A wonderful, quick alternative to garlic bread. Lots of herbs and lots of flavor!

- In a large bowl, stir together the flour, salt, sugar, yeast, garlic powder, oregano, thyme, basil and black pepper. Mix in the vegetable oil and water.
- When the dough has pulled together, turn it out onto a lightly floured surface, and knead until smooth and elastic. Lightly oil a large bowl, place the dough in the bowl, and turn to coat with oil. Cover with a damp cloth, and let rise in a warm place for 20 minutes.
- Preheat oven to 450 degrees F (230 degrees C). Punch dough down; place on greased baking sheet. Pat into a 1/2 inch thick rectangle. Brush top with olive oil. Sprinkle with Parmesan cheese and mozzarella cheese.
- Bake in preheated oven for 15 minutes, or until golden brown. Serve warm.

FOCACCIA WITH PESTO & MOZZARELLA
This homemade pesto bread is a delicious accompaniment to Italian food

Steps:
- Put the flour into a bowl and mix in the salt. Mix the yeast into 325ml tepid water. Add the water and oil to the flour, then mix well with a plastic scraper or your hands. When most of the liquid is incorporated, use your hands to bring all the ingredients together into a ball of dough.
- Tip the dough out onto a worktop lightly dusted with flour and work it by pulling and stretching for at least 10 mins. Try to get as much air into it as possible. Put the ball of worked dough into a well-oiled bowl, cover with a little more oil and a tea towel or cling film. Leave to rest for 1 hr or so in a non-draughty warm spot, until doubled in size.
- Now stretch the dough out onto a baking sheet until it's about 20 x 30cm. Leave the dough to rise again to about half as high again, about 30-40 mins in a warm draught-free place, loosely covered with a tea towel.
- Heat oven to 180C/160C fan/gas 4. When the dough has risen, press your fingers into it gently to make some holes. Bake for about 15 mins, then remove from the oven. Tear over the mozzarella, then bake for another 5-10 mins until golden and cooked through. Drizzle over the pesto and scatter with sea salt, if you like. Serve straight away.

PORTABELLA, PESTO FOCACCIA SANDWICH

Steps:
- Brush the mushrooms with oliveoil and grill or broil them , cap side down until they are brown & cooked.
- Turn them over and place a slice of cheese in each cap, cook until the cheese starts to soften.
- While the mushrooms are cooking warm the foccacia bread.
- Cut the foccacia bread in two so you have a large hamburger bun.
- Place the portabellos on the bottom half of the bread, divide the pesto between the 4 caps, top with tomato slices, add lettuce, cover with top half of the bread and cut into 4 pices.
- Enjoy.

- Cut focaccia horizontally in half; spread pesto over cut sides. On bread bottom, layer the ham, turkey, pastrami, cheese, onion and tomato. Sprinkle with Italian seasoning. Replace bread top; wrap sandwich in foil.Place on a baking sheet., Bake at 350° for 20-25 minutes or until heated through. Let stand for 10 minutes. Cut into wedges.

- Preheat oven to 425°. Heat a 10-in. cast-iron or ovenproof skillet over medium-high heat. Add pepperoni and onion; cook and stir until pepperoni is crisp and onion is tender, 6-8 minutes. Remove and keep warm. In a large bowl, beat egg, milk, yogurt and oil until well blended. In another bowl, whisk flour, baking powder, garlic powder and salt; gradually beat into egg mixture. Stir in 1/2 cup cheese and pepperoni mixture (batter will be thick)., Transfer to same skillet; sprinkle with remaining 1/4 cup cheese. Bake until bread is golden brown and a toothpick inserted in center comes out clean, 20-25 minutes. Cool 10 minutes in skillet on a wire rack. Serve warm. If desired, serve with marinara sauce and top with fresh basil leaves.

PESTO AND OLIVE FOCACCIA (BREAD MACHINE)
The pesto and olive give the focaccia a very robust flavor. As a variation, omit the pesto and brush dough with olive oil, then sprinkle with snipped fresh basil and finely shredded parmesan cheese. This comes from my Better Homes and Garden Bread Machine Book.

- Select 1 1/2 pound loaf size.
- Add ingredients except pesto to machine according to manufacturer's directions.
- Select the dough cycle, when the cycle is complete, remove dough, punch down.
- Cover and allow to rest 10 minutes.
- Place dough on greased 11-12" pizza pan.
- Using the palms of your hands, pat dough into an even round just smaller than pan; using your fingertips, poke dough all over to dimple surface.
- Spread pesto over the dough.
- Cover loosely and let rise in a warm place 30 minutes; bake at 400°F for 25-30 minutes.
- Serve warm or cool, cut into wedges. Leftovers can be store in the freezer.

- To make this recipe for fresh focaccia with three varieties of pesto, start by making the focaccia dough starter: First knead the Manitoba flour with 200 g water and 1 g brewer’s yeast until the dough is sticky. (Add more water if necessary.) Let the dough rest for at least 8 hours at room temperature.
- For the focaccia dough, knead the type “00” flour with 330 g of the starter and 1 liter of water, adding the water little by little. Once the dough is soft enough, knead it again briefly and let it rest for 5 minutes. Repeat these steps two more times and add 15 g salt at the end. Roll out the dough on two or more large plates. Prepare an emulsion with oil and water in equal parts, salt it and use it to grease the dough you’ve already rolled out. Let it rest for 2 hours at room temperature or inside the oven turned off. Bake at 445°F (230°C) for about 15 minutes.
- For the 3 pesto varieties: Celery almond pesto Finely blend 200 g celery with 80 g almonds. Add 120 g olive oil and adjust salt and pepper to taste.
- Tomato and pine nut pesto Finely mince the tomatoes and blend with the toasted pine nuts, 120 g olive oil, salt, pepper and about 10 torn fresh basil leaves. Mix gently with care.

- Place the warm water, sugar, yeast and olive oil in a very large bowl. Allow to rise for 5 minutes.
- Add flour, salt, pesto and 1-cup water to the bowl. Mix well with a silicone spoon or spatula for approximately 2-3 minutes until it forms a shaggy messy dough. The dough will be very soft.
- Add 1 tablespoon olive oil to a very large bowl. Tip the shaggy dough onto the oil in the bowl. Turn the dough once so that it is coated with olive oil. Cover with a tea towel and rest in a warm spot in your kitchen for 3-4 hours until the dough has more than doubled in size.
- Add 1 tablespoon of olive oil to your baking tray or dish (I have used a 24cm shallow cast-iron skillet). Rub the oil all around the inner wall and base of the skillet.
