For individual flans without crust, divide the caramel and then the maple custard evenly among eight 4-ounce glass or ceramic ramekins. Bake as directed for 1 hour and 30 minutes, venting the steam after 45 minutes.

- Preheat oven to moderately hot 210°C/190°C gas. Place flour, butter and sugar in food processor. Using pulse action, press button 30 seconds or until mixture is fine and crumbly. Add egg yolk and almost all water, process 20 seconds or until the mixture just comes together when squeezed, add more water if necessary. Knead gently to form a smooth dough. Refrigerate, covered with plastic wrap, for 20 minutes.
- Brush a 10 × 35 cm oblong flan tin with melted butter or oil. Roll out pastry between two sheets of plastic wrap to cover base and sides of tin. Line tin with pastry; trim edges.
- Cut a sheet of greaseproof paper large enough to cover pastry-lined tin. Line tin with paper and spread a layer of dried beans or rice evenly over paper. Bake for 10 minutes, remove from oven and discard paper and beans. Return to oven for a further 7 minutes or until the pastry is lightly golden. Cool.
- To make Filling: Reduce oven to moderate 180°C. Place eggs, brown sugar, corn syrup, nuts and butter in a mixing bowl; mix well. Pour mixture into prepared base; bake 45 minutes or until firm to touch. Cool on a wire rack. Serve cold.
