We took a cooking class and this is the recipe that we learned. We LOVE it! The fennel gives the flavor palette a unique twist. We combine it with Allrecipes' Grilled Sausage with Pepperonatta for a family-style feast!

2 large fennel bulbs
2 onions
½ cup extra-virgin olive oil
1 cup white wine
1 (16 ounce) package linguine pasta
4 roma (plum) tomatoes, seeded and cut into 1/4-inch dice
2 lemons, juiced
¼ cup pine nuts
1 cup freshly shaved Parmesan cheese

Steps:

  • Trim fennel bulbs, cut in half lengthwise, and remove tough cores. Thinly slice fennel bulb halves lengthwise. Peel onions, slice in half lengthwise, and thinly slice onions lengthwise.
  • Heat olive oil in a large skillet over medium heat; cook and stir fennel and onions until onions are translucent, about 8 minutes. Pour in white wine, turn heat up to medium-high, and cook, stirring often, until the wine has nearly evaporated and fennel and onions begin to brown, 8 to 10 minutes.
  • Bring a large pot of lightly salted water to a boil; cook the linguine at a boil until tender yet firm to the bite, about 11 minutes; drain and keep warm. Reserve 1/4 cup of pasta water.
  • Stir tomatoes into the fennel mixture and cook until the tomatoes soften, about 3 minutes. Mix lemon juice and pine nuts into the vegetables.
  • Stir linguine into the fennel mixture and mix in reserved pasta water. Cook pasta and vegetables over high heat, stirring until hot and thoroughly combined, about 2 minutes. Serve in a large serving bowl topped with Parmesan cheese.

Kosher salt
3 tablespoons extra-virgin olive oil, plus more for greasing
1/2 pound pancetta, trimmed of excess fat and diced
1 medium onion, chopped
1 fennel bulb, trimmed and thinly sliced
1 28-ounce can whole plum tomatoes
1/2 cup heavy cream
12 ounces penne
1/2 cup chopped fresh basil
1 cup grated parmesan cheese (about 2 1/2 ounces)
2 cups grated mozzarella cheese (about 8 ounces)
1 3/4 cups grated fontina cheese (about 6 ounces)

Steps:

  • Position a rack in the upper third of the oven and preheat to 450. Bring a large pot of salted water to a boil. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the pancetta and cook, stirring, until the fat renders, 2 to 3 minutes. Pour off the fat, leaving about 1 tablespoon in the pan. Add the onion and fennel and cook until the fennel is soft, about 5 minutes. Crush the tomatoes into the pan with your hands, then pour in the juices from the can and bring to a simmer. Fill the empty can with 1/2 cup of the boiling water and add to the sauce. Stir in the cream and simmer while you cook the pasta.
  • Add the pasta to the boiling water and cook until al dente. Drain and add to the sauce. Stir in the basil and 1/2 cup parmesan. Drizzle with 1 tablespoon olive oil, season with salt and toss.
  • Oil a 9-by-13-inch baking dish. Layer the pasta, mozzarella, fontina and the remaining 1/2 cup parmesan in the dish, alternating pasta and cheese. Drizzle with the remaining 1 tablespoon olive oil. Bake, uncovered, until browned and bubbly, about 15 minutes.

¼ cup olive oil, divided
3 cloves garlic, chopped
2 sun-dried tomatoes, chopped
1 tablespoon dried parsley
1 teaspoon crushed red pepper flakes
½ teaspoon black pepper
¼ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain, and return to pot.
  • Heat 1 tablespoon olive oil in a skillet over medium heat. Saute garlic, sun-dried tomatoes and parsley for about 1 minute. Season with red pepper flakes and black pepper. Stir into cooked pasta, along with remaining olive oil. Top with Parmesan.

2 tablespoons olive oil
1 package (8 oz) portabella mushrooms, halved, sliced
1 bulb fennel, trimmed, cut into 1-inch slices
2 cloves garlic, finely chopped
1 jar (1 lb 8 oz) Muir Glen™ Organic Tomato Sauce chunky (any meatless variety)
1 can (15 oz) Progresso™ cannellini beans, drained
3 tablespoons chopped fresh or 1 tablespoon dried basil leaves
1/2 cup grated Asiago or Parmesan cheese
Fennel leaves, if desired

Steps:

  • Cook and drain pasta as directed on package.
  • Meanwhile, in 10-inch skillet, heat oil over medium heat. Cook mushrooms, fennel and garlic in oil 5 to 6 minutes, stirring occasionally, until fennel is crisp-tender. Stir in pasta sauce, beans and basil. Cook, stirring occasionally, until thoroughly heated.
  • Divide cooked pasta among 6 serving bowls or plates; spoon vegetable mixture evenly over pasta. Sprinkle with cheese. Garnish with fennel leaves.

2 tablespoons olive oil
½ medium onion, finely diced
½ teaspoon red chili flakes
1 clove garlic, minced
14 oz crushed tomato, 1 can
salt, to taste
½ lb penne pasta

Steps:

  • Heat a large sauté pan over medium heat. Add the olive oil and onion, and cook until the onion is translucent, 8-10 minutes.
  • Add the chile flakes and garlic, and cook for another 2 minutes, until fragrant. Stir in tomatoes and simmer uncovered for 20 minutes.
  • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions. Save ½ cup (120 ml) of pasta water, then drain.
  • Add the drained pasta to the sauce. Stir well, adding a little pasta water if needed to loosen the sauce. Season with salt to taste.
  • Enjoy!

1 fennel bulb (1 pound), cut into 1/2-inch pieces
1/3 cup olive oil
1 onion (8 ounces), peeled and chopped (1 1/2 cups)
1 1/2 tablespoons chopped garlic (6 to 8 cloves)
2 cans (6 1/8 ounces each) tuna packed in water
1/4 cup chopped parsley
1 teaspoon freshly ground black pepper
1 1/2 teaspoons salt
1 pound penne (or a similar type) pasta

Steps:

  • In a large pot, bring 3 quarts of unsalted water to a boil. Add fennel, bring water back to a boil, and cook for 3 minutes. Remove fennel with a slotted spoon, and reserve cooking liquid in pot.
  • Heat olive oil in a skillet until hot but not smoking. Add onion, and saute it for one minute. Then add garlic and cook for 10 seconds. Add the drained fennel, the tuna (crumbled into one-inch pieces) with its juices, parsley, pepper and salt. Combine well, and transfer mixture to a bowl large enough to hold the cooked pasta.
  • Bring fennel cooking liquid back to a boil, and add pasta. Return liquid to a boil, and continue to boil pasta for about 8 minutes, or until of desired tenderness.
  • Add 1/2 cup of the pasta cooking liquid to tuna and fennel mixture. Drain pasta, and add it to the bowl. Toss well and serve.

Marcelle Bienvenu, contributing write for The Times-Picayune, included this exquisite summer pasta salad in her article giving the "heads up" that the famous & beloved Creole tomatoes are just about ready to start coming to market. The Creole tomato is a fabulous tomato, a phenomenal workhorse in hot & humid conditions that kill off other tomato plants. In LA it is also imbued with a special rapacious taste that I am praying mine develop in my coastal mater patch. Fennel bulb - crisp & refreshing like celery but with that bright but gentle licorice-like essence is a wonderful foil for robust tomatoes to accent their sugars. This pasta salad appeals to me because it seem lighter, hence more refreshing, than others loaded down with mayonnaise or store bought "Italian" bottled/prepared dressings. Perfect with a pile of chilled shrimp steamed in Old Bay just after being netted. Iced Tea with sprigs of mint or an ice-cold Rolling Rock ( 7 ounce bottles on ice - Pleeeze LOL!) & supper is on the table for deck dining at its best! Tip - Roast the tomatoes & fennel on separate sheets at the same time while the pasta is boiling to cut down on cooking times & limit heat in the kitchen.

1 lb penne pasta
1 1/2 lbs tomatoes, vine-ripened
6 tablespoons olive oil
salt, to taste
black pepper, freshly ground, to taste
1 fennel bulb, thinly sliced (get a big firm one that has crisp stalks)
1 onion, thinly sliced (Vidalia or Texas Sweet)
2 garlic cloves, crushed
1/2 cup kalamata olive, pitted and chopped
2 tablespoons balsamic vinegar
2 tablespoons basil leaves, chopped fresh

Steps:

  • Preheat the oven to 400 degrees. Cut the tomatoes into sixths lengthwise and arrange on a roasting pan. Brush them with 1 tablespoon of the olive oil and sprinkle with salt and pepper. Roast until the tomatoes are very soft, about 12 minutes. Remove them from the oven and set aside to cool.
  • Spread the fennel and onions evenly on a roasting pan and brush with 1 tablespoon of the olive oil. Sprinkle with salt and pepper. Roast at 400 degrees, stirring occasionally, until soft, 10 to 12 minutes. Remove from the oven and set aside.
  • Boil the penne according to package directions. Drain and refresh with cool water. Transfer the penne to a large bowl and toss with 1 tablespoon olive oil. Set aside.
  • Put the remaining 3 tablespoons olive oil in a small pan with the garlic and heat slowly. When hot, remove from the heat and add the olives. Add this mixture and the cooled tomatoes, fennel, onions, balsamic vinegar and basil to the bowl of pasta and toss to mix well. Season again with salt and pepper to taste.
