CLASSIC PECAN PIE BARS
Steps:
- Heat oven to 350°F.
- Combine 1 3/4 cups flour, butter and sugar in bowl. Beat at medium speed, scraping bowl often, until mixture resembles coarse crumbs. Stir in 1/3 cup pecans.
- Press crust mixture evenly onto bottom of ungreased 13x9-inch baking pan. Bake 18-22 minutes or until edges are very light golden brown.
- Combine brown sugar, 6 tablespoons flour, and salt in large bowl; whisk until mixed. Add corn syrup, eggs and vanilla; mix well. Stir in 1 1/2 cups chopped pecans. Spread evenly over hot, partially baked crust. Bake 30-35 minutes or until filling is set and knife inserted 1-inch from edge comes out clean.
- Cool completely. Refrigerate 30 minutes. Cut into bars.

Steps:
- Preheat oven to 350°F.
- In a food processor coarsely chop pecans. In a heavy saucepan melt butter and stir in brown sugar, honey, and cream. Simmer mixture, stirring occasionally, 1 minute and stir in pecans. Pour pecan mixture over hot shortbread and spread evenly. Bake in middle of oven until bubbling, about 20 minutes. Cool completely in pan and cut into 24 bars. Bar cookies keep, covered, 5 days at room temperature.
PECAN PIE BARS
Steps:
- Preheat the oven to 350°F.
- To prepare the crust: Place the brown sugar and flour in a 9 by 13-inch pan and stir until combined. Add the butter and stir until evenly moistened. Pat the crust into the bottom of the pan and bake for 15 minutes. Remove the pan from the oven and lower the temperature to 325°F.
- To prepare the filling: Place the eggs in a large bowl and beat until the whites are broken up and completely incorporated into the yolks. Add the pecans, flour, salt, brown sugar, and vanilla and mix until combined. Spread the mixture evenly over the crust and bake for 40 minutes, or until the filling is firm. Cool completely and cut into 48 squares.
- Bargain Shopper
- The first time I bought butter, I couldn't believe it was almost $5 a pound. As much as I like to bake, that doesn't work for me. I consulted my favorite bargain shopper (Mom) and she said that she usually buys it at a warehouse store where it costs less than $2 a pound or she buys it when it's on sale at the grocery store. Either way, she buys a lot at a time and puts it in the freezer, where it will keep for several months.
PECAN SQUARES
Steps:
- Preheat oven to 375°F. Combine 3/4 cup butter, powdered sugar and salt in processor. Process until moist clumps begin to form. Add flour and egg and process just until dough forms.
- Press dough onto bottom and 3/4 inch up sides of 13 x 9 x 2-inch baking pan. Bake until crust is golden brown, about 22 minutes. Cool crust slightly. Maintain oven temperature.
- Bring brown sugar, honey and remaining 3/4 cup butter to boil in heavy large saucepan, stirring frequently. Boil 2 minutes. Add vanilla. Stir in pecans. Pour pecan filling onto prepared crust. Bake until filling thickens and bubbles all over, about 25 minutes. Cool completely on rack. Cut into 2-inch squares. (Pecan squares can be prepared up to 1 day ahead. Cover and let stand at room temperature.)

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 10x15 inch jellyroll pan.
- In a large bowl, stir together the flour, 1/2 cup sugar, and salt. Cut in 1 cup of margarine until mixture resembles coarse crumbs. Sprinkle the mixture evenly over the prepared pan, and press in firmly.
- Bake for 20 minutes in the preheated oven.
- While the crust is baking, prepare the filling. In a large bowl mix together the eggs, corn syrup, 1 1/2 cups sugar, 3 tablespoons margarine, and vanilla until smooth. Stir in the chopped pecans. Spread the filling evenly over the crust as soon as it comes out of the oven.
- Bake for 25 minutes in the preheated oven, or until set. Allow to cool completely on a wire rack before slicing into bars.

- Set aside 1 cup cake mix to be used for filling.

- Heat oven to 350°F. Spray bottom of 13x9-inch pan with cooking spray.
- In large bowl, stir all Crust ingredients until dough forms. Press dough in bottom of pan using floured fingers. Bake 20 minutes.
- Meanwhile, in medium bowl, stir all Pecan Filling ingredients until well blended. Pour over hot crust.
