PEPPERONI PUFFS
A co-worker brought these to a recent function, and they quickly disappeared from the table. I had to have the recipe. I'll probably add a pinch of dried red peppers or cayenne to this. I also usually 'nuke' pepperoni before cooking with it, to get rid of overabundant grease.

Steps:
- Combine first 5 ingredients until well mixed.
- Add pepperoni, and allow batter to stand for 15 minutes.
- Grease mini muffin pans and fill 3/4 full.
- Bake at 350-degrees for 25-30 minutes, or until golden brown.

If you bring this dish to a party, make sure you bring the recipe with you, because everyone will want it after eating these.

Steps:
- In a large skillet, cook bacon over medium heat until bacon is browned. Move bacon to paper towels. Keep bacon drippings.
- In drippings, cook shallots and red pepper over medium heat until vegetables are tender. Cook about 5 minutes. Remove skillet from heat and let cool for 20 minutes.
- In a small bowl, beat cream cheese and milk with an electric mixer at medium speed until smooth. Stir bacon and shallot into the mixture.
- Spoon cream cheese mixture into a heavy weight plastic bag. Cut a small hole in one corner to squeeze the filling from. With small knife, cut a slit lengthwise into each pepper. Do not cut the whole way through the pepper. By squeezing the bag, pipe cream cheese mixture into peppers. Cover and refrigerate for at least 1 hour, up to one day.

- Preheat oven to 400°. Shape dough into 1-1/2-in. balls; flatten into 1/8-in. thick circles. Place 1 pepperoni slice and 1 cheese cube in center of each circle; wrap dough around pepperoni and cheese. Pinch edges to seal; shape into a ball. Repeat with remaining dough, cheese and pepperoni. - Separate biscuits and place on a work surface. Roll biscuits to double their original diameter using a rolling pin. Sprinkle garlic salt over each biscuit and top with 2 pieces pepperoni. Generously sprinkle mozzarella cheese over pepperoni layer, reserving about 2 tablespoons cheese. Fold the edges of each roll over the toppings, pinching the edges together to seal shut. - Grease 24-cup mini-muffin pan.
