CHOCOLATE-PEPPERMINT CRUNCH

Chocolate-Peppermint Crunch image

It doesn't get much easier than this minty holiday-square recipe from TV chef Nikki Elkins, which takes just minutes to prepare.

Provided by Martha Stewart

Yield Makes 28 squares

Number Of Ingredients 5

14 chocolate graham crackers
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
3/4 cup light brown sugar
1/4 teaspoon coarse salt
30 milk chocolate peppermint-bark squares (12.45 ounces total), chopped

Steps:

  • Preheat oven to 350 degrees. Line a rimmed baking sheet with a nonstick baking mat or parchment paper. Place graham crackers, sugared-side down, in a single layer on baking sheet with edges touching; set aside.
  • Place butter, sugar, and salt in a small saucepan; bring to a boil over medium-high heat, stirring to dissolve sugar and salt. Reduce heat and cook at a rapid simmer until mixture reduces and is bubbly and syrupy, about 2 minutes. Pour over graham crackers, using an offset spatula to spread if necessary.
  • Transfer to oven and bake until bubbling, about 8 minutes. Remove from oven, let cool 3 to 4 minutes, and sprinkle with chopped chocolate. Let cool completely; refrigerate briefly if necessary to set chocolate. Break into pieces and serve.

ANDES PEPPERMINT CRUNCH CHUNKIES

Andes Peppermint Crunch Chunkies image

I got this recipe from a bag of Andes new peppermint crunch baking chips. The flavor is fabulous, but for some reason, when I baked them, they wouldn't bake through and I had to scrape them off the cookie sheets. They ended up being tasty, slightly chewy blobs... Perhaps someone will be brave enough to try this or to help me figure out how to fix the recipe?

Provided by coconutcream

Categories     Drop Cookies

CHOCOLATE CHIP AND PEPPERMINT CRUNCH CRACKLES

Chocolate Chip and Peppermint Crunch Crackles image

These fudgy treats, also known as crinkles, get their name from the small wrinkles that develop on top as they bake.

Categories     Candy     Cookies     Chocolate     Bake     Christmas     Winter     Bon Appétit

Yield Makes about 36

Number Of Ingredients 14

8 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
1/2 cup (1 stick) unsalted butter, cut into 1/2-inch pieces
1 1/2 ounces unsweetened chocolate, chopped
1/2 cup finely crushed red-and-white-striped hard peppermint candies
6 1/2 tablespoons sugar
3 large eggs
2 teaspoons vanilla extract
1 teaspoon peppermint extract
1 1/2 cups all purpose flour
3/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup (about 3 ounces) semisweet chocolate chips
Coarsely crushed peppermints
Powdered sugar

Steps:

  • Combine first 3 ingredients in heavy large saucepan. Stir over low heat until chocolates melt and mixture is smooth. Remove pan from heat. Mix in finely crushed mints and 6 1/2 tablespoons sugar. Cool mixture to lukewarm, stirring occasionally, about 30 minutes. Whisk eggs into chocolate mixture, 1 at a time, then whisk in vanilla extract and peppermint extract. Whisk flour, baking powder, and salt in small bowl to blend. Whisk flour mixture, then chocolate chips into chocolate mixture. Cover batter and chill until firm enough to shape, at least 3 hours and up to 1 day.
  • Position rack in center of oven and preheat to 325°F. Line 2 baking sheets with parchment paper. Using 1 generous tablespoonful for each cookie, roll dough between moistened palms into 1 1/4-inch-diameter balls, then arrange on prepared baking sheets, spacing 1 inch apart. Bake cookies, 1 sheet at a time, until puffed and cracked on top but still soft to touch in center, about 11 minutes. Let stand on sheets 5 minutes. Press coarsely crushed mints onto tops of cookies or sprinkle with powdered sugar. Transfer to racks; cool completely. (Can be made 1 week ahead. Store airtight between sheets of waxed paper in refrigerator.)

PEPPERMINT CRUNCH ICE CREAM

Peppermint Crunch Ice Cream image

Well, you guys, we made it. The 2016 Holiday season is officially upon us in all of its food-and-family-filled glory.

Provided by Homemade Hooplah

Number Of Ingredients 7

1 1/2 cups heavy whipping cream
1 1/2 cup milk, whole
1/2 cup granulated sugar
1 tablespoon McCormick Vanilla Extract
1/2 teaspoon McCormick Peppermint Extract
1/4 cups peppermint candy, crushed to mostly powder, plus more for topping
1 pinch salt

Steps:

  • Peppermint Crunch Ice Cream
  • In a medium bowl, whisk together milk, heavy whipping cream, granulated sugar, salt, and McCormick Vanilla and Peppermint Extracts until sugar has dissolved.
  • Pour in crushed candy cane, mixing until mostly dissolved. It's okay if the candy clumps - the ice cream maker will slowly separate them.
  • Remove ice cream bowl/attachment from freezer and attach/place it per your ice cream maker's instructions. Pour prepared ice cream mixture into the chilled bowl/attachment.
  • Churn ice cream for 30-35 minutes or until desired consistency is reached.
  • If you'd like soft ice cream, serve peppermint crunch ice cream immediately with additional crushed peppermint candy on top. If you'd like firmer ice cream, transfer the ice cream to a storage container, sprinkle the top with additional crushed peppermint candy, and let it freeze for 2-4 hours.

Make and share this Peppermint Crunch Cake recipe from Food.com.

Provided by Jazz Lover

Categories     Dessert

Time 55m

Yield 12 serving(s)

Number Of Ingredients 17

1 ounce dark chocolate (I used Ghiradelli 60% chips)
1/2 cup Dutch-processed cocoa powder
2/3 cup hot coffee (we don't drink coffee, so I always use Pero(1 teaspoon per 8 oz hot water)
1/3 cup whole milk
1 1/3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
10 tablespoons unsalted butter, softened
1 cup packed brown sugar
1/2 cup granulated sugar
3 eggs
1 teaspoon vanilla
3/4 cup salted butter, softened
6 cups powdered sugar
1 1/2 teaspoons peppermint extract
6 tablespoons cream
crushed candy cane, for filling and topping

Steps:

  • Preheat the oven to 325 degrees F. Butter two 8" round pans, line with parchment circles, and butter again. Then dust with flour. If that's too much work, you could try using Pam with flour.
  • Combine chocolate, cocoa, and hot coffee in a small bowl and whisk until smooth.
  • Add milk and whisk again. In a medium bowl, combine flour, baking soda, and salt; set aside.
  • In the bowl of a stand mixer, beat butter and sugars until fluffy.
  • Add eggs one at a time, beating after each addition.
  • Add vanilla, scrape down sides, and beat again for 30 seconds.
  • Alternate adding the flour mixture and the chocolate mixture, beginning and ending with flour.
  • Divide batter evenly between pans and bake for 35 to 40 minutes.
  • Allow to cool for about 15 minutes before running a knife around the edges and flipping out onto a cooling rack. Cool completely before frosting.
  • While cake is cooling, make frosting.
  • Combine butter, powdered sugar, and peppermint extract in the bowl of a stand mixer.
  • Slowly add cream until the frosting is spreadable. You might not need all of it.
  • When cake is completely cool, place one 8" cake on a serving plate, top with frosting, and sprinkle with crushed candy canes.
  • Place the other cake layer on top, flat side up.
  • Completely cover top and sides with remaining frosting.
  • Sprinkle with remaining candy cane pieces just before serving.
