PEPPER JACK CREAMED CORN



Pepper Jack Creamed Corn image

A recipe adapted from the famous Hall's Chophouse version in Charleston, SC.

Number Of Ingredients 16

8 ears white corn (in husks)
1/4 pound salted butter
1/2 cup all-purpose flour (substitute rice flour for gluten-free)
2 cups 1 pint half and half
1.5 cups 2% milk
1/2 small onion (cut into small dice (approximately 1 cup))
1/2 red bell pepper (cut into small dice (approximately 1 cup))
2 cloves garlic (minced)
1 cup grated pepper jack cheese
1 cup sharp yellow cheddar cheese
1 tablespoon Crystal hot sauce
1/2 teaspoon grated nutmeg
salt and pepper to taste
2 tablespoons salted butter
1/2 cup panko bread crumbs
1/4 cup chives (diced (optional))

Steps:

  • Arrange rack in oven to the center.
  • Preheat oven to 350 degrees; arrange corn in its husks in a single layer and roast corn for approximately 35-40 minutes.
  • While the corn is roasting, melt 1/4 pound of butter in a large pot over medium-low heat.
  • Add red bell pepper, onion and garlic and saute for at least 10 minutes until onion is transluscent and red bell pepper is soft.
  • Whisk in flour until it is evenly distributed and incorporated into the pepper/onion/garlic mixture.
  • Slowly add milk and half and half, whisking vigorously to combine.
  • Reduce heat to low and simmer until sauce is thickened, approximately 45 minutes.
  • Add hot sauce and stir until combined.
  • Add grated cheeses slowly and nutmeg.
  • Season with salt and pepper.
  • Remove from heat and let cool slightly.
  • Remove corn from oven when done but do not turn off the oven.
  • Let corn cool slightly before removing from husks and cutting corn off of the cob.
  • Add corn to approximately 4 cups pepper jack sauce in a large bowl and stir gently to incorporate (add more to taste if necessary, and freeze remaining pepper jack sauce for later use).
  • Pour corn mixture into a greased ovenproof casserole dish.
  • In a small skillet, melt 2 tablespoons butter over medium-low heat and add panko bread crumbs, stirring continuously until bread crumbs are golden brown and toasted.
  • Sprinkle bread crumbs on top of corn mixture and place in oven an additional 10-15 minutes.
  • Garnish with diced chives, if desired.
  • Serve immediately.

3 garlic cloves, minced
1 large red bell pepper, coarsely chopped
3 cups fresh corn kernels (cut from about 5 medium ears)
2/3 cup whipping cream, divided
1/4 cup bourbon
1 1/4 cups chopped green onions (about 6), divided

Steps:

  • Melt butter in heavy large skillet over medium-high heat. Add shallots and garlic; sauté 2 minutes. Add red bell pepper; sauté 1 minute. Add corn; sauté until almost tender, about 2 minutes. Add 1/3 cup cream and bourbon. Simmer until sauce thickly coats corn, stirring occasionally, about 2 minutes. Add remaining 1/3 cup cream and 1 cup green onions. Simmer until sauce thickens enough to coat corn thinly, about 2 minutes longer. Season creamed corn to taste with salt and pepper. Transfer to bowl; sprinkle with remaining 1/4 cup green onions and serve.

  • In a large bowl, combine eggs and sour cream. Add the corn, Monterey Jack cheese, bread crumbs and pepper; mix well. , Pour into a greased shallow 1-1/2-qt. baking dish.   • Cook and stir peppers in melted butter in large skillet on medium-high heat 3 min. or until tender. Remove from heat; stir in corn and chiles.

4 cups fresh or frozen corn, thawed
1 cup heavy whipping cream
1/4 cup chicken broth

2 tablespoons minced fresh parsley

1 1/2 cups chopped yellow onion (from 1 large onion)
1 cup chopped green bell pepper (from 1 large pepper)
1 tablespoon minced garlic (from 3 cloves)
1 chipotle in adobo, minced with liquid (to equal 1 tablespoon)
Coarse salt and freshly ground pepper
4 cups frozen corn kernels, preferably organic, thawed
1/4 cup fine cornmeal
2 cups shredded pepper jack cheese
1/2 cup heavy cream
6 large eggs
Salsa, cilantro sprigs and sour cream, for serving

Steps:

  • Preheat oven to 350 degrees. Butter a 2-quart baking dish and set aside.
  • In a medium skillet, melt 2 tablespoons butter over medium-high heat. Add onion and pepper and cook, stirring often, until golden brown and caramelized, about 8 minutes. Add garlic and cook until fragrant, 1 minute. Add chipotle and season with salt and pepper. Transfer to a large bowl to cool to room temperature.
  • Puree 3 cups corn in a food processor or blender until very smooth. Transfer to bowl with onion mixture. Stir in 1 1/2 teaspoons salt, cornmeal, remaining cup corn, and cheese. In a separate bowl, whisk together 6 tablespoons melted butter, cream and eggs just until combined. Fold into corn mixture. Pour batter into prepared dish and bake on a rimmed baking sheet until puffed and golden and the center jiggles slightly, 45 to 50 minutes. Let cool 15 minutes. Serve with salsa, cilantro and sour cream.

½ cup unsalted butter, chilled and cubed
1 cup chopped onion
1 ¾ cups cornmeal
1 ¼ cups all-purpose flour
¼ cup white sugar
1 tablespoon baking powder
1 ½ teaspoons salt
½ teaspoon baking soda
1 ½ cups buttermilk
3 eggs
1 ½ cups shredded pepperjack cheese
1 ⅓ cups frozen corn kernels, thawed and drained
2 ounces roasted marinated red bell peppers, drained and chopped
½ cup chopped fresh basil

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Butter a 9x9x2 inch baking pan.
  • Melt 1 tablespoon butter in medium nonstick skillet over medium-low heat. Add onion and saute until tender, about 10 minutes. Cool.
  • Mix cornmeal with the flour, baking powder, sugar, salt, and baking soda in large bowl. Add 7 tablespoons butter and rub with fingertips until mixture resembles coarse meal.
  • Whisk buttermilk and eggs in medium bowl to blend. Add buttermilk mixture to dry ingredients and stir until blended. Mix in cheese, corn, red peppers, basil, and onion. Transfer to prepared pan.
  • Bake cornbread until golden and tester inserted comes out clean, about 45 minutes. Cool 20 minutes in pan. Cut cornbread into squares.
