SICILIAN PENNE WITH SWORDFISH AND EGGPLANT

1 pound penne pasta
1/3 cup olive oil, plus 2 tablespoons
3 garlic cloves, minced
1/2 teaspoon red chili flakes (plus more to taste)
1/4 cup chopped fresh flat-leaf parsley, plus 1/3 cup
4 Japanese eggplants, ends trimmed, thinly sliced lengthwise, then cut into squares
1 pound swordfish steaks, skin removed, cut into 1-inch cubes
1/3 cup white wine
2 cups halved teardrop or cherry tomatoes (red, yellow or a blend)
Extra-virgin olive oil, for drizzling
3/4 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta.
  • Meanwhile, place a large, heavy skillet over medium-high heat. Add the 1/3 cup olive oil, garlic, red chili flakes, and 1/4 cup parsley. Stir and cook until fragrant, about 1 to 2 minutes. Add the eggplant and cook until tender, about 5 minutes. Remove the eggplant from the pan and set aside. Season the swordfish cubes with salt and pepper.
  • Using the same pan, over medium-high heat, add the 2 remaining tablespoons of olive oil and cook the swordfish until opaque, about 5 minutes. Add the white wine and cook until almost evaporated, about 2 minutes. Turn off the heat. Add the tomatoes, eggplant, cooked pasta, the remaining 1/3 cup parsley and stir. Drizzle with extra-virgin olive oil and sprinkle with the salt and pepper. Stir to combine.

My fish guy said the only time of year he buys swordfish is fall and winter because he feels the meat isn't as good in spring and summer. Keep that in mind when planning this one. Super easy and tasty.

1/3 cup olive oil, plus

This simple summer pasta dish is the perfect way to dispatch that bumper crop of zucchini.

2 medium zucchini
Coarse salt and freshly ground pepper
8 ounces penne pasta
3 tablespoons extra-virgin olive oil
1/3 cup grated Parmesan
1/2 teaspoon minced garlic
1/4 teaspoon red-pepper flakes

Steps:

  • Shred zucchini on the large holes of a box grater. (You should have about 4 cups.) Toss with 1/2 teaspoon salt in a colander set over a bowl. Let stand 10 minutes.
  • Meanwhile, cook pasta in a pot of generously salted boiling water until al dente. Drain pasta directly over zucchini in colander set in sink. Transfer both to pot; toss with olive oil, Parmesan, garlic, and red-pepper flakes. Season with coarse salt and freshly ground pepper. Serve, dressed with more oil and cheese.

6 ounces penne or other tubular pasta
3 medium zucchini
1 large garlic clove
2 teaspoons mixed fresh herbs such as rosemary, thyme, oregano, and marjoram leaves
2 ounces (1/4 cup) soft mild goat cheese
1 tablespoon olive oil

Steps:

  • Fill a 4-quart kettle three-fourths full with salted water and bring water to a boil for pasta.
  • Halve zucchini lengthwise and cut crosswise into 1/4-inch-thick slices. Thinly slice garlic lengthwise and finely chop herbs. Crumble goat cheese.
  • In a heavy skillet heat oil over moderately high heat until hot but not smoking and sauté zucchini, stirring, until browned and just tender. Stir in garlic and herbs and sauté, stirring, 1 minute.
  • Cook pasta in boiling water until al dente and reserve 1 cup cooking water. Drain pasta in a colander and in a bowl toss with zucchini mixture, cheese, 1/4 cup reserved cooking water, and salt and pepper to taste, adding additional reserved cooking water if necessary.

1/3 cup olive oil
1 small onion, finely chopped

3 large eggs
1/2 cup freshly grated Pecorino Romano cheese or Parmigiano-Reggiano
1 pound penne pasta
1/2 cup torn fresh basil or parsley

Steps:

  • 1 Cut the zucchini into 1/4-inch-thick sticks about 11/2 inches in length. Pat the pieces dry. 2 Pour the oil into a skillet large enough to hold the cooked pasta. Add the onion and cook over medium heat, stirring occasionally, until softened, about 5 minutes. Add the zucchini and cook, stirring frequently, until lightly browned, about 10 minutes. Season to taste with salt and pepper. 3 In a medium bowl, beat the eggs with the cheese and salt and pepper to taste. 4 While the zucchini cook, bring about 4 quarts of water to a boil in a large pot. Add 2 tablespoons of salt and the pasta. Stir well. Cook over high heat, stirring frequently, until the pasta is al dente, tender yet still firm to the bite. Set aside some of the cooking water. Drain the pasta and add it to the skillet with the sauce. 5 Toss the pasta with the egg mixture. Add the basil and toss well. Stir in a little of the cooking water if the pasta seems dry. Steps:

Cook, stirring often, until the zucchini are just tender, about 10 minutes. 3 Return the swordfish to the pan. Stir in the herbs and lemon zest and remove from the heat. 4 Bring at least 4 quarts of water to a boil in a large pot. Add 2 tablespoons of salt, then the pasta. Stir well. Cook over high heat, stirring frequently, until the pasta is al dente, tender yet still firm to the bite. Drain the pasta, reserving some of the cooking water. 5 Add the pasta to the skillet and toss over high heat 1 minute to combine. Add some of the reserved pasta water, if needed. Serve immediately.
